3710. EASY SKILLET CORNED BEEF HASH with CABBAGE, SWISS CHEESE and BACON

serves two


1 can (15 ounces) corned beef hash
2 slices bacon
1 medium head savoy or green cabbage, thinly sliced (6-8 cups)
coarse salt and fresh ground pepper
1/2-1 cup fresh shredded Swiss or cheddar cheese
 
Add the corned beef to a cast iron or non-stick skillet and press it down evenly in the pan. Cook on medium heat until crispy on the bottom, then scrap it up with a sharp metal spatula and turn it over, press down and let it cook until crispy again. Repeat up to 2 more times then remove the hash to a small bowl.
 
In the same pan cook the bacon until crispy. Remove to a paper-lined plate to drain.
 
To the same pan over medium heat add the cabbage along with 1/4 cup water. Put a lid on the pan and cook until cabbage is tender about 10 minutes, check every few minutes and stir, if pan dries up add a little bit more water.
 
After 10 minutes remove the lid and let any excess water cook off, stirring the cabbage often. Turn heat down to low.
 
Add the hash back to the pan and stir it into the cabbage. Let cook until heated through. Season with salt and pepper to taste.
 
Sprinkle the cheese over top and put the lid back on until it melts or stick it under the broiler for a minute. Crumble the bacon and sprinkle it over the top to serve.

3624. BACON, SALAMI, and SWEET POTATO HASH

serves 4 


6 slices bacon, diced

2 medium sweet potatoes, chopped into 1-inch cubes
1 teaspoons kosher salt
1 teaspoon ground black pepper
2 tablespoons olive oil
1 medium onion, chopped
1 red bell pepper, chopped
3 cups baby spinach leaves
8 ounces dry salami, casing removed, cut into 1/2-inch cubes
1/2 teaspoon ground nutmeg
Zest of small orange
4 large eggs

Cook bacon in a skillet over medium-high heat, until crisp. Remove the bacon from the pan with a slotted spoon and place on a paper towel. Add sweet potatoes, 1/2 teaspoon salt, and 1/2 teaspoon pepper to the pan. Cook until brown and crisp, about 25 minutes. Remove the potatoes from the pan and place on a paper towel.

Add oil, onion, bell pepper, 1/2 teaspoon salt and 1/2 teaspoon pepper. Cook until the vegetables have softened, about 5 minutes. Add spinach, salami, nutmeg, orange zest. Cook until the spinach is wilted. Add bacon and potatoes, stir to combine.

Make four holes in the hash and break an egg into each. Cook until the eggs are cooked through. To cook faster, place a lid over the pan.

3482. BACON-ROSEMARY-RED BLISS POTATO HASH

yields 4 to 6 servings


2 1/2 pounds red bliss potatoes
Kosher salt and freshly ground black pepper
1 (8-ounce) package bacon, finely chopped
2 tablespoons finely chopped fresh rosemary leaves

Put potatoes in a large pot and cover with water by at least 3 inches. Add salt and bring to a boil over high heat. Reduce heat and simmer potatoes until fork tender, about 25 minutes.

Drain potatoes and return to pot to cool slightly. Roughly smash potatoes in pot with a masher or a large fork.

Heat a large nonstick skillet over high heat. Add the bacon and cook until bacon is crispy and has given up most of its fat. Lower the heat to medium-high, add the rosemary and season with salt and pepper. Make sure bacon and rosemary are evenly distributed in the pan then add the potatoes.

Pat down with a spatula so the potatoes are in an even layer. Season the top of the potatoes with salt and pepper.

Cook until a nice brown crust has formed on the bottom, about 5 to 7 minutes. Use the spatula to flip the potatoes, cook until brown on the other side, about 5 minutes.

3228. SUNCHOKE HASH with BACON

makes one servings


1/2 lb. sunchokes, peeled and diced
1/4 red onion, peeled and sliced
1 tablespoon olive oil
1 red bell pepper, diced (optional)
1/2 cup lightly cooked Brussels sprouts (optional)
2 slices bacon, cooked and crumbled
salt & pepper to taste



Add the olive oil and diced sunchokes to a cast iron pan and cook on medium low heat for about 20 minutes. Add the red onion and either bell pepper, Brussels sprouts or both. Continue cooking for an additional 10 minutes or until the vegetables are tender and lightly golden brown. Toss on the crumbled bacon and a sunny side egg, if you like.

2970. SALAMI, BACON and SPINACH HASH

yields four servings


8 ounces apple-smoked bacon (5 to 6 slices), cut into 1/2-inch pieces
2 medium russet potatoes (about 1 1/2 pounds), peeled and chopped into 1-inch cubes
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 medium onion, chopped
1 red bell pepper, cored, seeded and cut into 1/2-inch pieces
3 cups baby spinach leaves
5 ounces dry salami, peeled and cut into 1/2-inch cubes
1/2 teaspoon ground nutmeg
Zest of 1/2 medium orange
4 large eggs, at room temperature
 
Cook the bacon over medium-high heat in a 12-inch nonstick skillet, stirring occasionally, until crisp, 10 to 12 minutes. Remove the bacon using a slotted spoon and drain on paper towels.

Add the potatoes, 1 teaspoon salt and 1/4 teaspoon pepper to the pan juices. Cook, stirring frequently, until brown and crisp, about 25 minutes. Remove the potatoes using a slotted spoon and drain on paper towels.

Add the oil, onion, bell pepper, 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes. Add the spinach, salami, nutmeg, orange zest, the remaining 1/4 teaspoon of salt and pepper. Cook until the spinach is wilted, about 4 minutes. Stir in the bacon and potatoes.

Make 4 indentations in the hash and break an egg into each. Cook until the eggs are cooked through, 5 to 6 minutes.

2782. BACON and TOMATO HASH

serves one


4 rashers streaky bacon
2 teaspoons garlic-infused oil
1 tomato, diced
2 teaspoons Worcestershire sauce
scattering of chopped parsley (about 2 tablespoons)
ground black pepper

Cut each rasher into three or four pieces, and fry in the garlic oil until crispy (the bacon will also give up flavorsome fat of its own). Remove the bacon bits to a piece of kitchen towel.

Tip the chopped tomato, with all its seeded, gluey interior, into the hot oily pan, which will cause a great spitting and sizzling, and stir for a couple of minutes. Add the Worcestershire sauce and stir again, then put the bacon back into the pan, mixing it into the tomato before transferring to a plate.

Scatter with some parsley and lots of freshly ground pepper, and serve with bread to dip in the oily juices.

2676. TARO and BACON HASH

10 small taro roots, peeled and diced
3 strips thick bacon, diced
1 tablespoon virgin coconut oil
fresh ground pepper to taste

Heat cast iron pan on medium-high heat, add diced bacon and coconut oil, cook until bacon fat begins to render (3-5 minutes). Add diced taro root and cook until taro begins to brown (10-12 minutes). Remove from pan and serve.

2120. SWEET POTATO HASH with BACON and SPICY HOLLANDAISE

makes four servings


8 slices thick-sliced bacon
3 medium sweet potatoes, cut in 1/2-inch pieces
1 medium onion, chopped
salt and ground black pepper
2 to 4 tablespoons pure maple syrup
2 tablespoons cider vinegar
8 eggs
1 cup milk
1/4 cup butter
1 .9-oz. envelope hollandaise sauce mix
1 tablespoon chopped canned chipotle peppers in adobo sauce
fresh chives

In 12-inch skillet cook bacon until crisp; drain on paper towels. Crumble half of bacon. Drain all but 3 tablespoons drippings from skillet. Meanwhile cook sweet potatoes in boiling salted water for 3 minutes or until just tender; drain.

In skillet, cook onion in hot drippings until tender. Add sweet potatoes and cook until potatoes begin to crisp and brown. Season to taste with salt and pepper; transfer to bowl. Stir in crumbled bacon and maple syrup; keep warm.

Rinse skillet and fill half full of water. Add vinegar to water; bring to boiling. Reduce heat to simmer (bubbles should barely break the surface of the water). Break one egg into measuring cup. Holding the lip of the cup as close to the water as possible, slide egg slowly into water. Repeat with remaining eggs, allowing each egg an equal amount of space. Simmer eggs, uncovered, for 3 to 5 minutes or until the whites are completely set and yolks begin to thicken but are not hard. Remove eggs with slotted spoon and place them in large pan of warm water to keep them warm.

In small saucepan, combine milk, butter, and hollandaise sauce mix. Whisk and heat over medium heat until thickened and bubbly. Stir in peppers.

To serve, transfer sweet potato hash to serving plate, top with two poached eggs, and cover eggs with hollandaise. Top with bacon strips and chives.

1469. GRILLED SALMON with BACON and POTATO HASH

makes four servings


GARLICKY VINAIGRETTE
1 tablespoon Dijon mustard
1/2 small shallot, finely chopped
1 small garlic clove, minced
1 tablespoon bottled clam juice
2 tablespoons Champagne vinegar
1/2 tablespoon red wine vinegar
1/4 cup extra-virgin olive oil
salt and freshly ground pepper

CHIVE OIL
1/2 cup chopped chives
1/4 cup canola oil
salt

HASH AND SALMON
1 pound unpeeled small white new potatoes, sliced 1/4-inch thick
3/4 pound thin asparagus
1/2 pound sliced applewood-smoked bacon
1 tablespoon extra-virgin olive oil
3/4 cup chicken stock
3/4 cup bottled clam juice
4 tablespoons unsalted butter
1/4 cup snipped chives
1/4 cup finely chopped fresh dill
salt and freshly ground pepper
four 6-ounce skinless center-cut salmon

MAKE THE GARLICKY VINAIGRETTE: In a blender, combine the mustard, shallot, garlic, clam juice and vinegars and mix until smooth. With the machine on, add the oil in a thin stream and process until emulsified. Season with salt and pepper.

MAKE THE CHIVE OIL: Puree the chives with the canola oil in a blender until smooth. Season with salt.

MAKE THE HASH AND SALMON: Bring 2 medium saucepans of salted water to a boil. In one, cook the potatoes until just tender, about 10 minutes. Drain and cool in a bowl of ice water; drain again and pat dry. In the other, cook the asparagus until crisp-tender, about 3 minutes. Drain and cool under running water, then pat dry. Cut the asparagus into 1/2-inch lengths.

In a large, deep skillet, fry the bacon in 1 teaspoon of the olive oil over high heat until crisp, about 5 minutes. Drain the bacon on paper towels and coarsely chop it. Pour off the fat and wipe out the skillet.

Heat the remaining 2 teaspoons olive oil in the skillet. Add the potatoes and bacon and cook over moderately high heat, stirring, until the potatoes are just beginning to brown in spots, about 6 minutes. Add 1/2 cup each of the chicken stock and clam juice and cook, stirring gently, until most of the liquid is absorbed, about 6 minutes. Stir in the asparagus, butter, chives, dill and the remaining 1/4 cup each of chicken stock and clam juice. Cook until most of the liquid is absorbed, about 5 minutes. Season with salt and pepper and keep warm.

Heat a cast-iron grill pan or skillet. Season the salmon with salt and pepper and grill over high heat until browned on the bottom, about 3 minutes. Turn the salmon and cook until golden and crusty, about 2 minutes longer. Spoon the potato hash onto 4 plates and top with the salmon. Drizzle the garlicky vinaigrette and chive oil all around and serve immediately.

1305. PRINCE EDWARD ISLAND LOBSTER with OYSTER MUSHROOM, ASPARAGUS and BACON FINGERLING POTATO HASH, finished with MAPLE WINE-PEAN SABAYON

serves four


4 1-pound PEI lobsters
12 fingerling potatoes
1 bunch island asparagus
6 shallots, sliced
4 slices bacon, diced
2 bunches oyster mushrooms, torn
2 tablespoons olive oil
2 tablespoons unsalted butter

4 egg yolks, free-range organic
3 tablespoons brown sugar
3 oz Maple Rossignol wine
pinch zested lemon
chopped pecans

NOTE: If you’re not fortunate enough to live in or visit PEI, substitute the Rossignol Wine and brown sugar with 1 oz of Canadian maple syrup and 2 oz of your favourite Canadian white wine.


Fill pot with 2 to 3 inches of salted water and bring to a boil. Add the steamer basket containing lobsters and cover tightly. Cook for 15 minutes, making sure there’s still enough water in the bottom of the pot.

Once cooked, let cool and remove lobster meat from claws, tails, and knuckles. Set aside.

Blanch asparagus tips in boiling salted water for 2 minutes. Place in ice bath.

Slice fingerling potatoes into 1-inch pieces, add potatoes to salted water, bring to a boil, simmer for 1 to 2 minutes and drain.

In a saucepan over medium heat, start with bacon, then sweat mushrooms and shallots.

Add potatoes and olive oil. When bacon is cooked, add asparagus and finish with butter. Season to taste.

Bring a small pot of water to steam over medium heat. Whisk together all ingredients in a stainless-steel bowl until smooth.

Create a double boiler by placing the bowl over steaming water and continue to whisk until sabayon coats the back of a spoon, about 5 to 7 minutes. Add chopped pecans.

Place the lobster meat on a baking sheet, brush with whipped butter, and broil at 375°F until hot.

Place hash in the middle of the plate. Top with warm, butter-brushed lobster meat, and finish with sabayon.

1000. SEARED LANAI VENISON with FOIE GRAS SWEET POTATO and BACON HASH

6 oz. Okinawan sweet potato, medium dice
6 oz. sweet potato, medium dice
6 oz. Yukon gold potato, medium dice
1/2 cup red pepper, medium dice
1/2 cup cup green pepper, medium dice
1/2 cup cup yellow pepper, medium dice
1/2 cup cup Maui onion, medium dice
2 oz. foie gras, medium dice
2 oz. smoked apple bacon, medium dice
olive oil
1 oz. butter

Place all the potatoes into boiling salted water and cook for 4 minutes. Drain and set aside. Heat the oil and better and saut� the peppers, onion and half of the bacon. Add the potatoes and season.


Venison:

4 pieces Strip Loin of Lanai Venison (6 ounces each)
olive oil
seasoning

Season the venison and brush with olive oil. Place on the grill and cook for three minutes. Turn the venison and brush with oil. Cook for another three minutes or until medium rare.


Sauce:

1 cup beef broth
1/2 cup merlot wine
1 oz. smoked apple bacon
2 oz. foie gras
1 oz. butter

Heat a sauce pan until very hot. Add the foie gras and cook for one minute. Take out the foie gras and add it to the potatoes. Add the bacon the hot pan and cook for two minutes. Add the wine and reduce by half then add the broth and again reduce by half. Finish with butter and season.


Place the potatoes in the middle of the plate, next slice the venison in half and present it on top. Spoon the sauce over and around the plate.

727. APPLE, POTATO and SMOKED BACON HASH

serves 6


2 Russet potatoes, peeled
1 Granny Smith apple, peeled, cored and cut into ¼" dice
3 slices smoked bacon, diced
½ cup diced onion
2 tbsp. butter
2 tsp. chopped fresh thyme
½ tsp. dried sage
salt
Fresh ground black pepper
½ cup chicken broth

Cut the peeled potatoes in half. Bring a large pot of water to the boil and add the potatoes. Reduce the heat to a simmer. Cook until the potatoes just become tender but not mushy, about 20 minutes. Drain the potatoes, cover and refrigerate overnight. Note: this allows the starch in the potatoes to "relax" and cool, resulting in a crispy potato when sautéed on day #2.

The next day cut the potatoes into ¼" dice.

In a large non-stick skillet over medium heat, add the diced bacon and sauté until brown and crispy. Drain the bacon on a paper towel. Reserve the bacon fat.

In the same skillet over medium heat, add the butter. Add the potatoes and sauté until crisp and golden, about 15 minutes. Add the diced apple, onion and bacon. Continue to cook and add the thyme, sage, salt, and pepper to taste. Add the chicken broth and stir, scraping up any browned bits on the bottom of the pan. Serve the hash in a large casserole dish.

452. PARSNIP-APPLE HASH with BACON

½ cup diced bacon (about 2 oz.)
3 tablespoons unsalted butter
1 onion, cut into ¼-inch dice (about 1 cup)
2 parsnips, peeled and cut into ½-inch dice (about 2 2/3 cups)
1 apple, peeled, cored and cut into ½-inch dice (about 1 ¼ cups)
1 red bell pepper, seeded and cut into ¼-inch dice (about 1 cup)
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper

Washington State is the number one apple producer in the United States. Pairing apples with parsnips brings out the earthy sugars of these underappreciated root vegetables. This dish is best made just before serving to highlight the contrast of the soft, sweet parsnips with the crunchy, tart apples. In a large saute pan over medium-high heat, brown the bacon until crisp, about 3 minutes. Remove the bacon and set aside, leaving the bacon fat in the pan. Add the butter and onion and cook, stirring, until translucent, about 2 minutes. Add the parsnips and cook, stirring, until soft and golden brown, about 10 minutes. Add the apple, bell pepper, and thyme and continue to cook, stirring, until they caramelize a bit, about 5 minutes. Stir in the reserved bacon, season to taste with salt and pepper, and serve hot.

368. POTATO and BACON HASH with BELL PEPPERS

6 slices of bacon, cut into 1-inch pieces or 1 (1-inch) wide piece of slab bacon cut into lardons
1 onion, cut into small dice
2 teaspoons minced garlic
1 green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
8 potatoes, peeled, chopped into small dice and blanched
Salt and pepper

In a skillet (cast iron if available) cook bacon to render fat. Strain fat from bacon and set aside. Reserve bacon on paper towels. Use 2 tablespoons of bacon drippings to saute onions, garlic and bell peppers until soft. Add potatoes and cook until tender and crispy. Add reserved bacon and season to taste.
