3179. SUNNIED EGG BIALY SANDWICH with BACON, ARUGULA, GOAT CHEESE and BALSAMIC GLAZE

makes six servings 


6 bialys, split 
extra-virgin olive oil, to taste 
salt and pepper, to taste 
1 pound bacon 
2 cups arugula 
4 ounces goat cheese 
2 tablespoons balsamic reduction
1 teaspoon garlic powder 
6 eggs

Preheat the oven to 400 degrees. On a baking sheet, place the bialys cut side up. Drizzle with some oil and season with salt and pepper, to taste. Bake until crispy and golden, for 15 minutes. Fry the bacon in a large frying pan over medium heat until it reaches desired level of crispness and set aside. In a bowl, combine the arugula with some olive oil, the balsamic reduction, and garlic powder. Season with salt and pepper, to taste, and toss. Crack the eggs into a large frying pan and cover with a lid. Cook for 2-3 minutes over medium heat. Flip each egg over and cook until the whites are set but the yolks are still liquid, for 2 more minutes. For each sandwich, spread the desired amount of goat cheese on either side of a bialy, and place 1 egg on top. Add the desired amount of bacon (2-3 pieces should do the trick) and place arugula on top before closing.

2908. BACON MUSHROOM CALZONES

yields two servings


1/3 of pizza dough
6 slices of fried bacon
1/4 cup sliced olives
4 large sliced sauteed mushrooms
2 anchovies (optional)
1 cup shredded mozzarella cheese
1 egg for egg wash
marinara sauce (optional)

Preheat oven to 400 F degrees. Divide the pizza dough in half, to make two calzones. Roll out the dough into a circle so that it’s about 1 foot in diameter. Place the mozzarella cheese on half of the dough, top with bacon and olives. Usually I saute my mushrooms first, but you can omit this step and place the olives on top of the cheese and bacon and if you are using the anchovies add it now. Fold the half of the dough with no ingredients over the half with the ingredients and roll up the ends, or press them with a fork. Add a little bit of water if you need them to stick together. Brush the calzones with egg wash. Bake for about 20 to 25 minute, or until nice and golden brown. Serve with marinara sauce.

2900. RAMEN with BACON, EGG, BOK CHOY and CHAR-SIU PORK

2 slices of bacon, chopped width-wise into thin 1/8-inch strips
1 clove of garlic, minced
6 cups hot water
1 large egg
1 helping of char-siu pork
1 package of your favorite instant ramen
2 cups of baby bok choy, leaves separated and washed
1 stalk of green onion, finely chopped (optional)

In a 4-quart pot or larger over high heat, cook the strips of bacon for about 3 minutes or until crispy brown, stirring occasionally. Add the garlic and continue stirring for about a minute.

As the garlic begins to brown, add the hot water to the bacon and garlic and bring to a boil. Once boiling, crack the egg into the water and poach until desired doneness (3 minutes for soft, 6 minutes for hard). Turn heat to medium. With a slotted spoon, transfer the cooked egg to a bowl.

Add the noodles and seasoning packet(s). When the water boils again, cook for another 3 minutes or until desired tenderness. Using a slotted spoon or chopsticks, transfer only the noodles and pork into the bowl with the waiting egg.

Bring the water back to a rapid boil. Add the leaves of baby bok choy. Stir and let it come back to a boil. Cook for another minute or until white stalks are slightly translucent and tender.

Ladle in the bok choy and broth, garnish with chopped green onions and serve.

2571. PORTOBELLO, FRIED EGG, BACON, SPINACH and TOMATO SANDWICH

makes one breadless sandwich


2 portobello mushroom caps, cleaned with the stem removed
1 egg
handful of fresh spinach
2 pieces of bacon
8 cherry tomatoes
salt and pepper

Preheat your oven to 400 degrees. Clean the mushroom and spray with cooking spray and sprinkle with salt and pepper. Place on a piece of tin foil or small baking sheet and bake for about 6 minutes or until soft. While the mushrooms are cooking, get a large saute pan warm over medium heat. Spray it with cooking spray. Add the spinach and tomatoes in one corner of the pan. Then add the bacon so it can crisp up, and then the egg. Let everything cook, flipping the egg and bacon after about 3 minutes. Assemble your sandwich.
