3977. CLAM CHOWDER with BACON and CROUTONS

Yields 6 servings


1/4 cup (60 mL) butter
2 onions, finely chopped
1/4 cup (60 mL) all-purpose flour
4 cups (1 L) milk
3 medium potatoes, peeled and diced
1 tsp (5 mL) dried thyme
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) pepper
2 cans (5 oz/142 g each) clams with juices

Garnish:
6 slices bacon, cooked crisp and chopped
1/2 cup (125 mL) bread croutons
3 green onions, chopped

Melt butter in a large saucepan or Dutch oven. Add onions. Cook until fragrant but do not brown. Add flour. Cook over medium low heat, stirring, for 5 min. Cool slightly.

Whisk in milk. Bring to a boil. Add potatoes, thyme, salt and pepper. Reduce heat, cover and simmer until potatoes are tender (about 20 min).

Add clams and juices and heat thoroughly. Do not boil. Taste and add seasoning, if necessary.
Serve garnished with green onions, bacon bits and croutons.

3943. CHICKEN and BACON HOTPOT

Serves 4


4 chicken thighs on the bone skinned
Fry light
1 medium onion roughly chopped
4 smoked back bacon rashers visible fat removed cut into 2.5cm pieces
200g closed cup mushrooms
Small handful parsley roughly chopped
450ml chicken stock
Salt and black pepper
2 carrots cut into 1.5cm cubes
1tsp dried mixed herbs
550g potatoes peeled and thinly sliced
200g broccoli to serve

Preheat oven to 180c (350F) or gas 4 Place frying pan over medium heat.

Spray chicken with fry light and brown in pan for 5 minutes. Transfer to large casserole dish.

Fry onions and bacon in fry light and stir fry for 3-4 minutes until onion is golden.

Stir in mushrooms,carrots, parsley, stock and half of the mixed herbs. Season bring to the boil stirring frequently.

Pour bacon mixture over top of chicken. Arrange potatoes on top overlapping each other. Sprinkle over remaining herbs and spray with fry light. Cover and bake for 1.5 hours Preheat grill to high. Remove lid from casserole spray with fry light and brown under grill.

3923. BACON KOROKKE (POTATO CROQUETTES)

Makes 6 servings


2 large russet potatoes, peeled and cut into about 1.5 inch disks

3/4 cups (about 1/2 onion), chopped finely

2 strips bacon, chopped finely

3 Tbsp heavy cream

1/2 tsp salt
pepper to taste

flour

1 egg

panko

tonkatsu sauce

Bring the potatoes to a boil in a medium pot. Boil until soft, about 5–6 mins. Test doneness by inserting a chopstick in the center.

Meanwhile, saute the bacon and onion in a small skillet over medium heat until the onions are translucent, about 5 mins.

Drain well and transfer the potatoes to a bowl. Mash the potatoes or use a potato ricer while still hot. Quickly add the onion and bacon and mix. Next, add the cream, salt, and pepper and mix.

Set up, each in a separate bowl, the flour, egg, and panko. Shape the potato mixture into small round ovals (how big and how many is up to you). Coat each lightly with the flour, then egg, then generously with the panko.

Heat a pot with oil for deep frying over medium heat. Fry at 350ºF until golden brown. Let drain on a paper towel serve with tonkatsu sauce.

3918. PAN-FRIED BACON and POTATO ROSTI with a FRIED EGG

Serves 1


For the bacon and potato rösti
1 tbsp olive oil
200g/7oz smoked bacon, fat removed, chopped
½ baking potato, peeled and grated

For the fried egg
1 tbsp olive oil
1 free-range egg
sprinkling freshly ground black pepper

For the bacon and potato rösti, heat the oil in a frying pan over a medium heat and fry the bacon pieces for 5-6 minutes, or until crisp and golden-brown.

Put the grated potato into a clean tea towel and bring the edges of the tea towels together to form a parcel. Wring the grated potato in the tea towel until as much moisture as possible has been extracted.

Add the grated potato to the frying pan with the bacon, and mix well to combine.

Press the potato mixture down into the pan with a spatula or fish slice. Fry over a medium heat for 5-6 minutes on each side, until golden-brown and crisp on both sides.

For the fried egg, heat the oil in a frying pan over a high heat, add the egg and fry until it has just set. Sprinkle the freshly ground black pepper over the egg.

3911. CHEESE and BACON HASH BROWN MUFFINS

Serves: 12


1 kg / 2lb starchy potatoes (see note)
2½ tbsp olive oil, separated
1 cup grated cheese (any melting cheese)
3 bacon rashers, finely diced
¾ tsp salt
Pepper
1 tbsp parsley, finely chopped (for garnish - optional)

Preheat oven to 180C/350F.

Heat ½ tbsp of olive oil in a pan over high heat. Add the bacon and sauté until crispy. Remove and drain on a paper towel.

Peel and grate the potatoes and place in a colander. Rinse under cold water for a few seconds (to remove starch which helps make them fluffy inside and also stops the potatoes from browning).

Working a handful at a time, squeeze out the excess water and place into the bowl.

Add most of the bacon (reserve some to garnish), 2 tbsp olive oil, salt, pepper and cheese. Mix well to combine.

Spray a 12 hole muffin tray with oil.

Place ⅓ cup (packed) of the mixture into each hole. Pat down lightly with the back of a spoon.

Bake for 30 minutes until dark golden brown on top.

Let stand for a few minutes before turning out from the muffin tray.

Garnish with parsley and remaining bacon, and serve immediately.

Note: You need to use starchy potatoes for hash browns as they breakdown when cooked, becoming nice and fluffy on the inside and golden and crunchy on the outside. The best to use are Russet (common in the US), dutch creams, King Edwards or red delight. However, great all rounders like golden delight, coliban, red rascal and Sebago (popular in Australia) still works great.

3900. PORK CHOPS with CORN, BACON and MARSALA

Yield: Serves 4


4 fat boneless pork chops
Salt and freshly ground pepper
24 oz / 700 mL chicken stock or broth
2 ears of corn, kernels sliced off, cobs reserved and cut into 3" lengths
2 small Yukon Gold potatoes, peeled and diced into small 1/2" chunks
6 pieces bacon
3 large shallots, chopped
2 garlic cloves, minced
1 red chili pepper, seeds and veins removed, chopped
4 oz / 118 mL marsala wine
2 tsp chopped fresh sage (optional)
2 oz / 60 mL half and half
Handful parsley, chopped

Remove pork chops from fridge and season with salt and pepper about 30 minutes before cooking.

In a medium saucepan, combine stock, corn cobs, and potatoes. Bring to a boil, then reduce heat to low, cover and simmer. Check after about 8 minutes to see if potatoes are done. As soon as they are tender, strain broth into a bowl, discarding corn cobs and reserving potatoes in a separate bowl.

Meanwhile, in a large skillet, cook bacon til crisp. Remove from skillet and chop roughly.

Pour most of the fat from the skillet, reserving it in a bowl. Increase heat to medium-high. Cook pork chops, 4-5 minutes per side depending on thickness. Set aside and cover to keep warm.

Wipe out any burnt bits from skillet, and add a drizzle of bacon fat if the pan is too dry. Reduce heat to medium-low. Cook shallots, garlic and chili til softened, about 2 minutes. Pour in the marsala, scraping the bottom of the skillet to deglaze. Increase heat to medium-high again. Pour in stock, then gently stir in sage, corn and potatoes.

Simmer sauce til slightly thickened and reduced, about five minutes. Turn off heat and swirl in half and half. Add a bit more if you like a creamier sauce. Taste and season with salt and pepper.

To serve, pile some corn, bacon and potatoes on the plate along with a generous pour of sauce.  Top with a sprinkle of parsley, then place a pork chop on top with another drizzle of sauce.

3882. HERBED GRUYERE SCALLOPED POTATOES and BACON AU GRATIN

Serves: 8


2 pounds russet potatoes (about 4 medium potatoes)
6-8 slices of bacon, cooked and chopped
2 1/2 cups grated Gruyere cheese (about 8 ounces)
1 tablespoon butter, cut into 8 cubes


Spiced Cream
3 cups heavy cream
1 large onion, thinly sliced
3 bay leaves
2 garlic cloves, minced
1 tablespoon fresh parsley, chopped (or 2 tsp dried)
1 tablespoon chopped fresh chives ( or tsp dried)
1 1/2 teaspoons fresh thyme (or ½ tsp. dried)
¼ teaspoons cayenne pepper
¼ teaspoons ground nutmeg
½ teaspoons salt
½ teaspoons pepper

Preheat oven to 400 degrees F.

Add the "Spiced Cream" ingredients to a saucepan and bring to a gentle simmer. Simmer for 5-10 minutes while you grease a 9x13 casserole dish and peel and slice potatoes into 1/8 inch slices. Transfer potatoes to a large bowl.

Spoon just enough of the herbed cream that has been simmering to cover the bottom of the casserole dish. Pour the remaining herbed cream over the potatoes and gently toss to coat.

Using a slotted spoon, layer the bottom of the casserole dish with 1/3 of the potato/onion slices (the slotted spoon will allow you to leave most of the cream in the bowl). Lightly season the layer of potatoes with freshly cracked salt and pepper (in addition to salt and pepper listed in ingredients). Layer 1 cup of the cheese, 1/2 of the bacon then top with 1/3 of remaining cream. Repeat layers.

Top the casserole with remaining potato/onion slices and pour over remaining cream. Dot the potatoes with cubed butter.

Cover the casserole with aluminum foil and bake for one hour. Remove from the oven, sprinkle with remaining cheese then continue to bake, uncovered for an additional 10 minutes. Test the potatoes to make sure they are tender. Continue to cook if necessary (will depend on how thin you cut your potatoes). When potatoes are done, broil until golden brown.

3863. TWO-BEAN SALAD with ROASTED POTATOES and BACON

Servings: 4


4 slices bacon
1 1/2 pounds new potatoes, thinly sliced
Coarse salt and ground pepper
6 ounces wax beans, trimmed and halved
6 ounces green beans, trimmed and halved
3 tablespoons capers, rinsed and drained
1 teaspoon extra-virgin olive oil
2 scallions, thinly sliced
4 teaspoons red-wine vinegar

Preheat oven to 450 degrees, with racks in upper and lower thirds. Divide bacon between two rimmed baking sheets; cook until browned, 8 minutes. Drain bacon on paper towels, reserving sheets. Crumble bacon into bite-size pieces. Add potatoes to sheets, season with pepper, and toss to coat with bacon drippings. Cook until potatoes are brown on bottoms, 15 minutes, rotating sheets halfway through. Remove sheets from oven and flip potatoes with a metal spatula.

In a bowl, combine beans, capers, and oil; divide between sheets with potatoes. Cook until potatoes and beans are tender, about 15 minutes, rotating sheets halfway through. Transfer potato mixture to a large bowl; toss with bacon, scallions, and vinegar.

3840. WAFFLED POTATO KUGEL with BACON

Yields 12


12 ounces bacon
4 medium Russet potatoes
Juice of 1/2 a lemon
6 eggs
1 medium yellow onion, cut into chunks
3/4 cup all-purpose flour (or matzoh meal--I haven't tried that, though)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Vegetable oil, for waffle iron
Sour cream, for serving
Chives, scallions, or sautéed yellow onions, for serving

Cut the bacon into 1/2-inch pieces and fry in a large skillet over medium-high heat, until cooked to your liking. Drain, reserve the fat for greasing the waffle iron, and set aside.

Peel the potatoes and cut into large chunks, then immediately submerge in cold water to keep them from oxidizing (turning dark).

In a large bowl, whisk together the eggs and set aside.

In a food processor, pulse the onion chunks until finely chopped. Stir into the eggs.

Drain the potatoes and use the same food processor bowl to process the potatoes in batches (2 should be sufficient, depending on the size of your processor). Scrape down the sides of the bowl, add some lemon juice (half of it, if you're working in two batches), and process again until finely pureed. Transfer to a strainer placed over a bowl and press to squeeze as much moisture out as possible. If you have a cheesecloth, line the strainer with it, and once all the potatoes are processed, squeeze out as much moisture as you can.

Add the potatoes to the egg mixture, followed by the flour, salt, pepper, and most of the bacon pieces (reserve a little for topping, if you'd like). Stir until well combined.

Preheat a waffle iron and grease with the bacon grease you reserved earlier (or vegetable oil). Drop a 1/4 cup of kugel batter (this may depend on the size of your waffle iron, so experiment to find what works best) onto each grid. Cooking them will take longer than typical waffles—just watch for when there's less steam escaping the sides of the waffle iron. This yielded 12-13 waffles on my big Belgian waffle iron, so the recipe will feed 6-4 people, depending on how hungry they are.

Serve immediately topped with sour cream and/or crispy bacon bits and/or chives and/or scallions and/or sautéed yellow onion.

3769. BOMBAY BACON CURRY

Serves 4


200 g (7 oz) sweet cured unsmoked back bacon rashers
15 ml (1 tbsp) oil
1 onion, sliced
2 cloves garlic, crushed
30 ml (2 tbsp) medium curry powder
30 ml (2 tbsp) ground cumin
1 courgette, thickly sliced
¼ (about 200 g) cauliflower, cut into small florets
2 potatoes, skin on and cut into small cubes
100 ml water
2 x (approx) 400 g can chopped tomatoes
30 ml (2 tbsp) fresh coriander, roughly chopped
2 large handfuls baby spinach

Place oil in large saucepan and heat, add the bacon, onion and garlic and cook for 1-2 minutes. Add the curry powder and cumin, combine well together. Then add the courgette, cauliflower, potatoes and water. Stir well.

Next, add the tomatoes and bring to the boil, cover with lid and simmer for about 15-20 minutes until the potatoes are soft.

Just before serving, stir through the coriander and spinach and serve with warmed chapattis and a side order of chopped fresh tomato, red onion and coriander mixed together and drizzled with a little flavoured oil.

3758. RUSTIC POT ROAST with BACON, GARLIC and ROSEMARY

2 slices bacon, diced
3- to 4-pound boneless chuck roast, trimmed of excess fat
Salt and black pepper
1 1/2 teaspoons olive oil
1 cup beef broth, low-sodium or homemade
2 onions, chopped
1 stalk celery, chopped
2 russet or baking potatoes, peeled and chopped
5 cloves garlic, smashed
1 (14-ounce) can diced tomatoes with its juice
1 tablespoon tomato paste
2 sprigs rosemary, plus more for garnish

Spray the inside if the slow cooker with cooking spray.

Heat a large Dutch oven or cast-iron pan on the stovetop over medium-high heat. Add the bacon and cook until crispy, about 5 minutes. Drain on paper towels. Pour off all but 1 teaspoon of the bacon drippings.

Sprinkle the beef with salt and pepper on all sides (go easy on the salt if using canned stock, which is already salty). Add the olive oil to the pan with the dripping and then, over medium-high heat, deglaze the pan with the beef broth, scraping up all the bits on the bottom of the pan. Pour the juices from the pan into the slow cooker.

Add the onions, celery, potatoes, garlic, tomatoes, tomato paste, and rosemary to the slow cooker. Finally add the bacon. Stir everything well, nestling the vegetables and rosemary into the broth. Cover and cook on low for at least 7 hours and up to 8 hours, until the meat is very tender.

Transfer the meat to a platter and turn the slow cooker to high. Leave the slow cooker uncovered and continue cooking the sauce for 45 minutes, or until it has thickened some. Return the meat to the slow cooker and continue to cook on high for another 15 to 30 minutes, or until the sauce has thickened a bit more.

Remove the rosemary sprigs and discard.

Season the sauce with additional salt and pepper, if needed. Plate the beef on a large platter and spoon the potatoes and sauce around and over the beef. Garnish with additional rosemary sprigs. Save any sauce for bread dipping.

3755. GRILLED FINGERLING-POTATO SALAD with CHIPOTLE BACON VINAIGRETTE

12 to 14 small fingerling potatoes
4 slices bacon
1 large red onion, peeled and sliced in rounds
5 tablespoons extra-virgin olive oil
1 tablespoon rendered bacon fat
4 tablespoons red-wine vinegar
1 chipotle chile en adobo, or to taste, mashed and minced
Kosher salt and freshly ground black pepper to taste

Put the potatoes in a large pot and cover with 2 inches of water and a tablespoon of salt, then set over high heat until it comes to a boil. Cook about 5 to 7 minutes. Drain potatoes, place on a baking sheet and allow to cool slightly, then halve the potatoes lengthwise. (You can do this the day before.)

Meanwhile, cook the bacon in a sauté pan until crisp. Reserve bacon and, in a small bowl, 1 tablespoon of the rendered fat.

Light a fire in a fire pit with a grill, or in a charcoal grill, or set a gas grill to high. If you have a strong vent in your kitchen, you may use your stove with a burner set to high. Place a large cast-iron grill pan over the heat and allow it to get hot. You can let the fire die slightly. If using a gas grill or stove, turn heat to medium.

Put the potatoes and the sliced onions in a large bowl and toss gently with 2 tablespoons of the olive oil, and salt and pepper to taste. Working in batches, grill the potatoes cut-side down on the grill until they have developed a light char, approximately 2 to 3 minutes. Grill the onions until they are charred, approximately 4 to 6 minutes a side. Return potatoes and onions to bowl.

For the dressing, combine the remaining olive oil, bacon fat, red-wine vinegar and chipotle in a small bowl and whisk to emulsify. Add salt and pepper to taste. Add the dressing to the potato-and-onion mixture and toss gently to combine. Let sit for 20 minutes to allow the flavors to penetrate the potatoes. Crumble bacon over the top.

3744. NEW POTATOES with SPRING ONIONS and BACON

serves 6


18-24 Cornish or Jersey new potatoes
2-3 bay leaves
25 grams butter
bunch of spring onions, chopped
4 slices smoked streaky bacon
1 tablespoon olive oil
sea salt and freshly ground black pepper

Scrub new potatoes well and rinse in cold water. Cook in boiling salted water for 15-20 minutes with bay leaves until tender. Meanwhile, preheat the grill to high. Melt butter in a small pan, add a bunch of spring onions, chopped and cook gently for 1-2 minutes to soften. Grill the smoked streaky bacon until crisp and golden, drain on kitchen paper, then break into small pieces.
Drain the potatoes and toss with the spring onions, olive oil, some sea salt and freshly ground black pepper. Put the potatoes in a warmed serving dish and top with the bacon pieces. Drizzle with more olive oil if needed.

3737. AGED BEEMSTER and SMOKED BACON BURGER with FRENCH FRIES


serves four


Burger Patties
1 tablespoons canola oil
1½ lbs lean ground beef, rolled into 4 (6-oz) balls
4 slices double-smoked bacon
Salt and pepper, to taste
8 slices aged Beemster
4 brioche buns
1 tablespoon (15 mL) butter
8 slices hot banana peppers
4 leaves Boston lettuce
¼ cup mayonnaise

French Fries
2 lbs russet potatoes, washed, skin on
A deep fryer or pot of canola oil set to 325ºF
Salt, to taste

Burger Patties: Add canola oil to a cast iron frying pan on medium high heat and add two 6-oz balls of ground beef to the pan. Add the double smoked bacon to the same pan and using a spatula press down the chuck to flatten them into a patty shape. Add a generous amount of ground salt and pepper and flip the burgers over, cook for 3 minutes per side. Add sliced Beemster to the warm burger and top with the crispy bacon. Toast the brioche buns in the oven with a touch of butter. To finish the burgers add your favourite toppings, my choice would be hot banana peppers, mayonnaise and Boston lettuce. Repeat with remaining patties.

French Fries: Cut potatoes into even and uniform pieces, about 3-inch x ¼-inch. Soak fries in the cold water for about 30 minutes. This removes some of the excess starch and surface sugars which can burn in the frying process. Drain french fries from the water, and pat dry to remove excess water. Heat a heavy stockpot fitted with a deep-fry thermometer with oil to 325ºF. Carefully, add 2 handfuls of fries to hot oil. There should be at least 1-inch of oil above the French fries. Blanch until fries are light brown, 5 to 7 minutes. Remove fries, gently shaking off excess oil and let drain on rack. Repeat until all of the potatoes are blanched. Raise heat of oil to 350ºF. Cook French fries again, 2 handfuls at a time, until golden brown, about 2 minutes. Remove from oil, shake off excess oil, lightly season in a bowl with salt. Repeat until all potatoes are cooked.

3736. VICHYSSOISE with BACON and CHIVE OIL

serves four


3 tablespoons butter
1 pound small leeks, cleaned and chopped
1 small onion, chopped
3 cloves garlic, minced
1 teaspoon kosher salt, plus more to taste
3 russet or Yukon gold potatoes, peeled and halved
4 cups chicken stock
1 cup cream
1 cup buttermilk
½ teaspoon white pepper
Chive oil (recipe below)
4 strips bacon, cooked and chopped

Chive oil
2 bunches chives, blanched, chilled and chopped
1 cup olive oil
Salt and pepper, to taste

Combine the ingredients in a blender and purée until smooth.

In a heavy saucepan set over medium-high heat, melt the butter. Add the leeks, onion and garlic. Season with salt, and allow to sweat for 5 minutes. Lower the heat to medium-low and cook the mixture for about 20 minutes. Add the potatoes and stock, and bring the mixture to a boil. Reduce heat to low and cook until the potatoes are tender, or about 45 minutes. Pour the soup into a blender and purée. Strain the soup through a colander, then return it to the pot. Add the cream and buttermilk. Season with salt and white pepper, to taste. Serve in small bowls, drizzle with chive oil and garnish with bacon.

3735. BEER, BACON and MAPLE SYRUP POUTINE

4 baker potatoes
olive oil
1 tbsp smoked paprika
1 tbsp garlic salt
4 strips of bacon chopped up
4 slices of peameal bacon chopped
1 tbsp butter
1 garlic clove minced
2 cups of stout beer
1 tbsp mustard
1 tbsp worcestershire sauce
1 tbsp maple syrup
salt
cheese curds
green onions

Start by slicing each potato lengthwise into four potato slabs. Then cut each slab into thin fries about a centimeter thick. Keep the fries fresh by storing them in a bowl of cold water. Before use, drain the fries and pat them dry. This is to ensure that the spices and oil stick.

Preheat the oven to 400 degrees F. Place all the fries in a bowl and sprinkle over the paprika, garlic salt and a couple glugs of olive oil. Roll the fries around and coat evenly. Spread out on two baking sheets making sure that each fry is in contact with the sheet, this will ensure they get crispy. Cook the fries for 50 minutes. Every 20 minutes rotate the trays and give the fries a flip. Hint: you’re going to need a thin spatula to get the fries up and off the baking sheet in order to flip them.

While the fries are cooking start on the gravy by frying up both types of bacon in an ungreased pan on medium high heat. Once crispy, pull out the bacon and let drain on a plate covered with a paper towel. Save the grease. For the gravy, add the butter to the bacon grease and let melt. Then spoon in the flour and stir until a paste forms. Throw in the garlic and stir until it becomes fragrant. Finally whisk in the beer, mustard, Worcestershire, maple syrup and a pinch of salt. Let thicken over a low heat.

To build the poutine, place all the fries on one baking sheet and layer in the cheese curds and bacon pieces. Then pour over the gravy and place back in the oven for 5 minutes or until the cheese is good and melted. Top with green onions and enjoy!

3730. BACON POTATO PANCAKE with TOASTED CORN SALSA

yields twelve


1½ pounds yellow potatoes, diced, peeling optional
5 slices bacon
¼ cup diced green onions
1/2 cup grated Gruyère cheese, grated
1 egg
¼ cup all-purpose flour (or white rice flour for gluten free)
¼ teaspoon pepper
1 to 2 teaspoons salt
avocado cream (recipe below)
grilled corn salsa (recipe below)

Avocado cream (makes 2 cups)
2 ripe avocados 
1/2 lime, juiced
1/2 cup sour cream ½ teaspoon salt to
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Combine avocado, sour cream, lime juice, salt, garlic powder, and onion powder into a small bowl. Mash with fork, and then whip until smooth with a wire whisk. If you have one, you can use a food processor.

Toasted corn salsa
1(14.5) can yellow corn, drained well (you can also substitute fresh grilled corn)
1/4 cup chopped cilantro
2 tablespoons small-dice orange bell pepper
1/4 cup small-dice red onion
1 teaspoon light olive oil
1 lime, juiced
½ teaspoon salt

Heat a cast-iron pan until very hot. Add the corn and toast on all sides, stirring frequently so it does not burn. Remove once it has a nice brown color. In a medium bowl, add corn and the remaining ingredients. Serve hot or cold.


In a large pot, add diced potatoes and fill with water until just above potatoes. Bring to a boil. When potatoes are done (they can be split with a fork) DRAIN the water. Let the potatoes dry out in the pot for a minute or two. Fry up your bacon and cut into small pieces. Save the grease and use this for frying up the potato pancakes. In a medium bowl, combine the bacon, green onion, cheese, egg, flour, salt, and pepper. Using a potato ricer, rice the potatoes into the bowl with the other ingredients. Stir to combine. The consistency will be very thick. Use an ice cream scoop to portion the pancakes, then shape them into 2-inch disks. Using bacon grease in a pan, fry the potato pancakes until they are golden brown. Remove them to a wire rack over paper towels. Top with avocado cream and grilled corn salsa.

3709. ROSEMARY CHICKEN, BACON and POTATO SOUP

makes four servings


4 slices bacon, cut into 1-inch pieces
1/2 medium onion, diced
1 teaspoon coarsely chopped fresh rosemary
5 cups chicken stock
1/2 pound red potatoes, cut into 1/2-inch pieces
2 teaspoons Worcestershire sauce
1 cup cooked chicken, cubed or shredded
Kosher or sea salt, to taste
Freshly ground black pepper, to taste 

In a stockpot, crisp the bacon over medium-high heat. Stir in the onion and rosemary and cook until onions are soft and translucent, about 3 minutes. 

Stir in chicken stock, potatoes, Worcestershire sauce and cooked chicken. Bring to a gentle boil, and then reduce heat and simmer for about 10 minutes or until the potatoes are tender. Season with salt and pepper to taste and serve hot.

3689. SHEPHERD'S PIE with BACON, BEEF and HORSERADISH BLUE CHEESE POTATOES

serves 4-6


2 pounds beef from shank or chuck or lamb from shank or shoulder (from the butcher), hand trimmed and chopped into 1/2 inch pieces
2 tablespoons olive or canola oil
6 slices smoky thick-cut bacon, diced
Salt and coarse black pepper
1 onion, chopped
2 carrots, chopped
2 small ribs celery, chopped
4 cloves garlic, chopped
1 large bay leaf
Bundle of sage and parsley, a few sprigs each
2 rounded tablespoons flour
About 3 tablespoons Worcestershire sauce
Cup dry red wine
2 1/2 cups beef or veal stock

For the topping:
2 to 2 1/2 pounds Russet potatoes, 5 large, peeled and cubed
1 cup warm milk
Cup sour cream
2 rounded tablespoons prepared horseradish
1 cup smoked blue cheese or blue cheese crumbles
1 cup grated Parm or sharp cheddar
A few grates of fresh nutmeg
1 cup finely chopped chives
2 large egg yolks
Sprinkle of paprika

Pat the meat dry after chopping and before cooking.

Heat a Dutch oven or other heavy pot over medium-high heat. Add oil and bacon and cook to crisp. Remove to a plate and drain all but 3-4 tablespoons drippings from the pot.  Add beef or lamb, season with salt and pepper, and cook in 2 batches to brown and crust.  Remove meat to the plate with bacon.

To meat drippings add onions, carrots, celery, garlic, bay herb bundle, salt and pepper.  Cook partially covered 10-12 minutes to soften, stirring occasionally.  Add flour and stir one minute to cook out raw flour taste, add Worcestershire and wine, and stir. Add stock and beef or lamb and bacon back to pan reduce heat to simmer and cook covered until tender, stirring occasionally, up to 40 minutes.

Place potatoes in a pot, cover with water and bring to a boil. Salt water and cook to tender, drain and pass through ricer.  Stir in warm milk to thin to your liking add sour cream, horseradish, cheeses, pepper, nutmeg and chives. Adjust seasoning, stir in egg yolks and pipe or spread over meat filling in casserole or single-serve dishes.

Heat broiler and place a rack in the center of the oven. Brown potatoes and sprinkle with paprika to serve.

3682. CHORIZO BACON BREAKFAST BURRITOS

yields 8 burritos


1 lb. bulk chorizo sausage
2 tablespoons olive oil
16 oz. frozen diced hash-brown potatoes, with onions and peppers
8 large eggs, beaten
8 strips bacon, cooked and chopped
1 1/2 cups shredded Cheddar or Mexican Blend cheese
8 (8-inch) flour tortillas, heated
Pico de gallo, chopped avocado, and/or hot sauce, for serving, if desired

Heat a medium skillet over medium-high heat. Add sausage and cook for 8 to 10 minutes or until sausage is no longer pink, stirring frequently. Remove from skillet; cover to keep warm.

Wash the skillet to cook the potatoes. Heat the olive oil over medium-high heat. Add the potatoes and cook until tender and slightly cripsy, about 8-10 minutes. Remove potatoes from skillet and set aside.

In the same pan, cook the eggs. Spray with non-stick cooking spray and add the beaten eggs. Cook for 3 to 5 minutes, stirring frequently. Remove from heat.

To assemble the burritos, sprinkle shredded cheese down the center of each warm flour tortilla. Next, spoon about 1/4 cup of sausage over the cheese. Top with about 1/4 cup of potatoes, egg, and 1 strip of chopped bacon. Fold bottom of each tortilla up over filling; roll up. If desired, serve with pico de gallo, avocado, and hot sauce. Serve warm.
