2 green onions finely chopped (white & green parts)
6 eggs
6 tablespoons milk
salt and pepper to taste
1 cup swiss cheese
8 flour tortillas
Whisk together eggs, milk, salt and pepper. In a skillet sprayed with
cooking spray, cook eggs over medium heat until set. Add in bacon,
onions, and cheese. Cook just until cheese is melted. Remove from heat
and allow mixture to cool for 5-10 minutes. Use a 1/3 cup of mixture
for each tortilla. Wrap in saran wrap and foil and freeze. To reheat
from frozen, place in microwave for 1 1/2 minutes.
