3627. PINEAPPLE-BACON FRIED RICE with PONZU SAUCE

serves two


2 slices of bacon, cut into small pieces
2 eggs, beaten
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
3 green onions, chopped
1/2 cup crushed pineapple
1 cup cooked brown rice
1 tablespoon organic ponzu
salt and freshly ground black pepper to taste
oil

In wok or skillet, fry bacon until crisp, remove to paper towel. Remove all but 1 tablespoon of bacon fat from pan and saute onions, garlic and ginger. Add egg and scramble. Add rice, ponzu and bacon and toss until heated through.

3372. BACON-WRAPPED MANGO PONZU CHICKEN BITES

1 organic chicken breast or thigh, diced into small cubes
4–6 rashers of bacon (depending on size of chicken cubes)
½ mango, sliced into thin slices
1 tablespoon of ponzu sauce
1 teaspoon of sugar
a little vegetable oil for frying
sharp toothpicks

Dice chicken meat into small cubes and leave to marinate in the ponzu sauce and sugar for 20 minutes. Halve the bacon rashers, then take one half and place a mango strip in the middle. Place a chicken piece on top, then roll or wrap both ends of the rasher up and over it, securing with a sharp toothpick. Fry gently in a non-stick pan with a little cooking oil for 5 minutes on each side until bacon is crispy, then remove and place on a paper towel for a few minutes before serving.

3194. BACON-WRAPPED RICE CAKES with a JALAPENO PONZU

6 cylinder-shaped rice cakes, cut in half 
1 tablespoon sesame oil 
6 slices bacon, cut in half 
1 cup soy sauce 
¼ cup seasoned rice wine vinegar
2 tablespoons mirin 
2 tablespoons granulated sugar 
2 oranges, juiced 
2 lemons, juiced 
2 limes, juiced 
2 cloves garlic
1 jalapeño, slit in half, with seeds 
3 jalapeño rings, for garnish 
1 tablespoon chopped chives, for garnish 
1 tablespoon roasted and salted sesame seeds, for garnish 
6 wooden skewers, soaked in cold water for 30 minutes 
 
Drain and drizzle the rice cakes with the sesame oil to prevent them from sticking. In a small stockpot, whisk together all ingredients for the ponzu and bring to a low boil for about 15 minutes. Drain in a cheesecloth or strainer and cool down in an ice bath. Place in a serving sauce dish and garnish with the jalapeño slices. Cover with plastic wrap and refrigerate until serving. To assemble the skewers, take 1 piece of bacon and slice it in half vertically right down the middle. Wrap one half around each rice cake. Spear with a skewer, and repeat with the second half of the bacon to make 2 rice cakes per skewer. Cook each skewer in a nonstick pan over medium-high heat for 4 to 5 minutes per side, or until the bacon is crispy and thoroughly cooked. Transfer the skewers to a serving platter. Garnish with the chives and sesame seeds. Serve immediately with the Jalapeño Ponzu on the side.

2275. PONZU-GLAZED BACON and SHRIMP

serves four


1/2 cup Wanjashan organic ponzu
2 tablespoons agave nectar, honey is good substitute
2 tablespoons chopped chives, save a little for garnish
8 U-15 shrimp, tail-on
8 slices of bacon, thick-cut
1 head radicchio, leaves separated
Togarashi to garnish
Kosher salt and freshly ground black pepper to taste

Pre-heat the oven to high broil and place rack in the upper middle. In a bowl, combine ponzu, agave nectar and chives. Wrap the strip of bacon around each lightly seasoned shrimp. On an oven-proof dish, lay out the radicchio leaves. Dip each shrimp in ponzu-agave mixture and place on bed of radicchio. Drizzle the mixture on exposed radicchio, too. Place in oven, turn shrimp once when browned, about 3 minutes per side. Serve on same dish and garnish with togarashi.

2274. BRUSSELS SPROUTS with BACON, PONZU, FRIED GARLIC and BONITO FLAKES

Brussels sprouts, approx. 4+ heads
1/4 lb bacon
fried garlic
ponzu sauce
soy dashi
butter
olive oil
shichimi or togarashi spice
bonito flakes

Slice garlic and fry in oil until it starts to brown. Cut the Brussels sprouts into quarters, so that the roots stay intact. Boil water in a large pot with some salt. When it’s boiling, put your brussels sprouts in to blanch. When they turn bright green, remove from water and immediately put them in an ice bath. While the brussels sprouts are boiling and sitting in the ice bath, cook up the bacon. Once cooled, crumble. Coat a frying pan in olive oil and put 1 tablespoon of butter in. Toss your brussels sprouts in and turn the heat up to high. Let them brown. Add the bacon. Add in the ponzu and soy dashi (or whatever you’re using). The pan will probably start sizzling when you add them in. Use as much or as little as you like. Let the liquid reduce as much as you want. Top with the shichimi/togarashi, fried garlic, and bonito flakes.

1646. MAINE LOBSTER SALAD with GINGER, DAIKON, BACON and a WARM PONZU DRESSING

makes two servings


1 one & one quarter pound Maine lobster
1 tablespoon extra virgin olive oil
salt & white pepper to taste
1 cup wakame (seaweed salad)
1 2-inch piece fresh ginger
1 small daikon radish
1/2 bunch of cilantro
2 scallions
1 lemon
2 slices of thick bacon
1 teaspoon canola oil

Dressing:
1 1/2 tablespoons soy sauce
1 1/2 tablespoons ponzu (citrus soy sauce)
3 tablespoons mirin
1/4 cup chicken stock
1/4 cup ale
1 large garlic clove, minced
1/4 teaspoon chili pepper, minced (1/8 teaspoon dried red pepper flakes)
stalks from 1/2 bunch of cilantro
1 teaspoon corn starch
1 teaspoon cold water

Fill a large pot with one quart of water and add one tablespoon of salt. Set a steaming rack inside the pot and bring to a rolling boil over high heat. Add live lobster to the pot and cover. After five minutes, lift the lid and shift the lobster so it cooks evenly. Cover again and cook for five more minutes.

Remove lobster from pot and set aside to cool. Once cool, remove meat from lobster. Slice lobster meat into bite size pieces, leaving claw pieces whole. In a mixing bowl, toss lobster meat with olive oil, white pepper and salt to taste. Cover and refrigerate.

Peel ginger and daikon radish. Slice both into one inch long “matchstick” strips. Set aside. Remove leaves from cilantro. Keep stalks for dressing. Slice scallions in 2 inch long pieces, then quarter each piece. Soak sliced scallion in cold water (just enough to cover) and refrigerate.

Using a vegetable peeler, remove peel from lemon, trying to get as little of the white pith as possible. Finely slice peel into long strips.

Slice bacon into small strips. Place in hot pan with canola oil. Fry bacon strips until crispy. Remove from pan and place on paper towels to drain.

In a small pot over medium heat, add soy sauce, ponzu, mirin, chicken stock, and ale. When liquid comes to a boil, turn heat down to low. Mix cornstarch and cold water together, and whisk into pot. Add minced garlic, chili pepper, cilantro stalks and cover. Simmer for 5 minutes and turn off heat. Remove cilantro stalks with a slotted spoon. Season with white pepper and salt if needed. Add ginger matchsticks and cover.

Place lobster in the middle of each plate, making a "mound".

Ladle dressing over lobster, and around lobster to the outer edge of the plate.

Distribute wakame, daikon, cilantro leaves and bacon over dressing.

Drain water from scallions.

Garnish with sliced scallions and lemon peel.
