3959. BACON-WRAPPED MAPLE HALIBUT

2 halibut fillets
1/2 cup maple syrup
1/4 cup soy sauce
1 tablespoon dijon
Ground pepper
12 strips of bacon
Brown sugar

Preheat the oven to 375 degrees. Line a baking sheet with foil, and place an ovenproof rack on top, and then set aside.

In a medium bowl, whisk together 1/2 cup maple syrup, 1/4 cup soy sauce, 1 tablespoon dijon, and a dash of ground pepper until smooth.

Add the halibut cubes, toss to coat, and marinate for 20 minutes.

Meanwhile, arrange bacon pieces on the rack of the prepared baking sheet so they do not overlap. Par-bake in the oven for about 10 minutes, (bacon should still be somewhat pliable).

Remove bacon from the baking sheet onto paper towels and pat dry.

Then re-line baking sheet with new foil, replacing rack back on top. Wrap each halibut cube with a strip of bacon, and secure halibut cubes onto skewers. Then place onto the rack bare halibut side down. (You can toss the marinade at this point.) Sprinkle the skewered wrapped halibut with brown sugar. Bake in preheated oven until the halibut cubes are opaque and the bacon is crisp for about 20 minutes.

Remove from oven once bacon is crispy.

These can be served hot, warm, or at room temperature. Plate to serve.

3481. ROASTED HALIBUT with RHUBARB-BACON JAM

makes four servings 


500 grams halibut (in 4 pieces)
1 teaspoon olive oil
1/4 teaspoon hot-red-chili flakes
1/4 teaspoon salt
500 grams asparagus, trimmed (about 1 bunch)
1 teaspoon olive oil
fresh pepper
4 bacon slices, finely chopped
2 cups rhubarb, chopped
1/3 cup brown sugar
2 tablespoons red-wine vinegar
1 tablespoon butter 

Preheat oven to 450F. Spray a large baking sheet with oil. Pat halibut dry with paper towels. Brush with olive oil and sprinkle with hot-red-chili flakes and salt. Arrange skin-side down on 1 side of prepared sheet. Toss a bunch trimmed asparagus with olive oil on other side of baking sheet. Season with fresh pepper. Roast in center of oven until a knife tip inserted into thickest part of fish and held for 10 seconds feels warm, about 10 minutes.

Cook bacon slices in a medium frying pan over medium-high, until crisp, about 5 minutes. Transfer to a paper-towel-lined plate. Drain and discard fat. Return pan to medium. Add chopped fresh rhubarb, brown sugar and red-wine vinegar. Cook until rhubarb starts to break down and sugar dissolves, about 3 minutes. Stir in butter and bacon and gently boil until sauce is thickened, about 8 minutes. Drizzle sauce over halibut.

3119. BACON-WRAPPED HALIBUT with LIME SCALLION SAUCE

yields six servings


Bacon Wrapped Halibut
6 6 ounce skinless boneless halibut filet (cut in 5” by 2” rectangles)
12 pieces of double smoked bacon
Zest of 2 lemons
Pepper
2 large bunches of fresh watercress
Toothpicks soaked in water for 30 minutes and drained

Dressing
2 egg yolks
¼ cup sherry vinegar
1 teaspoon Dijon mustard
1 tablespoon lime juice
¾ cup chopped scallions green parts only
1 tablespoon cilantro leaves
1 cup olive oil

Bacon Wrapped Halibut: Ask your fishmonger to cut your filets as rectangular as possible (preferably 5” by 2”). Place a drip pan under the burners. Preheat the barbeque to medium high heat 375-400°F (190-205°C). To prepare the fish, pat it well with paper towel. Season with pepper and sprinkle with lemon zest. Place 2 slices of bacon on the cutting board, overlapping the edge making a thick band. Wrap the halibut with the bacon and secure with a soaked toothpick. Place fish down on the hot grill over the drip pan. Cook fish for 4-5 minutes per side or until the bacon is golden brown. Remove fish from the grill and serve with lime scallion sauce and watercress.

Dressing: To prepare the dressing, place all ingredients (except oil) in a blender. Turn the blender on and gradually add the oil until you reach a consistency you like. Reserve.

2890. HALIBUT with YUZU and BACON AIOLI

quarter pound halibut, sushi grade, sliced into 2-inch by 1-inch pieces

1 cup bacon, rendered & fat reserved

1 egg yolk

1.5 tablespoons yuzu

1 tablespoon shallots, minced

1 tablespoon cilantro, chopped

1 tablespoon parsley fluid gel or purée

salt and pepper, to taste
 
scallion, chiffonade for garnish
 
seaweed chiffonade for garnish

To make aioli, whisk the yolk in a bowl until frothy. In a steady stream, add bacon fat to create an emulsification. Once thickened, add bacon bits, Yuzu, and shallots. Fold in cilantro. Adjust seasoning. Arrange fish on plate and drizzle with sauce, garnish with parsley, scallions and seaweed.

2685. CAJUN FISH with CABBAGE and BACON SAUTE

serves four 


4 6-ounce skinless firm white fish fillets (such as halibut, striped bass, or tilapia)
2 teaspoons canola oil
2 teaspoons Cajun or blackening seasoning
4 slices bacon
4 scallions, thinly sliced, white and green parts separated
2 cups corn kernels (from 2 ears)
1/2 small head Savoy cabbage, cut into 1-inch strips (4 cups)
kosher salt and black pepper
2 tablespoons cider vinegar

Heat oven to 450° F. Place the fish on a rimmed baking sheet, drizzle with the oil, and sprinkle with the Cajun seasoning. Roast until the fish is opaque throughout, 8 to 12 minutes. Meanwhile, in a large skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes; transfer to a paper towel-lined plate. Let cool, then break into pieces. Add the scallion whites to the drippings in the skillet and cook, stirring, until beginning to soften, 2 to 3 minutes. Add the corn, cabbage, ½ teaspoon salt, and ¼ teaspoon pepper and cook, tossing, until the cabbage wilts and the corn is tender, 3 to 5 minutes more. Add the vinegar and scallion greens and toss to combine. Sprinkle with the bacon. Serve with the fish.

2534. ROAST HALIBUT with ONION-BACON COMPOTE

serves four


4 bacon slices (preferably smoked), cut into 1-inch pieces
1/2 stick unsalted butter, divided
4 medium onions, halved and sliced
4 large garlic cloves, coarsely chopped
5 thyme sprigs plus 2 teaspoons leaves
1 1/2 lb halibut fillets (2 inches thick)
1 1/2 teaspoons grated lemon zest

Preheat oven to 450ºF with rack in middle. Cook bacon in a 12-inch heavy skillet over medium heat, stirring occasionally, until crisp. Transfer with a slotted spoon to paper towels to drain and add 3 tablespoons butter to bacon fat in skillet. Add onions and cook, stirring occasionally, until slightly caramelized, about 5 minutes. Add garlic, thyme sprigs, and salt and pepper to taste, then reduce heat to low and cook, stirring occasionally, until tender and golden, 10 to 15 minutes. Discard thyme sprigs. Put fish in a lightly oiled shallow baking dish and season generously with salt and pepper. Dot with remaining tablespoon butter and roast until just cooked through, about 8 minutes. Crumble bacon into onion mixture and stir in zest and thyme leaves. Serve each portion of fish topped with a couple tablespoons of onion compote and serve remainder on the side.

2118. HALIBUT with SPICY HARISSA SAUCE with BACON, DATES and OLIVES

serves four


For the halibut
4 x 5½oz halibut fillets
4½oz plain flour
salt and freshly ground black pepper
pinch paprika
1 teaspoon vegetable oil
1 tablespoon unsalted butter

For the spicy harissa sauce
7oz bacon lardons
7oz dates, stones removed, chopped
1 tablespoon ready-made harissa paste
2¾oz Madeira wine
3½fl oz chicken stock
20 black Kalamata olives

To serve
7oz cooked bulgar wheat or couscous
4 lemon wedges
1 tablespoon chopped fresh parsley

Sprinkle the flour onto a plate and season, to taste, with salt and freshly ground black pepper and a pinch of paprika. Dredge the halibut fillets in the mixture until completely coated.

Heat the vegetable oil in a frying pan over a medium heat. When the oil is hot, add the seasoned halibut fillets and fry for 2-3 minutes on each side, or until golden-brown on both sides.

Place a knob of the butter on top of each halibut fillet and continue to cook. When the butter has melted, baste the fillets in the melted butter until completely cooked through, then squeeze over the lemon juice and set the halibut fillets aside on a warm plate.

Meanwhile, for the spicy harissa sauce, dry fry the bacon in a separate frying pan for 6-8 minutes, or until crisp and golden-brown. Add the dates and harissa paste and stir well to combine, then reduce the heat and continue to cook for 2-3 minutes.

Add the Madeira wine, stock and olives and continue to cook for a further 4-5 minutes, or until the volume of liquid has reduced and the sauce has thickened.

To serve, divide the bulgar wheat or couscous equally among four serving plates. Place one fried halibut fillet on top of each. Pour over the Moroccan-style sauce and garnish with a lemon wedge. Sprinkle over the chopped fresh parsley.

2016. SEARED SEA BASS with ROASTED DATE, BACON, ALMOND and SHERRY BROTH

For the sauce:
12 pitted medjool dates, cut in half lengthwise
1 tsp canola oil
3 slices thick-cut bacon, diced
1/2 sweet onion, finely diced
1/3 cup slivered almonds, chopped
2 cloves garlic, minced
2 tbsp flat leaf parsley, minced
1/4 tsp crushed red pepper flakes
1 tbsp sherry vinegar
1 tbsp sherry (optional)
1 cup chicken or fish stock
kosher salt and freshly cracked black pepper

For the fish:
4 (4 to 6 oz) filets of sea bass or halibut
2 tbsp canola oil
kosher salt and freshly cracked black pepper

For serving:
1 crusty sourdough baguette, heated in the oven and sliced

To make the sauce: Preheat oven to 350 degrees.

Place dates onto a baking dish or sheet pan and drizzle with 1 tsp canola oil. Toss to coat. Set aside.

Add diced bacon to a large saute pan over medium-low heat. Cook bacon until most of the fat has rendered out, stirring occasionally, about 10 minutes.

After the bacon has cooked for about 5 minutes, place the prepared dates into the 350 degree oven. Roast dates for 7 minutes, then turn off oven. Leave dates in oven until ready to add to the sauce.

Once most of the fat has rendered out of the bacon, add the diced onion, a pinch of freshly cracked black pepper and crushed red pepper flakes to the saute pan. Saute onion and bacon for another 5 minutes, stirring occasionally, until the onion begins to turn translucent. Add the almonds to the pan and stir. Saute the almond-bacon mixture for another 4 to 7 minutes, stirring occasionally, until the almonds turn golden. Add the garlic to the pan and saute for 1 more minute, stirring frequently.

Deglaze the pan with the sherry and sherry vinegar, stirring to scrape up any bits stuck to the bottom of the pan. Add the stock to the pan, stir, raise the heat to medium-high and bring to a simmer. Simmer for 1 minute, stirring occasionally. Remove dates from oven and add to simmering sauce. Stir. Remove sauce from heat. Add parsley to the sauce and stir to incorporate. Taste sauce. Adjust seasonings to taste with kosher salt and freshly cracked black pepper.

To sear the fish: As soon as the dates go into the oven, place a large saute pan over medium-high heat. Preheat pan for 3 minutes. While pan is preheating, season all sides of fish with kosher salt and freshly cracked black pepper.

Add canola oil to the preheated pan, turning the pan to coat the bottom with oil. Once the oil ripples with heat, add the seasoned fish fillets to the pan, serving side-down. (Note: The first side of any meat that touches the pan will get the best sear so always place the prettier side of the meat/fish directly onto the heat first.) Sear fish for 3 to 4 minutes until a golden crust has formed on the bottom of the fish and the flesh releases itself from the pan. If the fish sticks to the pan at all and resists flipping, the fish is not ready yet. Flip and saute fish for another approximately 4 minutes or until just cooked through and opaque in the middle.

To serve: Remove fish from heat. Place 1 fillet in the middle of a large plate or bowl. Top fish with 1/4 of the sauce and serve with a couple large slices of seedy sourdough bread. Repeat plating 3 more times for a total of 4 servings.

2008. PAN-SEARED COD with BACON and CREAMY FENNEL RAGOUT

makes 4 servings


4 slices bacon, cut crosswise into 1/4-inch-wide strips
3 tablespoons olive oil
2 fennel bulbs (sometimes called anise; 2 pounds), stalks discarded and bulbs cut lengthwise into 1-inch wedges
1/4 teaspoon salt
1/8 teaspoon black pepper
1 3/4 cups low-sodium chicken broth (14 fluid ounces)
2/3 cup heavy cream
1/4 cup chopped drained sun-dried tomatoes (packed in oil)
2 garlic cloves, finely chopped
4 (7-ounce) pieces cod, scrod, or halibut fillet (about 1 inch thick)
1 tablespoon Dijon mustard
Garnish: fennel fronds

Cook bacon in a 10- to 12-inch heavy skillet over moderate heat, stirring occasionally, until slightly crisp, 6 to 8 minutes. Transfer bacon with a slotted spoon to a bowl. Add 1 tablespoon oil to fat in skillet, then cook fennel with salt and pepper over moderate heat, turning occasionally, until lightly browned, 6 to 8 minutes.

Add broth, cream, tomatoes, and garlic to fennel and cook, partially covered, over moderately low heat, stirring occasionally, until fennel is tender and cream is slightly thickened, about 20 minutes.

While fennel cooks, heat remaining 2 tablespoons oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking. Season fillets with salt and pepper, then sauté 4 minutes. Turn over and sauté until just cooked through, about 3 minutes more.

Stir mustard and bacon into fennel ragout and season with salt and pepper. Serve cod over fennel ragout.

1917. SEARED HALIBUT with AVOCAO MOUSSE, BACON and BRAISED ROMAINE

yields four servings


4 (5-oz portions) halibut filets
4 avocados, skinned and pitted
½ cup bacon lardons
4 ears corn, shucked and kernels off the cob
1 head romaine lettuce, ribs removed, 1” dice
1 cup cherry tomatoes, quartered
2 limes, juiced
1-2 tablespoons chicken stock
butter
salt
extra virgin olive oil

For avocado, push through a tamis or sieve until smooth. Season with salt, pepper, and lime juice to taste. Set aside.

For ragout, render bacon lardons and sauté with corn kernels. Add romaine and sweat. Mix in cherry tomatoes. Season with salt, pepper, lime juice, a pat of butter, and chicken stock to taste.

Season halibut and sear in a sauté pan with olive oil. Flip over and finish cooking until done. Let rest before serving.

To Serve: Spoon avocado mixture onto a plate. Pile ragout on top of the avocado. Place halibut on top of ragout.

1475. BRAISED HALIBUT with BACON and MUSHROOMS

yields four servings


1 (3 1/2-ounce) bag boil-in-bag long-grain rice
4 applewood-smoked bacon slices
1/3 cup prechopped onion
1 tablespoon chopped fresh thyme
8 ounces presliced mushrooms
2 teaspoons olive oil
4 (6-ounce) halibut fillets
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup dry white wine
2 tablespoons chopped fresh parsley

Cook rice according to package directions, omitting salt and fat. Drain and keep warm. Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan; crumble. Add onion, thyme, and mushrooms to drippings in pan; sauté for 3 minutes. Remove mushroom mixture from pan. Heat oil in pan over medium heat. Sprinkle fish with salt and pepper. Add fish to pan, and cook for 2 minutes on each side or until browned. Return the mushroom mixture to pan. Stir in wine, and cook for 3 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Sprinkle with crumbled bacon and parsley. Serve over rice.

1471. GRILLED COD and LEEK with BACON

makes four servings


14 ounces cod, halibut, or Japanese bluefish fillets, skinned
1 leek (7 1/2 oz.)
8 strips (7 1/2 oz.) bacon, each cut into 5 pieces
20 thin slices ginger root with skin
1/2 teaspoon salt
1/8 teaspoon pepper
40 toothpicks
1/4 cup parsley, cut 1 inch long

Cut fillets into 20 equal pieces (1 1/2-inch by 1/2-inch.) Season with salt and pepper. Cut leek into 10 equal pieces; cut in half, lengthwise. Place a ginger slice on a fish; wrap bacon around it and fasten the ends with a toothpick. Wrap bacon around leek; fasten ends with a toothpick. Place the fish on a bacon rack and put it on the turn table. Do not cover. Cook on high for 5 – 6 minutes or until fish is done. Transfer to a plate. Place the leeks on a bacon rack and place it on the turn table. Cook on high for 3 – 4 minutes. Serve cod and leek together. Garnish with parsley.

1461. ALASKAN HALIBUT TAGINE with ELEPHANT GARLIC CONFIT, WHITE BEANS, STEAMED MUSSELS, RAPINI and SMOKED BACON

serves four


For the elephant garlic confit
3 heads elephant garlic, cloves peeled and separated
1 cup extra virgin olive oil

Place the cloves in a small pot and cover with the olive oil (you may need more oil depending on the size of your pot). Cook slowly on the lowest setting of your stove until the garlic is soft. Set aside to cool.


For the broth
1 cup dried white beans (such as navy or cannelini)
1 each carrot, peeled and cut into 1” chunks
1 each onion, peeled and quartered
1 each garlic clove, peeled
1 sprig fresh thyme
1 each bay leaf
1 teaspoon black peppercorns
1/4 lb slab bacon (preferably skin-on)
6 cups chicken stock

Soak the beans overnight in two quarts of cold water. Discard the water and place the beans in a 4qt sauce pot and cover with the chicken stock. Wrap all of the remaining ingredients in cheesecloth, tie securely with kitchen twine, and throw the bundle in the pot with the beans. Simmer over very low heat until the beans are tender (one to two hours).

Discard the cheesecloth and its contents. Drain the beans and allow to cool. Set aside. Place the bean liquid into a clean saucepan and reduce slowly until you have about two cups. Reserve.


Assembly

4 each Alaskan halibut filet, skin-off 5 oz portions
¼ lb slab bacon, cut into lardons (1/4” x ¼” x 1”)
1 bunch rapini, bottom 2” of stems discarded, washed thoroughly
4 each baby carrots, peeled and cut into ¼” rounds
1 lb mussels, well-scrubbed and beards removed
1 each lemon
1 pinch chile flakes (if desired)

Preheat the oven to 400º. Render bacon over medium heat until crisp. Remove from fat and drain on a paper towel. Place two cups of the cooked beans in the center of the tagine. Arrange rapini around the beans. Place carrots, mussels, and cooked elephant garlic over the rapini. Season the halibut with salt and pepper, and brush with a little of the reserved bacon fat. Place the halibut in the center of the tagine over the beans. Finally, add the reduced bean cooking liquid. Cover and bake in a 400?oven until the halibut is beginning to flake and the mussels have all opened, about 35 minutes. Just before serving, scatter the bacon over the dish, grate lemon zest over all, sprinkle the chili flakes around and drizzle about three tablespoons of the garlic cooking oil into the broth. Bring to the table covered, and remove the cover tableside so your guests can enjoy the aroma. Serve in large, wide bowls with crusty bread.

941. WHITE BEAN, BACON and HALIBUT STEW

makes 4 servings


4 thick-cut bacon slices, chopped
1 cup sliced shallots
3 tablespoons extra-virgin olive oil
6 garlic cloves, chopped
1 14 1/2-ounce can petite diced tomatoes in juice
1 8-ounce bottle clam juice
1/3 cup dry white wine
1/2 teaspoon (scant) saffron threads
2 15-ounce cans small white beans, drained
1 1/2 pounds halibut fillets, cut into 1 1/2-inch chunks

Sauté bacon and shallots in large pot over medium-high heat until bacon is crisp, about 7 minutes. Add olive oil and garlic; stir 1 minute. Add tomatoes with juice, clam juice, wine, and saffron; bring to boil. Reduce heat; simmer 5 minutes. Add beans and fish; bring to simmer. Cover; simmer until fish is just opaque in center, about 5 minutes. Season stew to taste with salt and pepper.

827. BACON-WRAPPED HALIBUT with SEARED CHERRY TOMATO SAUCE and SMASHED PEAS

makes 4 servings


4 6-ounce halibut fillets
Salt and black pepper
8 center-cut bacon slices
3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 small onion, finely chopped
2 10-ounce boxes frozen peas
1/4 cup fresh flat-leaf parsley, chopped, a generous handful
Zest of 1 lemon
3 tablespoons half-and-half or heavy cream (eyeball it)
1 pint cherry tomatoes
1 large garlic clove, chopped
1/4 cup white wine, a good-size glug
1/4 cup chicken stock, plus another 1/4 cup to reheat peas if necessary (eyeball it)
1/2 cup fresh basil, about 10 leaves, chopped or torn

Season the halibut fillets with salt and pepper, going easy on the salt. Arrange two bacon slices side by side, overlapping slightly. Place one end of a halibut fillet on the edge of the bacon slices. Working in a spiral fashion, wrap and roll the bacon around the fish, pulling gently on the bacon to make both ends end up on the same side of the fillet. This will prevent the bacon from unraveling as it cooks. Reserve the fish in the fridge while you get the smashed peas working.

To a medium saucepan over medium heat, add one tablespoon of the olive oil, once around the pan, then one tablespoon of the butter and the onions. Saute the onions for two minutes, then add the frozen peas, and raise the heat a bit. Stir the peas to heat them through and allow the liquid to evaporate. When the peas are heated through, add half of the parsley, the lemon zest, half-and-half or cream, salt, and pepper to the pan and smash it all together using a potato masher or fork. Turn the heat off and cover the peas with a lid or some foil to keep them warm.

Preheat a large nonstick skillet over medium heat with a tablespoon of the olive oil. Add the bacon-wrapped halibut to the hot skillet, bacon-end side down first, and cook them for two minutes or three minutes on each of the four sides. Don't turn the fillets until the bacon is crispy looking on each side.

While the halibut cooks, start the seared cherry tomato sauce. Preheat a small skillet over high heat with the remaining tablespoon of extra-virgin olive oil; once it is screaming hot, add the cherry tomatoes, season them with salt and pepper, and sear them for a minute without moving them. Turn the heat down to medium and shake the pan, add the garlic, and continue to cook for a minute. Next, add the white wine and cook until it has almost completely evaporated, then add a fourth cup of chicken stock. Bring the sauce to a bubble and remove it from the heat. Add the basil and the remaining tablespoon of butter and stir them to combine and melt the butter.

If the smashed peas need to be reheated, put the pot over medium heat, add a fourth cup of chicken stock, and stir until the peas are steaming.

To serve, spoon a portion of the smashed peas in the center of a dinner plate, arrange a bacon-wrapped halibut fillet on top of the peas, and top it with some of the seared cherry tomato sauce and the remaining parsley.

826. BLUE MUSSEL SALAD with BACON VINAIGRETTE and VERMOUTH POACHED

yields 6


6 portions halibut
mussels, steamed, and, shucked
30 grams bacon, minced
3 large potato, baked, cooled, medium, diced
1 garlic, clove, minced
2 shallot, diced, finely
1 tablespoon parsley, chopped
60 ml white wine
1 teaspoon olive oil
1 teaspoon Pommery mustard

Preheat a large Paderno saute pan to medium high heat with olive oil then quickly sear both sides of the halibut until golden brown on one side, about 3 minutes then flip halibut and take the pan off the heat. Reserve in a warm area. In a separate preheated Paderno saute pan, saute the shallots, garlic and bacon until the shallots and garlic are translucent and the bacon is thoroughly cooked, remove from pan and deglaze with white wine. Toss together the mussels, potatoes, garlic, shallots, chopped parsley and bacon then add the Pommery Mustard, some olive oil and the simmered white wine that was used to deglaze the pan. Gently toss until thoroughly incorporated and reserve in a warm area.
