3980. CURRY CARROT SOUP with CANDIED DOUBLE SMOKED BACON GARNISH

Serves up 8.


Curry Carrot Soup
2 tbsp butter
1 med size sweet onions cut in chunks
½ cup celery preferably the heart with leaves cut in chunks
5 pound peeled carrots cut in chunks
2 bay leaves
1 tbsp dijon
1 cup white wine
1 tbsp coarse sea salt
1 tbsp pepper
2 tbsp curry powder
4 cups vegetable stock
water (just to cover vegetables)
2 cups 35% cream

Candied Double Smoked Bacon
2 oz. minced red onions
1 pound bacon
¼ cup maple syrup

Curry Carrot Soup 

In a medium size pot melt the butter and sauté the onions and celery for 3 to 4 minutes; deglaze with white wine.

Add the carrots, vegetable stock, bay leafs, Dijon, salt, pepper, curry powder and add water to cover vegetables.

Bring to a boil; then simmer all ingredients till soft. Approximately 45 minutes.

Remove 2 bay leafs.

Puree in a blender till smooth consistency and finish with the cream.

Candied Double Smoked Bacon

Cut 1 pound bacon in lardon; ½ inch squares and sauté them in a frying pan on high heat; let sit till they start to brown then turn on all four sides.

Place the cooked lardon on paper towel to absorb the grease, wipe your pan dry then bring the bacon back to the pan.

Once they start to heat up again pour ¼ cup maple syrup and bring to a boil; then let reduce slowly so it coats each peace.

Let cool on parchment paper. Use as a garnish for the soup.

3979. SPINACH SALAD with MUSTARD CURRY VINAIGRETTE and BACON

1 – 10 Oz. Package Washed Baby Spinach
1 Recipe Candied Pecans (recipe below)
1 Recipe Mustard Curry Vinaigrette (recipe below)
12 Strips Bacon

Fry the bacon until crisp and lay it out on a paper towel. Pat the excess fat with more paper towels. Keep in a warm place until ready to serve.

Place the spinach attractively and evenly onto salad bowls. Top the salad with salad dressing, to taste. Sprinkle the candied pecans evenly over the salads. Cross two pieces of warm bacon on top of each of the salads. Serve while bacon is still warm.

CANDIED PECANS
1 Cup Pecan Halves
¼ Cup Brown Sugar
1 tsp. Butter

Heat the brown sugar and butter until it is very hot and starts to bubble. Add in the pecans. Shake and toss the pecans in the sugar mixture until coated evenly and most of the mixture has disappeared. Pour the nuts onto a buttered piece of parchment. Separate the nuts with a spoon while they are still very hot.

MUSTARD CURRY VINAIGRETTE
1 tsp. Dry Mustard
2 tsp. Dijon Style Mustard
1 Tbsp. Honey
1 Tbsp. Water
1 Tbsp. Madras Curry Powder
⅓ Cup Red Wine Vinegar
⅔ Cup Olive Oil

Whisk together the dry mustard, dijon mustard, honey, curry powder and water. Whisk the red wine into the mixture. Whisk the olive oil into the mixture.

3867. CURRIED SPLIT PEA SOUP with FRIED PANEER and BACON

Serves: 6


5 pieces thick cut bacon, chopped into 1 inch pieces
1½ yellow onions, chopped
3 garlic cloves, chopped
pinch of red pepper flakes
1½ cups green split peas
5-6 cups vegetable broth
½ cup coconut milk
1 tablespoon curry powder
1 tablespoons olive oil
6 ounces paneer, cut into 1-2 inch pieces
Kosher salt
chopped chives for garnish

In a heavy bottomed pot, cook bacon until it's nicely browned and fat has rendered. Remove bacon bits from pot and transfer to paper-towel lined plate. Set aside.

Add onion, garlic, and red pepper flakes to bacon fat. Cook until translucent, then stir in split peas. Mix to coat, then add 5 cups vegetable broth.

Bring mixture to a boil, reduce heat, and cover. Cook for 30-50 minutes, until split peas are tender. Remove from heat. Add in coconut milk and curry powder.

Using a food processor or immersion blender, puree soup until completely smooth. Add additional vegetable broth if soup is too thick.

In a small skillet, heat olive oil over medium heat. Add paneer cubes and salt generously. Cook until browned (they'll start to pop) and then flip to other side. Brown on remaining side.

Serve soup with fried paneer, bacon bits, and chives on top.

3849. SRIRACHA DEVILED EGGS with CRUMBLED BACON

Makes 12, ½ egg servings


½ dozen large eggs
3-4 tablespoons mayonnaise
½ tablespoon Sriracha sauce
1⁄4 cup chopped chives
1 teaspoons curry powder
2 strips bacon, cooked and crumbled

In a large pot or sauté pan, cover the eggs with cold water and bring to a boil. Remove the pot from the heat, cover, and let sit for exactly 14 minutes. Plunge the eggs into a bowl of ice water to cool Gently tap the eggs with the back of a spoon and let the eggs sit in water for a couple hours or overnight to help loosen the shell. When ready to serve remove the shell.

Using a slightly moistened thin, sharp knife, cut the eggs in half lengthwise.

Remove the egg yolks into a medium bowl and mash with a fork. Stir in the mayonnaise, Sriracha, curry powder and 3 tablespoons of the chives, mixing until very smooth.

Transfer the yolk mixture to a pastry bag fitted with a star or plain tip, or a zip-top bag (with the corner cut off). Set the egg whites on a serving platter and pipe in the filling.

Just before serving, sprinkle the deviled eggs with bacon crumbles and remaining chives.

3769. BOMBAY BACON CURRY

Serves 4


200 g (7 oz) sweet cured unsmoked back bacon rashers
15 ml (1 tbsp) oil
1 onion, sliced
2 cloves garlic, crushed
30 ml (2 tbsp) medium curry powder
30 ml (2 tbsp) ground cumin
1 courgette, thickly sliced
¼ (about 200 g) cauliflower, cut into small florets
2 potatoes, skin on and cut into small cubes
100 ml water
2 x (approx) 400 g can chopped tomatoes
30 ml (2 tbsp) fresh coriander, roughly chopped
2 large handfuls baby spinach

Place oil in large saucepan and heat, add the bacon, onion and garlic and cook for 1-2 minutes. Add the curry powder and cumin, combine well together. Then add the courgette, cauliflower, potatoes and water. Stir well.

Next, add the tomatoes and bring to the boil, cover with lid and simmer for about 15-20 minutes until the potatoes are soft.

Just before serving, stir through the coriander and spinach and serve with warmed chapattis and a side order of chopped fresh tomato, red onion and coriander mixed together and drizzled with a little flavoured oil.

3766. WHELK FRITTERS with BACON

serves 8–10


10-12 whelks
1 celery stick, roughly chopped
1 carrot, roughly chopped
1 bay leaf
3-4 rashers fatty bacon, diced
1 onion, chopped
2 medium eggs, separated
2 garlic cloves, very finely chopped
1 tablespoon parsley, chopped
½ teaspoon thyme leaves
a good pinch curry powder
40 grams fresh breadcrumbs
salt
freshly ground black pepper
sunflower oil or olive oil, for frying

Scrub the whelks under the cold tap. As you handle them, you may find that some of them release a certain amount of slime (don’t worry about this, just rinse it away). Put the cleaned whelks in a large pan, cover with cold water and add the celery, carrot and bay leaf. Bring to boiling point and cook at a gentle simmer for 8–10 minutes. Drain, discard the vegetables and leave the whelks to cool.

Extract the cooked whelks from their shells, using a fork to twirl them out. Remove the coarse cap or ‘trap door’ (like a black fingernail) from the front end and the dark digestive sac from the tail end. Roughly chop the whelks.

Gently cook the bacon in a frying pan until it releases its fat and is lightly cooked. Add the onion to the pan and fry until soft, then set aside to cool.

Put the egg yolks into a bowl and lightly break them up with a fork. Stir in the chopped whelks, bacon and onion, garlic, parsley, thyme, curry powder, breadcrumbs and salt and pepper to taste.

In a separate bowl, whisk the egg whites until they form soft peaks. Gently fold them into the whelk mixture. Form the mixture into even-sized patties, around 5 cm in diameter.

Pour a 1 cm depth of oil into a large frying pan and set over a medium-high heat. When hot, add the patties (be careful, as they can spit ferociously) and fry for 3–4 minutes per side, until crisp and golden. Serve the fritters hot from the pan, with a little lemony mayonnaise dabbed on top if you like.

3600. BREAKFAST BANH MI with BACON and CURRY AIOLI

makes four sandwiches


1 1/2 cups shredded or thinly sliced daikon radish
1 1/2 cups shredded or thinly sliced carrots
2 tablespoons granulated sugar
1 teaspoon kosher salt
3/4 cup mayo
2 tablespoons hot curry powder (more or less to taste)
1 whole wheat baguette, cut into 4-equal pieces and then cut in half lengthwise
1 large cucumber, cut in half and then sliced thin
8 slices of fully-cooked bacon
4-8 eggs, cooked to your liking
salt and black pepper
1 jalapeno pepper, sliced
1/2 cup cilantro leaves

In a medium bowl, toss together the daikon radish, carrots, sugar and salt. Set aside at room temperature to pickle for 20-30 minutes. In a small bowl, whisk together the mayo and curry powder. Set aside. Taking each piece of baguette, spread on a layer of the curry aioli. Line each roll with cucumber, bacon, pickled veggies, and 1-2 eggs per sandwich. Sprinkle with salt and black pepper to taste. Place sliced jalapeno on top and sprinkle of cilantro leaves. Serve the sandwiches immediately and enjoy!

3581. STIR-FRIED PASTA with ORANGE, BACON and CURRY

serves four


3 tablespoons olive oil
3 tablespoons finely chopped garlic
1 tablespoon finely chopped fresh root ginger
1 small onion, peeled, chopped
2 tablespoons finely grated orange zest
6 bacon rashers, chopped
2 red peppers, seeds removed, cut into ½in pieces
2 yellow peppers, seeds removed, cut into ½in pieces
2 teaspoons sugar
10½fl oz chicken stock
1 x 14oz can chopped tomatoes
3 tablespoons Madras curry paste
2 tablespoons tomato purée
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 lb. dried Italian pasta, such as farfalle, cooked according to packet instructions, drained

To serve
1 handful chopped fresh basil leaves
1 handful chopped fresh chives

Heat the oil in a lidded wok (or saucepan) over a high heat until smoking. Add the garlic, ginger, onion and orange zest and stir-fry for 1-2 minutes.

Add the chopped bacon and stir-fry for 3-4 minutes, or until the vegetables have softened and the bacon is golden-brown.

Add the red and yellow peppers, sugar, stock, chopped tomatoes, curry paste and tomato purée, then season, to taste, with salt and freshly ground black pepper. Stir well.

Reduce the heat until the mixture is simmering, then cover the wok with a lid and continue to simmer for 30 minutes, or until the sauce is thick and the peppers are tender.

Add the drained pasta to the sauce and mix well until coated and warmed through.

To serve, divide the stir-fried pasta equally among four serving plates and sprinkle over the chopped basil and chives.

3580. BACON CANDY and CURRIED CASHEWS

feeds four as a snack


6 slices applewood-smoked bacon, diced
2 tablespoons sugar
1 cup cashews
2 teaspoons Madras curry powder
1/4 teaspoon cayenne pepper
pinch each of salt and freshly ground pepper

Preheat the oven to 350F.

Heat a large skillet over medium heat. Add the diced bacon and cook for 5 to 6 minutes, until most of the fat has been rendered and the bacon has started to get crispy. Drain off all but about a tablespoon of the bacon fat into a small bowl; reserve.

Add the sugar to the skillet and cook, stirring, for 2 to 3 minutes, until it has coated the bacon and the bacon starts to look shiny. Add the cashews, curry powder, cayenne, salt and black pepper and toss together to coat the nuts. If they seem a little dry, add another teaspoon of bacon fat and toss to coat.

Spread the nuts out on a baking sheet lined with parchment paper. Bake for 12 minutes, or until lightly toasted. Let cool to room temperature. Store in an airtight container at room temperature for up to a week.

3182. BACON-LINGONBERRY GOUGERES

makes 4 dozen


1 cup sifted flour
1/4 teaspoon curry powder 
1 teaspoon salt  
6 tablespoons salted butter 
5 large eggs  
1/4 cup cooked and chopped bacon 
1 cup grated cheddar cheese  
3 tablespoons lingonberry jam 
 
Preheat the oven to 425 degrees. In a bowl, combine the sifted flour, curry powder, and salt. Place the butter and one cup of water in a medium saucepan, and bring to a simmer. Once the butter melts, remove the saucepan from the heat, then add the all of the flour-curry powder mixture, stirring with a wooden spoon. Return the saucepan to the stovetop on medium heat for about one minute, stirring continuously until the dough stops sticking to the pot. Transfer the dough to a food processor and turn it on. Add 4 of the eggs to the dough, one a time and adding only once each egg has been completely incorporated. Add the bacon, cheddar, and lingonberry jam, and pulse to blend. Line on large baking sheet with parchment. Drop the dough onto the baking sheet in 1-inch mounds, leaving 2 inches of space in between them. Beat the remaining egg and brush on the tops of the dough mounds. Bake until the pastries are puffed and lightly browned, about 15 minutes, then reduce the heat to 350 degrees and bake until well browned, about 10 more minutes. Shut the oven off and open the oven door a few inches. Leave the gougeres in the oven for another 15 minutes before removing them. Serve immediately.

2899. POTATO, BACON and PEA CURRY

serves three 


3 potatoes, peeled and cut into 1-inch cubes
2 teaspoons olive oil
6 slices bacon, finely chopped
1 shallot, finely sliced
2 small sweet bell peppers (or 1 regular bell pepper), thinly sliced
½ cup mushrooms, thinly sliced
3 cloves garlic, minced
15 grape tomatoes, quartered
1½ teaspoons curry powder
½ teaspoon ground turmeric
¼ teaspoon ground ginger
¼ teaspoon ground coriander
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
⅛ teaspoon red pepper flakes
¾ cup of frozen peas, cooked according to package directions
1 tablespoon red or green curry paste
¼ cup vegetable stock

First, get your potatoes ready. Peel and cube them into 1-inch pieces, then place in a pot and cover with water. Bring it to a boil, then boil for 8-10 minutes, until tender. When ready, drain the water from the potatoes and run them under cold water so that they stop cooking. Set them aside until you’re ready to use them.

Heat 2 teaspoons of olive oil in your pot over medium-high heat. Cook the bacon until crispy, about 5-8 minutes, then remove from the pan and set aside to drain on paper towels. Remove all but 1 tablespoon of fat from the pot.

Add the shallot and bell pepper and saute until they are softened and beginning to caramelize over medium heat, about 8-10 minutes. Add in the mushrooms and cook until browned and softened, about 5 minutes. Add in the garlic and tomatoes, stir, and cook for another 2-3 minutes, until the garlic is fragrant and the tomatoes have begun to soften. Add in the combined curry powder, turmeric, ginger, coriander, salt, pepper, and red pepper flakes, and stir. Add the cooked potatoes, the cooked peas, and the crispy bacon, if you’re using it. Stir everything together and add in the curry paste and ¼ cup of vegetable stock. When most of the vegetable stock has simmered away, taste, adjust seasonings as necessary, and serve.

2787. BACON-BRAISED GOOSE in HONEY MUSTARD SAUCE

1-2 strips of bacon
goose breasts

Honey Mustard Sauce:
1 cup honey
1/2 cup prepared mustard
1/2 cup butter (or margarine)
2 teaspoons salt
2 teaspoons curry powder

Combine the ingredients in a small cooking pot and heat over low to medium heat, stirring continuously until all the ingredients are thoroughly mixed together. The honey mustard sauce will later be poured over the goose prior to baking. Save any leftover sauce in the refrigerator for the next batch of duck or goose. 

Braise the Goose Breasts: Cook one or two strips of bacon in a cast iron frying pan. Remove the strips and place the goose breasts in the bacon grease on medium to high heat, braising both sides of the breast for 2 to 3 minutes on each side until golden brown. The bacon grease adds a mouth-watering smoky flavor to the goose that really makes the meat "pop". For a healthy heart version of the recipe use olive oil in lieu of bacon grease.

Place the browned breasts into the bottom of a baking dish and cover halfway with the honey sauce. Cook covered at 375 degrees for 15 to 20 minutes or until goose is medium rare to medium. Slice the breast across the grain and drizzle with honey mustard sauce from the bottom of the cooking dish. This goes great with wild rice and steamed carrots, beans, or broccoli.

2178. SPLIT PEA SOUP with CURRY and BACON

serves six


1 (16-ounce) bag of green split peas
2 tablespoons extra virgin olive oil
2 carrots, chopped into 1/4-inch rounds
1 medium-sized white onion, chopped finely (about 1 cup)
2 large cloves of garlic, minced
3 pieces of uncured nitrate/nitrite-free bacon, coarsely chopped
1 dried bay leaf
3 cups of chicken stock (see note below)
3 cups of water
1 and 1/4 teaspoon curry powder
1 teaspoon sea salt

Place split peas in a small stockpot and cover with filtered water. Simmer for 25 minutes or until soft. Drain and set aside.

In a large stockpot, heat oil over medium heat. Cook onion, carrot and bacon for seven minutes on medium heat until softened and bacon is fragrant. Add garlic and stir for a minute or so. Add salt and curry and allow to fry for a minute, stirring occasionally.

Add in water, stock, peas, and bay leaf. Bring to a simmer for 15 minutes.

Remove bay leaf. Puree with an immersion blender or in batches in a food processor.

Check seasoning and add more salt if necessary. I usually add another quarter to half teaspoon at this point.

2084. PIG'S LIVER CREME CARAMEL with ROASTED GRAPES and CRISPY BACON

yields eight servings


CARAMEL:
75 grams sugar
50 grams maple syrup
15 grams cabernet sauvignon vinegar

Place the sugar into a pot and bring it to a light caramel. Remove from the heat and add the maple syrup and vinegar. While still warm, lightly brush the insides of ramekins with the caramel mixture.


PIG LIVER MOUSSE:
100 grams cream
50 grams milk
3 grams kombu seaweed
1/2 tablespoon soy sauce
1/4 teaspoon curry spice
1/4 teaspoon Chinese Five-spice powder
1 grams dried shiitake mushroom
40 grams pig liver
1 egg

In a food processor puree the livers. Add eggs and pulse to combine. (Do not run at high speed or it will get frothy). Over medium heat combine cream, milk, kombu, dried shiitakes, soy sauce, and spices and bring mixture to a boil. Remove from heat. Combine the egg/liver puree with the cream mixture and pass through a fine chinoise. Pour the custard into caramel lined ramekins. Place the ramekins into a bain marie, cover with foil, and bake at 325 degrees for about 10-12 minutes (the middle should be wobbly). Remove from the bain marie and allow to come to room temperature.


ROASTED CALIFORNIA GRAPES:
75 grams California seedless red grapes
8 grams extra virgin olive oil
pinch of Maldon salt
1 bay leaf
1 cinnamon stick
1 inch piece of rosemary
a few grinds pepper
8 grams cabernet sauvignon vinegar
8 grams maple syrup

Place grapes, olive oil, cinnamon, bay leaf, rosemary, salt and pepper in a saute pan and place over medium-high heat. Cook, stirring occasionally, until the grapes brown and blister. Add the vinegar and the maple syrup and remove from the heat. Allow to cool to room temperature.


To Serve:
a few sprigs of watercress
truffle oil
pancetta - fried until crispy
brioche - sliced and toasted

To unmold the creme caramels, give them a little jiggle back and forth to loosen them within the ramekin. Place a plate over the top of the ramekin and flip it over, allowing the creme caramel to fall onto the plate. Add a little bit of flourish (and herbaceous goodness) with a few watercress sprigs and drizzle with truffle oil, and spoon some grapes around the mousse. Place a crispy piece of bacon next to the creme caramel and serve with toasted bread.

1981. LIGHT LETTUCE CREAM, BACON FOAM, BRAISED LETTUCE and ESCARGOTS

yields four servings

Light cream
2 nice 600 g (1 1/3 lb.) heads of lettuce
2/3 oz. white onion
2/3 oz. leek, white part only
22/3 oz. smoked pork rind
1 bouquet garni
2 cups light chicken stock
1 clove of garlic
4 tsp. butter
1 cup crème fraîche
salt

Smoked bacon foam
8 tsp. liquid cream
1/3 oz. finely diced smoked bacon
a pinch of curry powder, salt and pepper

Braised lettuce ribs and leaves
Use the ribs and a few leaves from the light cream ingredients
4 tsp. butter
2/3 oz. carrot, in very small dice
3/4 cup light chicken stock
a pinch of chopped parsley
a clove of garlic, peeled and a few thyme flowers
2/3 oz. smoked bacon simmered for 30 minutes with onion, clove and bouquet garni

Escargots (you may substitute chicken "oysters")
20 small snails cooked in court-bouillon
4 tsp. butter
1 shallot, finely chopped
a pinch of chopped parsley
a touch of garlic
a pinch of fine breadcrumbs
a drizzle of lemon juice
1 drop of pastis
a pinch of Madras curry powder

Fried leek
3 oz. leek (white part), julienned
4 cups grapeseed oil for frying
a blend of salt and curry powder
4 sprigs of chervil

Light cream: In a high-sided saucepan, sweat the onions, leek white, garlic, bacon rind and bouquet garni in foaming butter. Finally, add the well-washed lettuce, having set aside the ribs and tender green leaves. Add the hot chicken stock and salt lightly. Cook quickly for 15 minutes, then add the cream and cook 5 minutes longer. Finally, add a few nice green leaves to the cream and blend at high speed for 6-8 minutes to obtain a light green color. Keep hot.

Smoked bacon foam: Bring the 30 g cream to a boil with the finely diced smoked bacon, curry, salt and pepper. Cook for 6-8 minutes and blend everything to obtain a bacon and curry-flavored cream. Let rest. Once cooled, add in 10 g (1/3 oz.) whipped cream. Set aside.

Braised lettuce ribs and leaves: In a sauté pan, sauté in butter the finely diced carrot with the cooked smoked bacon, garlic and thyme flowers; add the lettuce ribs and chicken stock and cook, covered, for a few minutes. Finally, add the tender green leaves and chopped parsley. Set aside.

Escargots: In a sauté pan, sauté the well-drained snails in butter, add the chopped shallot and cook for 3-4 minutes. Deglaze with a drop of pastis and a squeeze of lemon juice. Finally, add a touch of garlic, a little chopped parsley and a sprinkling of bread crumbs, salt, pepper and Madras curry powder. Set aside.

Fried leeks: Heat the oil to 140° C (280° F). Fry the thinly sliced leeks for a few minutes, stirring constantly. Drain on paper towels. Season with salt, pepper and curry. Keep hot.

Presentation: In wide-rimmed bowls, place a 6 cm (2 1/2") metal ring. Place the braised lettuce ribs and leaves inside. On top, place the snails in a circle around the perimeter of the ring. Drizzle the cream around the outside of the ring. Top with the bacon foam. Place the fried leeks on the snails and add a few sprigs of chervil. Remove the ring and serve immediately.

1899. CURRIED RICE, BACON and CABBAGE PILAF

makes 6 to 8 side-dish servings


4 bacon slices, chopped
6 tablespoons (3/4 stick) butter, diced, divided
1 large onion, chopped
2 garlic cloves, chopped
1 tablespoon minced peeled fresh ginger
1 1/2 cups long-grain white rice
1 tablespoon curry powder
1/2 teaspoon salt
2 3/4 cups low-salt chicken broth

3 cups chopped green cabbage
1 cup chopped seeded plum tomatoes
1 cup chopped green onions

Cook bacon in large skillet over medium-high heat until crisp. Using slotted spoon, transfer to paper towels. Add 4 tablespoons butter to drippings in skillet; melt. Add onion, garlic, and ginger. Sauté over medium-high heat 5 minutes. Add rice, curry powder, and 1/2 teaspoon salt. Stir 1 minute. Add broth; bring to boil. Reduce heat to medium. Stir, cover, and simmer until broth is absorbed, about 15 minutes.

Meanwhile, melt remaining butter in large pot over medium-high heat. Add cabbage; sauté 3 minutes. Mix in tomatoes and green onions. Season with salt and pepper. Stir rice mixture into cabbage.

1816. BACON CURRY COLESLAW

1/2 cup mayonnaise or salad dressing
2 tablespoons vinegar
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon curry powder
6 cups shredded cabbage, chilled
5 to 6 slices bacon, crisp-cooked and crumbled

Combine mayonnaise, vinegar, sugar, salt, curry powder, and dash freshly ground black pepper. Chill. Combine cabbage and bacon. Toss dressing lightly with cabbage mixture.

1800. CURRIED BANANAS wrapped in BACON

serves one


2 bananas, peeled and cut into 4 pieces
1 teaspoon mild curry powder
3 slices sweet cured bacon, stretched and cut into 2 pieces
olive oil, to drizzle

Sprinkle the banana pieces with the curry powder. Wrap each banana piece in a slice of bacon and secure with a cocktail stick. Drizzle with oil and place in a frying pan over a high heat for 2-3 minutes, until the bacon is cooked and golden. Transfer to a plate and serve immediately.

1758. LENTIL and SWEET POTATO SOUP with BACON and CILANTRO

makes six to eight servings


5 thick slices applewood smoked bacon, cut into 1/2-inch strips
1 large yellow onion (or 2 small), diced
2 large carrots, diced
3 medium sized sweet potatoes, peeled and diced
2 cups French lentils (lentils de puy)
8 cups chicken stock
1 teaspoon Madras Curry powder (or other yellow curry powder)
2 tablespoons sherry vinegar
salt & pepper
1 large handful of cilantro leaves

Set a very large pot over medium-low heat and cook the bacon until the fat renders and it begins to crisp. Remove with a slotted spoon and reserve the bacon. Add the onions and carrots to the pot and cook in the bacon fat until soft – about 10 minutes.

Add the sweet potatoes, lentils, chicken stock and curry powder and bring to a simmer. Reduce the heat to medium-low or low and cook for 30 – 40 minutes, or until the potatoes and lentils are tender. To thicken soup, mash the soup with a potato masher (or ricer) about 15 times. (This is optional.)

Add the sherry vinegar and taste the soup. Add salt and pepper as needed. Ladle into bowl and sprinkle with bacon bits and fresh cilantro leaves.

1615. BACON-WRAPPED DUCK LIVER with WATER CHESTNUTS and SCALLION

serves eight


1½ pounds duck liver, cut into 1-ounce pieces and soaked in milk for 10 minutes
12 slices smoked bacon, cut in half and cooked half done
12 whole water chestnuts (fresh, if available), cut in half
24 scallions, white parts only, cut into 1½-inch segments
8 wooden skewers, soaked in water for 30 minutes if char grilling
½ cup soy sauce
2 tablespoons brown sugar
2 garlic cloves, minced
½ teaspoon grated ginger
½ teaspoon Madras curry powder
¼ teaspoon cayenne (optional)
½ teaspoon dark sesame oil
1 scallion, minced
¼ cup minced scallion greens, for garnish

Place a piece of duck liver on top of a section of bacon. Top with half a water chestnut. Wrap the bundle tightly with the bacon and place on a skewer.

Skewer a scallion portion and repeat until 3 bundles are in place. Repeat to make 8 skewers, each with 3 rumaki bundles. Place the skewers in a resealable plastic bag.

Combine the soy sauce, brown sugar, garlic, ginger, curry powder, cayenne, if using, sesame oil, and scallion and mix well to blend. Pour the marinade over the skewers in the bag and marinate at least 4 hours, refrigerated.

Drain and reserve the marinade. Place the skewers on a parchment-lined baking sheet.

Bake at 375°F [190°C] for 12 to 15 minutes, turning halfway through the cooking process, or until done. The bacon should be crisp and the liver cooked medium.

While the skewers are baking, heat the marinade to a boil and reduce the volume by half. Reserve.

Garnish with the minced scallion greens and serve the skewers hot, 1 skewer per person, brushed with the reduced marinade.
