3594. BOILED PEANUT HUMMUS with COUNTRY BACON and FETA CHEESE

yields four servings


Hummus:
2 cups shelled boiled peanuts
4 tablespoons fresh lemon juice
4 tablespoons tahini
1 tablespoon chopped fresh parsley
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 small clove fresh garlic
4 tablespoons good-quality olive oil, plus more for drizzling
Kosher salt and fresh cracked pepper, as needed
1/4 cup cooked bacon, chopped fine, for garnish
1/4 cup crumbled feta cheese, for garnish

Toast:
1 loaf kalamata olive bread or baguette, thinly sliced
Olive oil, for drizzling
1/4 cup finely grated Parmesan

For the hummus: Set the peanuts on a baking sheet lined with paper towels and allow to air dry for 30 minutes.

Transfer to a clean kitchen towel and roll the peanuts around while applying light pressure with the palm of your hand. This will remove some of the skins off of the peanuts.

Place the peanuts, lemon juice, tahini, parsley, coriander, cumin, paprika and garlic in a food processor. Process for 1 minute and then, with the motor still running, slowly drizzle in the olive oil. The hummus should have a smooth, loosely spreadable consistency. Adjust with a tablespoon of hot water if needed. Season with salt and pepper and transfer to your serving bowl of choice. Garnish with a drizzle of olive oil, the crumbled bacon and feta cheese.

For the toast: Preheat the oven to 350 degrees F. Lay your thinly sliced bread pieces on a baking sheet. Drizzle with olive oil and sprinkle with the Parmesan. Bake until golden brown and fully crisped, 5 to 8 minutes. Serve alongside your delicious hummus.

3132. BACON FALAFEL BITES with HUMMUS

yields 24 bites
 
 
One 15.5-ounce can chickpeas, drained and rinsed 
1/4 cup extra-virgin olive oil 
3 tablespoons fresh lemon juice 
3 tablespoons tahini 
2 cloves garlic, finely grated
Kosher salt and freshly ground black pepper 
6 slices bacon
 
One 10-ounce package falafel mix, such as Casbah 
Canola oil, for frying 
3 small heads Boston Bibb lettuce, leaves separated (about 24 leaves total) 
3 Roma tomatoes, thinly sliced 
1 English cucumber, halved lengthwise and thinly sliced
Aleppo pepper, for garnish 
 
Position a rack in the top third of the oven and preheat to 350 degrees F.

Put the chickpeas, olive oil, lemon juice, tahini, garlic and 1/3 cup water in the bowl of a food processor. Blend until completely smooth and slightly fluffy, 2 to 3 minutes. Season with salt and black pepper. Place in a small bowl, cover with plastic wrap and refrigerate until ready to use.

Put the bacon slices on a rack set over a baking sheet. Bake until golden brown and crispy, 20 to 25 minutes. Allow to cool slightly, and then crumble or cut with a knife into bite-size pieces.

Prepare the falafel mix according to the package directions, adding the bacon to the mixture. Using a leveled tablespoon as a measure, form the mixture into small balls, about 24 total. Place the formed falafel balls onto a baking sheet.

Fill a large skillet with 1/2 inch canola oil and heat until a deep-fry thermometer inserted in the oil registers 350 degrees F. In batches, fry the falafel balls until golden brown all over, 1 to 2 minutes total per batch. Use tongs or a slotted spoon to transfer the cooked falafel balls to a paper-towel lined plate to absorb any excess oil. Sprinkle liberally with kosher salt.

To assemble, place 2 to 3 slices of both tomato and cucumber down the center of each lettuce leaf. Top with a falafel ball. Drizzle with some hummus and garnish with a sprinkle of Aleppo pepper.

2841. BACON SCALLION HUMMUS

yields two cups


4 slices bacon
1 (15-oz.) can chickpeas, drained and rinsed
1/3 cup tahini
2 tablespoons fresh lemon juice
2 garlic cloves, chopped
1/4 cup water
2 tablespoons chopped scallions (green and white parts), plus additional for garnish
1/4 teaspoon black pepper
1 teaspoon salt

Cook the bacon in a large skillet over medium heat. Transfer the bacon to paper towels to drain and reserve bacon drippings in a small bowl. In the bowl of a food processor, pulse together chickpeas, tahini, 1 tablespoon reserved bacon fat, lemon juice and chopped garlic, scraping down the sides and pulsing just until smooth. Add the water, 3 slices of chopped bacon and 2 tablespoons chopped scallions. Pulse it a few more times until combined, and then season with salt and pepper. Transfer the hummus to a serving dish and garnish with remaining chopped bacon and additional chopped scallions.

2718. BACON and ARTICHOKE HUMMUS

serves eight


1/2 pound bacon, small diced and cooked until crisp
2 cups chick peas, drained
1 cup marinated artichoke hearts, drained
4 cloves garlic
Juice of 2 lemons
1 teaspoon cumin
1 teaspoon kosher salt
1/2 teaspoon pepper
Olive oil

Combine all of the ingredients except the bacon and oil in the bowl of a food processor. While food processor is running, slowly add olive oil until the ingredients have a creamy consistency. Pour into a serving bowl and fold in the bacon. Add additional salt and pepper as needed.

2366. BLACK BEAN and BACON HUMMUS

yields 12 servings


1 15.5 ounce can black beans, drained
3 cloves garlic, peeled and crushed
4 slices crisp cooked bacon, crumbled
the juice of 1 large or 2 small limes
2 tablespoons sour cream
3 to 4 tablespoons extra virgin olive oil
1/2 teaspoon powdered cumin
1/2 teaspoon sweet Hungarian paprika
salt and pepper to taste

Place black beans in a food processor and blend to a thick puree. Add olive oil, almost all of the bacon, cilantro, lime juice, garlic, cumin and paprika, and blend thoroughly. Add sour cream to lighten the mixture and blend until combined, scraping the sides of the bowl often. Add salt and pepper to taste (taste often, you might prefer a little more paprika or cumin.)

Serve garnished with a little olive oil, a sprinkling of bacon and some chopped cilantro.

545. PORK, PROSCUITTO and BACON MEATLOAF with CHICKPEAS

serves 8

Four 1-inch-thick slices of Italian bread, crusts removed, bread soaked in 1 cup of milk and squeezed dry
4 ounces sliced bacon
4 ounces sliced prosciutto
1 medium onion, thinly sliced
2 garlic cloves, very finely chopped
4 oil-packed sun-dried tomatoes
1 roasted red pepper from a jar
2 large eggs
2 tablespoons chopped flat-leaf parsley
1 teaspoon chopped thyme
1 teaspoon crushed red pepper
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
2 1/2 pounds lean ground pork
1 tablespoon extra-virgin olive oil, plus more for brushing
1 cup tomato puree
1 cup chicken stock or low-sodium broth
1/2 cup prepared plain hummus

Preheat the oven to 350°. In a food processor, pulse the bread, bacon and prosciutto. Add the onion, garlic, sun-dried tomatoes, roasted pepper and eggs; process to a paste. Pulse in the parsley, thyme, crushed red pepper, oregano and 1 teaspoon each of salt and pepper. Transfer to a bowl and knead in the pork.

Preheat the broiler. Pat the mixture into two 8-inch-long loaves. In a large nonstick roasting pan, heat the 1 tablespoon of oil. Transfer the loaves to the pan and cook over moderate heat until the bottoms are browned, 6 minutes. Brush the tops with oil and broil until slightly browned, 8 minutes. Lower the oven to 350°.

In a cup, combine the tomato puree, stock and hummus. Pour the mixture into the roasting pan and cook for 30 minutes, or until an instant-read thermometer inserted into the center of one of the loaves registers 180°. Light the broiler.

Spoon some of the sauce over the loaves and broil for 5 minutes, until browned. Transfer to a platter and serve with the gravy.
