3882. HERBED GRUYERE SCALLOPED POTATOES and BACON AU GRATIN

Serves: 8

2 pounds russet potatoes (about 4 medium potatoes)
6-8 slices of bacon, cooked and chopped
2 1/2 cups grated Gruyere cheese (about 8 ounces)
1 tablespoon butter, cut into 8 cubes

Spiced Cream
3 cups heavy cream
1 large onion, thinly sliced
3 bay leaves
2 garlic cloves, minced
1 tablespoon fresh parsley, chopped (or 2 tsp dried)
1 tablespoon chopped fresh chives ( or tsp dried)
1 1/2 teaspoons fresh thyme (or ½ tsp. dried)
¼ teaspoons cayenne pepper
¼ teaspoons ground nutmeg
½ teaspoons salt
½ teaspoons pepper

Preheat oven to 400 degrees F.

Add the "Spiced Cream" ingredients to a saucepan and bring to a gentle simmer. Simmer for 5-10 minutes while you grease a 9x13 casserole dish and peel and slice potatoes into 1/8 inch slices. Transfer potatoes to a large bowl.

Spoon just enough of the herbed cream that has been simmering to cover the bottom of the casserole dish. Pour the remaining herbed cream over the potatoes and gently toss to coat.

Using a slotted spoon, layer the bottom of the casserole dish with 1/3 of the potato/onion slices (the slotted spoon will allow you to leave most of the cream in the bowl). Lightly season the layer of potatoes with freshly cracked salt and pepper (in addition to salt and pepper listed in ingredients). Layer 1 cup of the cheese, 1/2 of the bacon then top with 1/3 of remaining cream. Repeat layers.

Top the casserole with remaining potato/onion slices and pour over remaining cream. Dot the potatoes with cubed butter.

Cover the casserole with aluminum foil and bake for one hour. Remove from the oven, sprinkle with remaining cheese then continue to bake, uncovered for an additional 10 minutes. Test the potatoes to make sure they are tender. Continue to cook if necessary (will depend on how thin you cut your potatoes). When potatoes are done, broil until golden brown.

2 cloves garlic
6 slices smoky bacon, minced
1 tablespoon olive oil
1 cup chicken broth
1/2 cup heavy cream
2 lbs. peeled sweet potatoes in lengthwise slices, 1/8 inch thick

3 slices thick-cut bacon
2 tablespoons butter
1/4 cup flour
1 1/2 cups milk
2 large cloves garlic
17 oz. package gnocchi
salt & pepper, to taste
scant 1/8 teaspoon nutmeg

2339. MUSSEL, SPINACH and BACON GRATIN

serves two

2 tablespoons white wine
1 shallot, chopped
1kg mussels, scrubbed and debearded
1 tablespoon rapeseed or olive oil, plus a little more to finish
75 grams smoked bacon, diced fairly small
1 garlic clove, finely chopped
About 200ml whole milk
25 grams butter
25 grams plain flour
200 grams fresh spinach, tough stalks removed
A squeeze of lemon juice
37 grams fresh white breadcrumbs
25 grams Parmesan, grated
Freshly ground black pepper

Preheat the oven to 200C/gas 6.

Put a large pan over a high heat and add the wine, 2 tablespoons of water and the diced shallot. Bring to a simmer, then throw in the mussels and cover with the lid.

Let the mussels steam open in the pan for 3-4 minutes, shaking once or twice. Remove from the pan with a slotted spoon the mussels from their shells and set aside. Strain all the cooking liquor through a fine sieve or a coarse sieve lined with a cloth.

Heat the oil in a frying pan, add the bacon and sauté gently until starting to crisp up. Add the garlic and cook for a further minute or so, being careful not to let the garlic burn. Transfer to a bowl.

Now make the béchamel sauce. Combine the reserved mussel cooking liquor with enough milk to make 250ml and heat gently in a pan.

Melt the butter in a separate pan. When foaming, add the flour and stir to make a smooth roux. Gradually add the warmed milk, stirring well after each addition to prevent lumps. Simmer gently for 4-5 minutes.

Drop the spinach into a large pan of boiling water and cook for just a minute, until wilted. Drain, leave to cool a little, then squeeze out excess water with your hands. Chop the spinach roughly.

Fold the bacon, mussels and spinach into the béchamel sauce. Season with freshly ground black pepper and a squeeze of lemon juice.

Divide the mixture between four buttered, shallow ovenproof dishes or spread in one large gratin dish. Sprinkle over the breadcrumbs, plus the cheese if using, and trickle over a little rapeseed or olive oil.

Bake for 10-12 minutes, until golden and bubbling. Serve hot, with bread.

2209. POTATO GRATIN with BACON, GREEN GARLIC and GRUYERE

serves 6 to 8

½ cup bacon, cut in 1/8-by-1/8-by-2-inch sticks
¼ cup minced green garlic, white and light green parts only
1¼ cups heavy cream
Salt and freshly ground black pepper
2 pounds russet potatoes
1 cup grated Gruyère

Preheat the oven to 350 degrees. In a medium saucepan over medium heat, cook the bacon until it just starts to brown. Stir in the green garlic, and then add the cream. Heat until just warm. Season generously with salt and pepper. (It should taste a bit oversalted, in order to season the potatoes.)

Peel the potatoes and cut into 1/8-inch-thick slices. Overlap about a quarter of the slices along the bottom of an 8-inch square baking pan.

Pour about a quarter of the garlic-bacon cream over the potatoes, making sure the bacon is evenly distributed. Repeat making layers with the remaining potatoes and cream. Press the potatoes gently to compact them. Sprinkle with the Gruyère and bake until the top is golden brown and the potatoes are just tender, 50 to 60 minutes. Let rest for 5 minutes before serving.

Reduce heat and simmer until mixture thickens slightly, about 3 minutes. Remove from heat. Stir in cheese and remaining green onions. Season with salt and pepper. Transfer creamed corn to prepared dish. (Topping and corn can be made 1 day ahead. Cover separately and chill.)

Preheat oven to 350°F. Bake gratin uncovered 25 minutes. Sprinkle topping over; bake until topping is slightly crisp and creamed corn thickens and is heated through, about 20 minutes longer.

1200. GRATIN of BELGIAN ENDIVE with APPLEWOOD SMOKED BACON

makes 8 servings

4 strips Applewood smoked bacon, cut in 2-inch strips
3 tablespoons finely chopped parsley
3 cups chicken stock or broth, plus more as needed
1 medium carrot, peeled and diced
1 stalk celery, diced
1 medium onion, diced
2 tablespoons sugar
Kosher salt
Freshly ground black pepper
8 whole Belgian endive
5 tablespoons unsalted butter
4 tablespoons flour
2 cups milk
1/2 cup plus 1 to 2 tablespoons grated Gruyere cheese
1 tablespoon Dijon-style mustard
3 large egg yolks

In a medium skillet over medium heat, cook the bacon strips until they are evenly browned and the fat has been rendered. Using a slotted spoon, transfer to a small bowl. Add the parsley and set aside. (If making in advance, cover and refrigerate.)

In a pot large enough to hold the endive in a single layer, add the chicken stock or broth, carrot, celery, onion and sugar and the salt and pepper to taste and bring the stock to a simmer over low heat. Place the endive in the pot in a single layer, adding more stock, if necessary, to cover it.

Brush a large sheet of parchment paper with 1 tablespoon of the butter and place it, buttered side down, directly on top of the endive. Simmer for 1 1/2 to 2 hours or until the endive is soft when tested with a knife. Using tongs, transfer the endive to a medium-large baking dish in a single layer or eight individual ovenproof dishes and set aside to cool.

If making in advance, cover and refrigerate. Bring to room temperature before proceeding.

Preheat the oven to 325 degrees.

In a medium saucepan over medium-low heat, melt the remaining 4 tablespoons of butter. Add the flour and stir to combine, without letting the mixture brown. Add the milk and stir constantly until the mixture thickens, about 10 minutes. Add the Gruyere and mustard, stirring to combine. Strain the sauce mixture through a sieve into a medium bowl, add the egg yolks and stir to combine.

Pour the sauce over the endive and sprinkle with the remaining 1 to 2 tablespoons Gruyere. Bake for 10 minutes, then broil until the cheese is browned, about 3 minutes.

Remove from oven and sprinkle with bacon-parsley mixture. Serve hot.

1044. COURGETTE, BACON and BRIE GRATIN

serves 4

3 tablespoons olive oil
600 grams courgettes, sliced on the diagonal
4 rashers of smoked back bacon, chopped
1 onion, chopped
1 small garlic clove, crushed
200 grams risotto rice
150ml dry white wine
850ml hot vegetable stock made with bouillon powder
160 grams pack blue or plain brie

Heat 2 tablespoons of the oil in a large heavy saucepan, tip in the courgettes and fry for 10-12 minutes until tinged golden. Remove with a slotted spoon and set aside.

Heat the remaining oil in the pan and add the bacon, onion and garlic. Cook over a low heat for about 6-8 minutes or until softened and lightly golden. Tip in the rice and stir until the grains start to pop.

Pour in the wine and stand back while it sizzles and absorbs into the rice. Stir well, then pour in about one third of the hot stock and increase the heat to moderate. Cook, stirring frequently, until the stock is absorbed. Repeat with the remaining stock, in two batches. This should take about 20 minutes, and the rice should be tender.

Preheat the grill on its highest setting. Remove the rice from the heat, gently fold in the courgettes and season to taste. Tip everything into a big flameproof dish. Slice the brie and lay on top of the rice. Put the dish under the hot grill for 3-4 minutes until the brie is bubbling.
