3252. FRIED RICE with KOREAN BURDOCK ROOTS and BACON (우엉볶음밥)

makes 2-3 servings


1½-2 cups cooked rice, cold
½ small size onion, diced
½ carrot, diced
2 celery sticks, diced
¼ lb. braised Korean burdock roots (recipe below)
2 strips fresh bacon, diced
sesame seed oil
salt to taste
soy sauce to taste
1 tablespoon toasted sesame seeds 

Korean burdock roots
2 roots of Korean burdock
6 tablespoons soy sauce
4 tablespoons Korean rice syrup (substitute: 4 tablespoons honey or Oligo syrup)
5 tablespoons water
grape seed oil
                  
Take a medium bowl and fill it with 2 cups of water. Add 1 tablespoon vinegar. Wash thoroughly the burdock roots and cut each into 4 sticks lengthwise. With a paring knife, peel off each burdock stick and place it in the bowl to prevent browning. Cut each burdock stick into two to three lengthwise; cut each short stick into very thin slices, then cut slices into thin shreds. Soak strips in the above vinegared water for 10 minutes to remove the astringency and to prevent browning. Drain well. Place a large frying pan over medium heat and pour enough grape seed oil to generously coat the pan. Add and fry the burdock strips for about five minutes, stirring frequently. Add in 6 tablespoons soy sauce and 5 tablespoons water and stir. Cook for about 10 minutes, stirring occasionally until the moisture almost disappears. Add in 4 tablespoons rice syrup and combine well. Remove from heat and let cool.

In a large skillet, sauté the diced fresh bacon over medium until golden brown. Add the diced onion, carrot, celery sticks until tender but still crunchy and crispy. Add a little oil to the skillet, and then the rice and diced burdock roots. Gently mix with a wooden spoon to combine. Turn the heat to low and add salt and/or soy sauce to taste. You might add a little more sesame oil if you prefer. Sprinkle with sesame seeds and serve while hot.

2893. WARM BACON, BURDOCK ROOT and BRUSSELS SPROUTS SALAD with GOLD BEETS and RADICCHIO

3 gold beets
3 cups water
2 tablespoons unsalted butter
8 pieces all natural pork bacon
2 large burdock root
kosher salt
freshly ground pepper
about 1 lb brussels sprouts, or 1 large stalk’s worth, trimmed and halved
1/2 small radicchio, cored, quartered and sliced

Start by trimming the beets and placing in a pot with the 3 cups of water. bring to a boil and then simmer for 15-20 minutes or until tender. when finished, drain, reserving the liquid, and setting the beets aside. Once at room temperature peel off and discard the skins.

Heat butter in a large saute pan, and cook the bacon until just crispy – about 2 to 3 minutes a side over medium heat. While the bacon is cooking, peel the burdock root and chop into small pieces. once the bacon is cooked, remove from the pan and set aside to cool.

With the heat still on medium, add the chopped burdock root to the pan with bacon grease and cook for about 3 minutes or until sides become slightly brown. Add the beet-water and brussels sprouts (cut-side down) with a sprinkling of salt and pepper. Cook for 2 to 3 minutes, then cover and cook an additional 5 minutes. Remove cover, flip the brussels sprouts, stir, then cover again and cook 5 more minutes.

Meanwhile, place the sliced radicchio in a large bowl. Cube the peeled beets and add to the bowl. slice the bacon and add that to the bowl as well.

Remove the cover from the saute pan, flip sprouts once again, and cook (uncovered) for 5 minutes. By this time all the liquid should be absorbed. Click off the heat, and add the sprouts and burdock root to the bacon, beet, and radicchio mix. Toss well, adding salt and pepper to taste.

1451. BACON and BURDOCK TAKIKOMI GOHAN (SEASONED RICE)

serves two


1 cup sticky rice, preferably Korean or Japanese
1.2 cup water
2 bacon strips, cut into 1/3 inch pieces
1/2 tablespoon soy sauce
10 inch burdock, thinly sliced (if thick, use less)
1 scallion, chopped
ground black pepper to taste

Heat a small skillet and fry the bacon till the excess fat seeps out but before the bacon becomes too crispy. Rinse the rice gently in cold water and place it in a small pot with 1.2 cup of cold water. Add soy sauce, fried bacon and burdock in the pot. Cook over medium to low heat until the pot starts to bubble. (The lid should start to "dance" due to the vapor pressure.) Turn the heat down to low, and cook for about 15 minutes until all the water is spent. Let the rice rest for five minutes before opening the lid. (This lets the rice absorb any excess moisture and prevents sogginess.) Mix in (or sprinkle with) the chopped scallion and ground black pepper.

1226. GRILLED BACON and BURDOCK

serves two people


1 half burdock
2 piece of broccoli
8 slices of bacon
1 half of an onion
salt and freshly ground pepper
1 tablespoon of tomato ketchup
1 tablespoon of BBQ sauce

Cut the burdock and put them in the bowl and boil it for a while. Roll the burdock up by the bacon. Stab it on a skewer. Grill with sliced onion and butter. Brush with 1 1/2 cup mixture of water, ketchup, and BBQ sauce. Grill for 15 minutes. Season with salt and pepper to taste.
