3672. DUTCH APPLE BABY with BLACKBERRY HOISIN BACON

serves six


1 lb thick slice bacon
2 large apples
4 tablespoons granulated sugar divided
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/3 cup unsalted butter
3/4 cup flour
1/2 package salt
1/4 teaspoon ground nutmeg
1 cup milk
1/2 teaspoon vanilla extract
5 large eggs
1 cup blackberry jam
1/4 cup hoisin sauce
2 tablespoons coarse ground mustard
powdered sugar garnish
maple or blackberry syrup
 
For the bacon: Preheat oven 500ºF. Place 10 slice bacon on a parchment lined baking sheet lengthwise, pull bacon to stretch about half its original length (this helps with shrinkage during the cooking process) don't allow bacon to go over sheet pan edges In a small bowl add, mustard, blackberry jam, hoisin sauce, and 2 tablespoon brown sugar, stir to combine. Spoon about 1 teaspoon of jam mixture over each piece of bacon, using a basting brush spread the jam mixture to coat the entire side of bacon, flip bacon over and repeat this process. To cook, cover the bacon with an additional sheet/baking pan laying the bottom of the pan directly on top of the bacon. Place pans in oven and par-cook bacon for 5-6 minutes or until hot and bubbling but not browned. Remove from oven and set aside until ready to use. Reduce oven heat to 400ºF. Brown remaining bacon slices and crumble for garnish.
 
For the batter: Peel and core apples, cut them into slices then slice into halves and thirds (about 3 cups apples) In a small mixing bowl combine 3 tablespoon sugar with cinnamon and ginger, set aside until ready to use. Cut butter into chunks and place in a deep cast iron skillet. Put the skillet into the oven for 3-4 minutes or until the butter is melted and skillet is hot. Remove skillet from oven, sprinkle bottom of pan with about 1/3 brown sugar mixture. Carefully spread apples over the bottom of the skillet and sprinkle remaining sugar over apples. Put skillet back into the oven, cook for 5-8 minutes to caramelize apples (you should be able to complete the next step while apples are caramelizing)
 
Whisk flour with remaining tablespoon sugar, salt and nutmeg. Gradually add milk, whisking constantly to avoid lumps. When flour batter is smooth, beat in vanilla and eggs one by one. Beat by hand for approximately 2 minutes. Let batter rest for 5 minutes. Remove apples from the oven
 
Add one strip of bacon to the bottom of the skillet at a time trying not to overlap the pieces, arrange in a star or spoke pattern so that when sliced each piece will have a slice of bacon cooked into the batter. It may be necessary to cut bacon to fit skillet. Try not to go over the edge of the skillet to keep bacon from becoming too darkened while cooking. Pour batter over bacon and caramelized apples, bake in the 400º oven for 20 minutes or center is set and sides are golden brown. The pancake will puff dramatically while baking but fall within a few minutes after baking. Slice pancake into 6 pieces, sprinkle with powder sugar, bacon bites and serve with blackberry or maple syrup.

3204. MUTTON and BACON POTJIE (SOUTH AFRICAN STEW)

serves six


1 kg neck of mutton (cut into pieces)
250 grams rindless bacon (chopped)
30 ml butter or margarine
2 medium onions (thinly sliced)
10 ml barbecue spice
salt & pepper to taste
300 ml dry white wine
150 ml water
3 large carrots (peeled and sliced)
5 medium potatoes (peeled and halved)
50 ml Worcestershire sauce
150 grams dried peaches or apricots (soaked in water for 1 hour and drained)
250 grams courgettes (sliced)
200 grams whole button mushrooms

Sauce
200 ml fresh milk
100 ml fresh cream
30 ml apricot jam
30 ml cornflour

Heat the pot and melt the butter in it. Fry the onions until tender remove and set aside. Fry bacon until crisp, remove and set aside. Season the meat with salt, pepper and spices and brown lightly on both sides. Mix the wine, water and Worcestershire sauce and add just enough to cover the meat. Cover and simmer gently for 1 and half hours. Add dried peaches or apricot, carrots, bacon and onions replace the lid and simmer for 15 minutes. Arrange the potatoes, courgettes and mushrooms in layers on top. Cover and simmer for further 15 minutes. Add the remaining liquid, replace the lid and simmer for approximately 1 hour. Mix the milk, cream and jam with cornflour. Simmer for 20 minutes.

3182. BACON-LINGONBERRY GOUGERES

makes 4 dozen


1 cup sifted flour
1/4 teaspoon curry powder 
1 teaspoon salt  
6 tablespoons salted butter 
5 large eggs  
1/4 cup cooked and chopped bacon 
1 cup grated cheddar cheese  
3 tablespoons lingonberry jam 
 
Preheat the oven to 425 degrees. In a bowl, combine the sifted flour, curry powder, and salt. Place the butter and one cup of water in a medium saucepan, and bring to a simmer. Once the butter melts, remove the saucepan from the heat, then add the all of the flour-curry powder mixture, stirring with a wooden spoon. Return the saucepan to the stovetop on medium heat for about one minute, stirring continuously until the dough stops sticking to the pot. Transfer the dough to a food processor and turn it on. Add 4 of the eggs to the dough, one a time and adding only once each egg has been completely incorporated. Add the bacon, cheddar, and lingonberry jam, and pulse to blend. Line on large baking sheet with parchment. Drop the dough onto the baking sheet in 1-inch mounds, leaving 2 inches of space in between them. Beat the remaining egg and brush on the tops of the dough mounds. Bake until the pastries are puffed and lightly browned, about 15 minutes, then reduce the heat to 350 degrees and bake until well browned, about 10 more minutes. Shut the oven off and open the oven door a few inches. Leave the gougeres in the oven for another 15 minutes before removing them. Serve immediately.

3027. RHUBARB BACON JAM

400 grams good-quality bacon, chopped into lardons
200 grams fresh rhubarb, finely chopped
200 grams of onion, finely chopped
4 garlic cloves, minced
1/2 cup packed brown sugar
1/2 cup strong espresso
1/4 cup maple syrup
1/2 cup cider vinegar
1-2 tablespoon(s) grainy mustard

Fry bacon over medium-high heat until crisp, but not overdone(fat will be rendered); transfer to paper towel-lined plate. Drain fat, if you have too much; add rhubarb and onions to bacon fat and sauté until onions are translucent and rhubarb begins to soften (no more than 5 minutes). Add garlic and sauté 30 seconds; stir in brown sugar, espresso, syrup, vinegar, and add bacon back into the pan; bring to a simmering boil and cook, uncovered 30 to 45 minutes until reduced to a thick jam-like texture. Add grainy mustard to taste (complement the flavour balance with the mustard, as needed: start small). Store in jar(s) in the fridge or freezer and use as desired: great hot, or cold.

2920. BACON and JAM MINI MONKEY BREADS

yields six rolls


4 tablespoons butter, divided and at room temperature
½ cup plum or apricot jam or marmalade
1 tablespoon light Karo syrup
¼ teaspoon ground ginger
2 tablespoons cream
12 frozen dough balls
½ cup chopped pecans or walnuts
4 slices cooked bacon, crumbled
 
Butter a 6 cup muffin tin with 2 tablespoons of butter. Place 2 frozen dough balls into each cup. Set aside.
 
In a small saucepan, melt remaining butter over medium heat. Add jam or marmalade, Karo syrup and ginger and cook for 3 minutes or until flavors are blended. Add cream and cook for an additional 1-2 minutes. Remove from heat and spoon evenly over dough balls. Top with chopped nuts and crumbled bacon.
 
Cover with plastic wrap and allow to rise at room temperature until doubled in height or for about 5 hours.
 
Bake at 350 degrees for 20 minutes. Cool and remove from pan and serve.

2759. CHERRY COKE BRAISED BACON

2-3 lbs slab of smoked bacon with skin
3 tablespoons cherry jam
1/4 cups dried cherries
1 vanilla bean split in half lengthwise
15 whole cloves
2 liter bottle of Coke
1 Granny Smith apple, peeled and sliced
1 small head of cabbage, cored and shredded

Put the bacon in a large bowl and cover with water. Put it in the fridge overnight to reduce the amount of salt. Put the rack in the lower position and preheat your oven to 275 degrees. Place the bacon into a heavy pot that it will fit snugly into (you may want to cut it into 2-3 smaller pieces). Add the jam, vanilla, cloves, and cherries and pour enough Coke over to cover the pork. Bring it to a boil over the stove, cover and put it in the oven until the meat is fork tender (about 3 1/2 to 4 hours). Remove the bacon from the braising liquid and place it skin-side up on a rack over a baking sheet and tent with foil. Skim off the fat from the braising liquid and strain half of it into a sauce pan. Boil this until it is a nice syrupy sauce. Put the cabbage and apples into the other half and simmer until both are tender about 30-40 minutes. When you’re ready to serve, move the rack to the middle position and heat the oven to 450 degrees. Uncover the bacon and put it in the oven for about 15 minutes or until the the skin is nice and crispy. Serve immediately with reduced braising liquid drizzled on top along with some of the braised cabbage and apples.

2233. WILD BOAR RAGOUT with BACON DUMPLINGS

serves four


Wild Boar Ragout:
600 grams wild boar leg
250 grams onions
200 ml red wine
150 ml sunflower oil
50 ml hazelnut oil
10 grams juniper berries
20 grams sugar
5 grams cardamom whole
10 grams cinnamon sticks
150 grams frozen cranberries
15 grams fresh thyme
100 grams rose hip jam
salt, to taste

Bacon Dumplings:
200 grams bacon
300 grams flour (hruba mouka)
200 ml milk
250 grams white bread
100 grams onions
30 grams chopped parsley
30 grams butter
salt, pepper, nutmeg to taste

Wild Boar Ragout: Clean the meat and cut in cubes. Heat the casserole and add sunflower oil and hazelnut oil. Sauté the meat until it becomes very brown, then take out. Add sliced onions and all the spices, and sauté until golden. Deglaze the pan with red wine and water. Add the meat back and cook until soft. When ragout is ready, add frozen cranberries and rose hip jam.

Bacon Dumplings: Slice the white bread in small cubes and let dry over night. Slice bacon and onions in small cubes and sauté in same pan. Combine the bread with egg yolk, warm milk, flour, onions with bacon and chopped parsley. Season with salt, pepper, and nutmeg. After all this, slowly mix a whipped egg white inside the mixture.

Brush a cake form with butter or lay out with baking paper, and place the mixture inside and bake at 140°C for 20 minutes. When slightly cooled, slice and serve with the ragout.

2211. SWEDISH POTATO PANCAKES with BACON, LINGONBERRY JAM and CARROTS

makes six servings


1 cup flour
1 teaspoon salt
1 1/4 cup milk
1 egg
1 3/4 lb firm potatoes
16 oz salted bacon
lingonberry jam
fresh carrots

Whip together the flour and salt. Slowly add in the milk. Once mixed, add the egg. Peel the potatoes and shred. Add to the milk/flour mixture and mix well. Slice (if needed) and cook the bacon until desired crispiness. Add some butter to a pan and scoop in 1/4 cup of the potato dough. Flatten it out over the pan. Cook a few minutes, and then flip when the underside is golden brown. Serve the warm pancakes with bacon, lingonberry jam, and fresh carrots.

1601. BACON JAM

2 pounds bacon, preferably smoked and cured
4 small to medium yellow onions, julienned
smoked paprika, or sweet Hungarian
freshly ground celery seed
freshly ground cumin
freshly ground black pepper
1-3 tablespoons apple cider vinegar
1/3 cup maple syrup

Cut bacon into quarter length strips. Place in dutch oven or heavy deep skillet, and render on the lowest heat possible until bacon is browned but not too crisp. Stir occasionally. About 1 hour.

Remove bacon with slotted spoon, reserve in bowl.

Place onions in bacon grease on lowest flame. Stirring every 15 minutes, keep going low and slow until onions are caramelized most of the way through and very sweet. About 3 to 5 hours.

When you are getting close to removing the onions, add paprika, ground celery seed and ground cumin to pot, to taste. About a healthy pinch or three of each. Freshly crack some black pepper to taste, then remove onions with slotted spoon (taking some bacon grease with you), and place into a blender.

Place reserved bacon into blender along with a tablespoon or three of apple cider vinegar, and about a 1/3 cup of real maple syrup. Blitz in blender until a rough puree forms. Keep it rustic unless you want a fine smooth texture.

Taste, adjust syrup, salt, and other seasonings to taste.
