To puree the pumpkin, simple chop and peel the pumpkin and boil or

up with other ingredients. If you find the pumpkin was a bit wet and the
sheets ripped, use to sheets.

3124. SPUDS, BACON and BEETS
serves 2-3
2 beetroot
2 beetroot
8 new potatoes
4 rashers smoked streaky bacon
groundnut oil, for frying
2 tablespoons grated fresh horseradish
handful mint
Place the beetroot and new potatoes into a steamer for 10 minutes. Cut the bacon into postage stamp-sized shapes and fry in a little groundnut oil until crisp. Add the horseradish into the pan. Peel the skin from the beetroot, then cut into quarters. Add to the bacon pan. Cut the potatoes in half and add to the bacon pan. Add a handful of mint to the pan and stir them into in the bacon oil. Mix together and serve.

3100. BEET ROOT, BACON and SPRING ONIONS
serves 6 with leftovers
900 grams cooked and peeled beetroot
1 bunch spring onions, sliced on the diagonal
100 grams diced streaky bacon rashers
1 teaspoon olive oil
200 ml tub crème fraîche
2-3 tablespoons freshly grated horseradish, or horseradish sauce from a jar
juice ½ lemon
Cut the beetroot into quarters and toss in a serving bowl with the spring onions. Fry the pancetta or bacon in a little oil until just golden. Remove from the heat and immediately tip over the beetroot. At this point the dish can either be served or chilled. If making ahead, remove 1 hr or so ahead of time.
To serve, mix the crème fraîche with the freshly grated horseradish, lemon juice and seasoning. Taste and adjust to be as fiery as you like. Spoon a little of the dressing over the beetroot and serve the rest on the side.

2997. WARM BEET, BIBB and BACON SALAD
makes 4-6 servings
4 beets, peeled, cut into thick wedges
6 thick-cut bacon slices, chopped
1/2 large red onion, thinly sliced
1/2 cup dark beer
1/4 cup balsamic vinegar
1 tablespoon (packed) dark brown sugar
1 teaspoon aniseed
1 large head of Bibb lettuce, coarsely

onion to skillet; sauté 3 minutes. Mix in next 4 ingredients, then
beets. Simmer until dressing coats beets, about 5 minutes. Season with
salt and pepper. Arrange lettuce on platter. Top with beets; sprinkle with bacon.

2918. KALE with ROASTED BEETS and BACON
yields 4 to 6 servings
2 beets (about 14 ounces)

1 tablespoon olive oil
Kosher salt and freshly cracked black pepper
6 thick-cut applewood-smoked bacon slices (8 ounces), diced
1 large bunch kale (about 1 1/2 pounds), washed, stemmed and cut into 1-inch pieces
1/3 cup low-sodium chicken stock
4 tablespoons apple cider vinegar
Kosher salt and freshly cracked black pepper

1 large bunch kale (about 1 1/2 pounds), washed, stemmed and cut into 1-inch pieces

Preheat the oven to 425 degrees F.
Wash and trim the beets, removing both ends. Place them on a 12-inch square sheet of heavy-duty aluminum foil. Drizzle with the olive oil and season generously with salt and pepper. Seal up the foil packet and roast until the beets are fork-tender, about 1 hour.
In a large skillet over medium heat, cook the bacon until medium-crisp (or however you prefer your bacon). Transfer the bacon to a paper towel-lined plate. Increase the heat to high and add the kale, stirring to coat in the rendered bacon grease. Cover and cook for a few minutes, and then add the chicken stock and 2 tablespoons of the vinegar. Stir to combine, cover and allow to wilt for 6 to 8 minutes.

2893. WARM BACON, BURDOCK ROOT and BRUSSELS SPROUTS SALAD with GOLD BEETS and RADICCHIO
3 gold beets
3 cups water
2 tablespoons unsalted butter
8 pieces all natural pork bacon
2 large burdock root
kosher salt
freshly ground pepper
about 1 lb brussels sprouts, or 1 large stalk’s worth, trimmed and halved
1/2 small radicchio, cored, quartered and sliced
Start by trimming the beets and placing in a pot with the 3 cups of water. bring to a boil and then simmer for 15-20 minutes or until tender. when finished, drain, reserving the liquid, and setting the beets aside. Once at room temperature peel off and discard the skins.
Heat butter in a large saute pan, and cook the bacon until just crispy – about 2 to 3 minutes a side over medium heat. While the bacon is cooking, peel the burdock root and chop into small pieces. once the bacon is cooked, remove from the pan and set aside to cool.
With the heat still on medium, add the chopped burdock root to the pan with bacon grease and cook for about 3 minutes or until sides become slightly brown. Add the beet-water and brussels sprouts (cut-side down) with a sprinkling of salt and pepper. Cook for 2 to 3 minutes, then cover and cook an additional 5 minutes. Remove cover, flip the brussels sprouts, stir, then cover again and cook 5 more minutes.
Meanwhile, place the sliced radicchio in a large bowl. Cube the peeled beets and add to the bowl. slice the bacon and add that to the bowl as well.
Remove the cover from the saute pan, flip sprouts once again, and cook (uncovered) for 5 minutes. By this time all the liquid should be absorbed. Click off the heat, and add the sprouts and burdock root to the bacon, beet, and radicchio mix. Toss well, adding salt and pepper to taste.

2747. YELLOWTAIL TARTAR with BACON and TANGERINE DRESSING
yields four servings
Bacon and Tangerine Dressing:
3 tangerines, zested and juiced
1 pound sliced bacon, cut into 1/4-inch strips
Extra-virgin olive oil
1 teaspoon whole-grain mustard
Crostini:
2 tablespoons fennel seeds
1 baguette, sliced into 1/4-inch-thick slices
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
Yellowtail Tartar:
1 pound yellowtail tuna, 1/4-inch dice
1/4 cup fresh flat-leaf parsley, picked and chopped
2 tablespoons capers
1 tablespoon red wine vinegar
1 1/2 teaspoons whole-grain mustard
1 teaspoon chipotle puree
3 scallions, thinly sliced
3 fresh thyme sprigs, leaves picked and finely chopped
1 shallot, brunoised
1/2 lemon, juiced
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
Bull's blood, for garnish
Chervil, for garnish
Special Equipment: 2 1/2-inch ring mold
Note: Bull's blood is a variety of heirloom beet, typically grown and used for its dark purple leaves.
For the bacon and tangerine dressing: Strain the tangerine juice through a mesh strainer into a small saute pan. Bring the juice to a simmer and reduce to a syrup consistency, about 5 minutes. Remove from the heat and let cool.
Heat a large saute pan over medium-high heat. Cook the bacon in a little olive oil until crispy, about 7 minutes. Transfer to paper towels to drain, reserving the fat from the pan in a small bowl.
Whisk together the mustard, 2 tablespoons of reserved bacon fat, the tangerine zest and the tangerine reduction in a small bowl.
For the crostini: Preheat a grill pan over medium-high heat. Toast the fennel seeds in a small saute pan over medium heat until fragrant, about 3 minutes, and then grind in a spice grinder. Brush both sides of the baguette slices with a little olive oil and season generously with salt, black pepper and ground fennel seed. Grill until the bread is toasted, 3 minutes per side. Remove and reserve.
For the tartar: Combine the yellowtail, parsley, capers, vinegar, mustard, chipotle puree, scallions, thyme, shallots, lemon juice and a drizzle of olive oil in a large bowl. Adjust the seasoning with salt and black pepper. Plate with the ring mold.
Drizzle some of the dressing around the plate and garnish with reserved bacon pieces. Dress the bull's blood and chervil with some of the vinaigrette, season with salt and black pepper, and use to garnish the tartar. Serve with the crostini on the side.

2674. SALAD of ROASTED BEET ROOT, BITTER LEAVES, BACON and SPICED YOGHURT
serves four
4-6 medium beetroot, scrubbed well
olive oil
2 lemons
sea salt & freshly ground pepper
2-3 rindless bacon rashers, sliced
3 heaped tablespoons plain yoghurt
a good pinch of ground cumin
a good pinch of ground coriander
1-2 handfuls frisee lettuce leaves (or curly endive)
1-2 radicchio, very finely sliced
Preheat oven to 200°C fan forced (220°C normal). Individually wrap each beetroot in kitchen foil and cook in the oven for about 30-45 mins until tender when pierced with a sharp knife. Cool a little and then peel. Whilst still warm, toss the beetroot with a splash of oil, the juice of ½ lemon and seasonings. Set aside. Heat a little oil in a pan and sauté the bacon until crispy, tossing with a squeeze of lemon juice when ready. Then combine the yoghurt with the cumin, ground coriander and a good squeeze of fresh lemon juice. Toss the lettuces and bacon with any cooking juices and a splash of fresh oil, if needed. Arrange the beetroot in individual bowls or on small plates and mound the leaves on top. Then flick the spiced yoghurt over. Serve as a starter or as an accompaniment to a simple meat dish.

2626. SILVER BEET, POTATO and BACON CHUNKY FRITTATA
serves two
2 large cooked potatoes
4 eggs
4 lean bacon rashers, diced
60 grams feta cheese, crumbled
1 onion, finely diced

1 bunch (about 200 grams) silver beet, stalks removed and finely chopped
Briefly cook the silver beet in the
microwave for 1 minute, or blanch it in boiling water for 2 minutes then
cool under cold water. Slice the potatoes into thick slices. Beat the eggs together and set aside. In a wide-bottomed ovenproof pan, fry
the onion and bacon until soft in a little oil. Add the potatoes to the
pan, toss to combine, then spread the silver beet out over the top of
everything in the pan. Pour the egg mixture over the top of everything
and tip the pan so the mixture is evenly distributed. Cook the frittata over a moderate heat until the egg is set. Sprinkle the feta over the top and place under a hot grill for 5 minutes, until the top is browned and the cheese melted. Serve immediately with your favourite salsa.

2463. STAMPPOT with BEETS and BACON
serves 5-6 as a one-dish meal
4 beets
8 medium potatoes
1 onion, chopped
¼ cup vinegar (optional)
1 tablespoon corn starch
8 slices bacon, chopped
Boil potatoes in a large pot, with their skins on. When they are soft, after approximately 30 minutes, turn off the heat, drain and set aside.
At the same time, boil the beets (skins on) in another pot until they’re soft, approximately 1.5 hours. Reserve about a cup of the beet water.
When cooled, peel the beets and the potatoes. Cube the potatoes and place them back in the large pot. Slice the beets. Heat the reserved beet water, and add the slices to it. Mix the cornstarch into a bit of water or vinegar, and add it to the beet mix.
Meanwhile, sauté onions until golden brown. In a separate saucepan, fry the bacon on medium-low until crispy, and reserve the bacon grease. Pour the beet slurry over cubed potatoes, and mash. Add the sautéed onions, stirring over a bit of heat until heated through.
Serve in individual bowls, sprinkle with reserved bacon and drizzle with bacon grease.

2323. BEET, BACON and HERBED GOAT CHEESE FLATBREAD
yields 1 flatbread
1 red beet or 2 to 3 baby beets
1 yellow beet or 2 to 3 baby beets
1/2 cup goat cheese
1 tablespoon fresh rosemary leaves, chopped
1 tablespoon fresh thyme leaves, chopped
pizza dough
flour
olive oil, for brushing
1/4 cup arugula
2 tablespoons fresh lemon juice
salt and freshly cracked black pepper
1/4 pound bacon (4 slices), cooked crisp
Preheat the oven to 400 degrees F.
Wrap the beets in aluminum foil and roast in the oven until the beets are tender and a paring knife inserted in the center is met with no resistance, 45 minutes to 1 hour. Once cooked, set aside until they are cool enough to handle. Then, using a paper towel, rub the skin off the beets and then cut into moons or dice.
Mix the goat cheese with the rosemary and thyme until combined and set aside.
Gather up the rest of the ingredients and have them at the ready before you grill your bread.
Preheat a cast-iron grill pan, or a grill, to medium-high heat. Turn the dough out onto a floured work surface and stretch and press with your hands to form a thin, rectangular shape. If you need to, pick up the dough and let the natural weight of the dough stretch itself out. It doesn't need to be perfect,matter of fact it is better when it's not. Once you have the dough in the shape you like, brush one side of the dough with olive oil and lay that side down flat onto the preheated grill. Cook the dough until it is charred and has a crisp texture, about 5 minutes, brush the other side with some oil and then flip the dough and char the second side. Once the bread is charred and cooked, remove it from the grill and assemble the flatbread.
Spread the herbed goat cheese onto the flatbread. Toss the arugula with some lemon juice, olive oil, salt and pepper and then place it on the flatbread. Top with sliced beets and crispy bacon and another drizzle of olive oil. Cut the flatbread and serve.

Wrap the beets in aluminum foil and roast in the oven until the beets are tender and a paring knife inserted in the center is met with no resistance, 45 minutes to 1 hour. Once cooked, set aside until they are cool enough to handle. Then, using a paper towel, rub the skin off the beets and then cut into moons or dice.
Mix the goat cheese with the rosemary and thyme until combined and set aside.
Gather up the rest of the ingredients and have them at the ready before you grill your bread.
Preheat a cast-iron grill pan, or a grill, to medium-high heat. Turn the dough out onto a floured work surface and stretch and press with your hands to form a thin, rectangular shape. If you need to, pick up the dough and let the natural weight of the dough stretch itself out. It doesn't need to be perfect,matter of fact it is better when it's not. Once you have the dough in the shape you like, brush one side of the dough with olive oil and lay that side down flat onto the preheated grill. Cook the dough until it is charred and has a crisp texture, about 5 minutes, brush the other side with some oil and then flip the dough and char the second side. Once the bread is charred and cooked, remove it from the grill and assemble the flatbread.
Spread the herbed goat cheese onto the flatbread. Toss the arugula with some lemon juice, olive oil, salt and pepper and then place it on the flatbread. Top with sliced beets and crispy bacon and another drizzle of olive oil. Cut the flatbread and serve.

2166. ARCTIC CHAR with BACON, BEETS, WHITEFISH CAVIAR and NEW POTATO SALAD
serves four
16 small new potatoes, boiled, cooled, and cut in quarters
1/2 cup sour cream
1 tablespoon fresh dill, chopped
8 strips boar bacon or regular bacon, chopped
1/3 cup all-purpose flour
2 skinless Arctic char fillets (each 6 oz) cut in half crosswise
6 tablespoons finely chopped pickled beets

2117. SHAD ROE with BEETS, BACON and BALSAMIC
serves four
4 medium red beets
4 medium golden beets
1 fennel bulb, sliced
2 cloves garlic
1 apple, quartered
6 sprigs fresh thyme
2 fresh bay leaves
1/2 cup plus 3 tablespoons extra-virgin olive oil
1/2 cup all-purpose flour
coarse salt and freshly ground pepper
4 pieces shad roe
8 slices thick-cut applewood smoked bacon
3 tablespoons unsalted butter
sea salt, for serving
1/4 cup assorted coarsely chopped herbs, such as parsley, tarragon, and chives
1 cup frisee
1/4 cup balsamic vinegar
Place each variety of beet in a separate saucepan; divide fennel slices, garlic, apple pieces, 4 sprigs of thyme, bay leaves, and 2 tablespoons salt evenly between saucepans. Add enough water to each saucepan to cover contents by 4 inches. Place each saucepan over high heat and bring to a boil; immediately reduce heat to a simmer and cook until beets are easily pierced with the tip of a knife, 25 to 35 minutes. Drain and discard all contents except for beets.
Peel and quarter beets. Transfer each variety to its own bowl. Toss each with 2 tablespoons olive oil and season with salt and pepper; set aside.
Place flour in a shallow dish and season with salt. Add shad roe and gently toss to coat, shaking off excess. Transfer to a plate and set aside.
Place bacon slices in a large nonstick skillet and cook over medium heat until bacon is crisp and fat has been rendered. Remove bacon from skillet and set aside. Remove all but 3 tablespoons bacon fat and discard. Add 3 tablespoons olive oil, shad roe, and remaining 2 sprigs thyme to skillet. Cook for 1 minute and turn; add butter and continue cooking until shad roe reaches an internal temperature of 135 degrees on an instant read thermometer, 1 to 2 minutes more. Remove from heat and set aside.
To serve, divide beets, bacon, and frisee evenly between 4 plates. Place shad roe on each plate and sprinkle with sea salt and chopped herbs. Drizzle with remaining 1/4 cup olive oil and balsamic vinegar before serving.

1628. BACON-WRAPPED BLACK COD, ROASTED with BABY BEETS and MICRO GREENS with BEET BEURRE BLANC
yields four entree-size servings
4 bunches assorted baby beets (about golf ball size)
1/4 cup olive oil, plus 1 tablespoon and 1 teaspoon
sea salt and freshly ground black pepper
3 large red beets
3 shallots, minced
1/4 cup white wine
1/4 cup champagne vinegar
8 ounces butter, cut into small pieces plus 1 tablespoon
ground white pepper
4 (6-ounce) pieces black cod
16 to 20 pieces thinly sliced bacon
2 cups micro arugula
Preheat oven to 375 degrees F.
Scrub the beets, trim the stems and cut off the tails. Place in a baking dish lined with aluminum foil. Toss the beets with 1/4 cup of the olive oil, 1 teaspoon salt and 1/2 teaspoon black pepper and add about a 1/4-inch of water. Cover the baking dish and bake until the beets are tender, 25 to 30 minutes. Remove from the oven and set aside, covered, to cool. Peel the beets by gently rubbing the skin off of the beet with a paper towel. Slice the beets into very thin rounds or wedges. Set aside until ready to serve the fish.
Peel the 3 large red beets and cut them into wedges. Place the beets in a medium saucepan, cover with water and add 1 teaspoon salt. Bring to a boil, reduce heat and simmer until tender about 10 to 15 minutes. Set aside let cool. Puree the beets with 1/2 cup of the cooking liquid. Strain slowly through a fine mesh sieve. Transfer the liquid to a small pan and reduce to 1/4 cup.
Make the beurre blanc in a small pan by combining the shallots with the white wine and the champagne vinegar. Cook until the liquid is almost completely reduced, about 10 minutes. Add 2 tablespoons of the beet reduction. Whisk 8 ounces of butter, little by little, making sure to completely incorporate each addition before adding more. Season the sauce with salt and ground white pepper, to taste, and set aside to keep warm while you prepare the fish. Do not allow sauce to boil or it will separate.
Wrap each piece of cod with about 4 slices of bacon, overlapping the edges slightly, until the entire piece of fish is covered with bacon. Ideally, the edges of the bacon will meet on the skin side of the fish. Place the wrapped fillets on a sheet pan and bake at 375 degrees F for 20 minutes.
In a small bowl, season the micro greens with 1 tablespoon plus 1 teaspoon of olive oil, a pinch of sea salt and ground black pepper.
When ready to serve the fish, heat the beets in a small saucepan with the remaining 1 tablespoon of butter and just enough water to submerge them. Season the beet slices lightly with salt and pepper and serve the beets on the side of the fish.
Serve the cod immediately with the warm beets, beurre blanc and the micro green salad.

631. SALMON and GOLDEN BEET SALAD with CRISP BACON
serves 4
8 small golden beets (about 10 ounces)
3 tablespoons extra-virgin olive oil
1/4 teaspoon coarse salt
4 slices bacon (about 21/4 ounces), sliced crosswise into thin strips
1/2 lemon, sliced into 4 rounds
4 salmon fillets (6 ounces each)
1 shallot, finely chopped
1 1/2 tablespoons white-wine vinegar
1 pound baby spinach
Freshly ground pepper
Preheat oven to 350°. On a piece of aluminum foil, toss beets with 1 tablespoon oil and the salt; wrap beets in foil to make a packet. Cook until beets are easily pierced with a fork, about 35 minutes. Let cool; peel beets, and slice into 1/4-inch-thick rounds.
Cook bacon on another baking sheet until crisp, about 10 minutes. Transfer to a paper-towel–lined plate; let drain.
Place lemon slices and 6 cups water in a large saucepan; bring to a boil. Reduce heat; add salmon, and cook at a bare simmer until flaky, about 12 minutes. Transfer fish to a plate; let cool.
Make dressing: In a small bowl, whisk together shallot, vinegar, and remaining 2 tablespoons oil until emulsified.
Place spinach and beets in a bowl. Add dressing and some bacon; season with pepper. Toss to combine. Divide among plates; top each with a salmon fillet. Garnish with remaining bacon.

318. WARM SALAD with SPINACH, BEETS, BACON and SHERRY VINEGAR DRESSING
makes 4 to 6 servings as a starter or salad course
2 medium size red beets (about 6 to 8 ounces each)
1 1/2 pounds of spinach leaves, stems removed
4 ounces thinly sliced bacon
1 small (6 ounces) Spanish onion, thinly sliced
3 tablespoons canola or grape seed oil
3 tablespoons sherry wine vinegar
Kosher or sea salt
Freshly ground pepper
Place the whole beets in a pot and cover with water. Add salt to the water and cook the beets for about 40 minutes or until they are tender. Add water during the cooking when necessary. Rinse the cooked beets under cold water. Peel, then cut in half. Slice the halves about 1/3-inch thick so that they are shaped like half-moons.
Pick the stems from the spinach. Wash and drain very well. Check for ladybugs.
Cut the bacon slices crosswise into 1-inch pieces. In the sauté pan on medium heat, cook bacon until crisp. Remove the bacon from the pan and place on a plate lined with paper towels to absorb the grease. Pour off half of the fat from the pan and return it to the stove.
Add the onions and cook until they begin to become translucent, don't over cook (about 1 minute).
Next, add the oil and vinegar along with the beets. Cook gently until the beets are very warm. Season with salt and pepper. Remove the onions and beets with a slotted spoon, leaving the dressing in the pan.
Add the spinach and toss continuously using the tongs. When the spinach is slightly wilted, divide it on plates and put the warm onions and beets on top of the spinach. Sprinkle each plate with the crisp bacon and serve at once.
