3385. CALVES LIVER with BACON, SAUTEED ONIONS, and MUSTARD SAUCE

yields six servings


12 ounces bacon, slab or sliced, in 1 by 1/4 inch pieces
10 tablespoons (1 stick plus 2 tablespoons) unsalted butter, cold
6 tablespoons minced shallots
1/2 teaspoon salt
3/4 cup red wine vinegar
3/4 cup brown veal stock or chicken stock
1/4 cup stoneground mustard
6 (8ounce) slices calf's liver, trimmed of all sinew and cut into 1/2 inch slices
Salt and freshly ground black pepper, to taste
1 tablespoon unsalted butter
 
Sauteed onions:
6 tablespoons (3/4 stick) unsalted butter
3 small onions, thinly sliced across width
1/2 teaspoon salt

Fry bacon until crisp. Drain on paper towels and reserve.

Melt 4 tablespoons butter in a medium skillet over moderate heat. Cook shallots with salt until soft and nearly golden, about 3 minutes. Add cooked bacon, stirring briefly to rewarm. Add vinegar, turn the heat to high and reduce by half. Add stock and reduce again by half. Break remaining butter into small pieces and whisk into sauce until smooth. Whisk in mustard and remove from heat.

Preheat grill or a dry skillet. Season liver with salt and pepper. Grill or saute in melted butter over high heat, about 3 minutes per side.

Arrange liver over a bed of Sauteed onions on individual serving plates and spoon on sauce. Serve immediately.

Sauteed onions: Melt butter in a large skillet over high heat. Reduce heat. Saute onions with salt, stirring occasionally, until golden brown, about 15 minutes.

calf's livers grilled with bacon and sage on skewers

serves four


1 lb. calf's liver
6 slices bacon, cut in 2-inch pieces
fresh sage leaves
1/3 cup butter
1 medium onion, chopped
salt and pepper

Slice the liver into 2-inch long pieces, 1/4 inch thick. Thread on small metal or wooden skewers, alternating with pieces of bacon and a sage leaf. Melt the butter in a large heavy skillet. Add onion and brown for 3 minutes, then add the skewered liver. Saute until brown on each side, for about 3-4 minutes. Season with salt and pepper and serve immediately. If fresh sage is not available, 1/2 teaspoon dried sage may be added to the butter.

2249. PORTUGUESE LIVER with BACON and ONIONS

1 large onion, cut in rings
1/2 cup dry red wine
1 tablespoon red wine vinegar
1/4 teaspoon salt
dash of pepper
3 cloves garlic, finely chopped
2 bay leaves, crumbled
1 pound calf liver, sliced 1/4 to 1/2-inch thick
1 tablespoon olive oil
4 slices bacon, cut into 1-inch pieces
minced parsley

Mix wine, vinegar, salt, pepper, garlic and bay leaves; pour over liver in shallow glass or plastic dish. Cover and refrigerate 1 hour. Drain liver; strain. Reserve wine mixture. Pat liver dry. Heat oil in 12-inch skillet until hot. Fry onions until translucent and set to one side. Fry bacon in oil over medium heat until crisp; remove with slotted spoon and drain. Cook liver in oil and bacon fat until brown, about 4 minutes on each side. Arrange liver on platter; keep warm. Drain fat from skillet. Add reserved wine mixture to skillet. Heat to boiling, stirring constantly to loosen browned bits; reduce heat. Add the onions. Simmer uncovered until liquid is reduced to about 1/4 cup. Pour sauce over liver; sprinkle with bacon and parsley.

2050. GRILLED LIVER with MOREL MUSHROOMS and BACON

makes two servings


1/2 cup dried morel mushrooms
1 cup hot water
3 thick strips bacon (preferably double-smoked), diced
3 green onions, chopped
1 clove garlic, minced
2 tablespoons each: red wine, 35 per cent cream
freshly ground pepper
1 lb calf’s liver, patted dry
kosher salt
extra-virgin olive oil

In medium bowl, soak mushrooms in water 15 minutes to soften. Drain. Halve or chop mushrooms if desired.

In large skillet, cook bacon over medium until almost crisp. Remove with slotted spoon from pan to drain on paper towels.

Add mushrooms to pan. Cook, stirring, 4 minutes. Add onions and garlic. Cook, stirring, 1 minute. Add bacon. Raise heat to high; add wine. When it evaporates, add cream. Cook until mixture just holds together. Transfer to bowl. Season with pepper; cover and keep warm.

Season liver with salt and pepper. Coat lightly with oil. Wipe out skillet; heat over medium-high. Add liver. Grill 2 minutes per side. Transfer to cutting board. Slice as desired.

Serve liver topped with morel-bacon mixture.

1808. LIVER and BACON with CELERIAC MASH

serves four


8 rashers dry-cured streaky bacon
350 grams calf’s liver, thinly sliced
large pinch of caster sugar
1 tablespoon plain flour, for dusting
1 tablespoon sunflower oil
1 tablespoon balsamic vinegar

For the celeriac mash
2 large (about 450g) potatoes, diced
450 grams celeriac, diced
3 tablespoons skimmed milk
bunch of spring onions, trimmed and chopped

Make the celeriac mash. Simmer the potatoes and celeriac in a large pan of boiling, salted water for about 15 minutes or until tender. Drain and return to the pan, covered, to dry out.

In a small pan, gently heat the milk. Add the spring onions and cook for 2-3 minutes, until softened. Add to the potatoes and celeriac, then mash and season. Set aside, covered, to keep hot.

Meanwhile, grill the bacon until beginning to crisp at the edges.

Season the liver on both sides with salt, pepper and the sugar, then coat lightly in the flour. Heat a large frying pan over a high heat. When hot, add the oil, then the liver and cook for 2 minutes each side, until nicely browned but still pink and juicy on the inside. Add the balsamic vinegar to the pan. Serve the liver and pan juices immediately with the celeriac mash and crispy bacon.

1354. LEMON BACON and RED ONIONS with CALF'S LIVER

makes 4 servings


8 slices (about 2/3 lb.) thick-cut bacon
1/4 cup firmly packed brown sugar
1 1/2 teaspoons grated lemon peel
1/2 to 3/4 pound calf's liver, cut into 1/2-inch-thick slices
2 red onions (1 lb. total), peeled and thinly sliced
3 tablespoons lemon juice
2 tablespoons butter or olive oil
1 cup minced parsley
about 1/4 cup all-purpose flour
salt and pepper

In a 10- by 15-inch rimmed pan, lay bacon slices side by side. Bake in a 350° oven for 15 minutes. Drain and save fat. Mix sugar and lemon peel. With your fingers, evenly pat mixture onto bacon slices, covering completely. Return pan to oven and bake until bacon is well browned, 12 to 15 minutes. With a wide spatula, transfer bacon to a rack; scrape sugar drippings from pan and put on bacon. Meanwhile, rinse liver, pat dry, and trim off and discard any tough membrane. Cut liver into 4 equal portions. In a 10- to 12-inch nonstick frying pan, combine onions, lemon juice, and butter. Stir over high heat until onions are limp and slightly browned, about 15 minutes. Add parsley and stir until wilted. Mound onions on an ovenproof platter; arrange bacon in a single layer alongside. Put in a 150° oven. Wipe frying pan clean. Set frying pan over high heat and add reserved bacon fat. Coat liver with flour, shaking off excess. When fat is hot, add liver. Brown on each side, turning as needed until just barely pink in center (cut to test), about 5 minutes total. Drain liver briefly on towels, then add to platter. Add salt and pepper to taste.

446. PAN-FRIED CALF'S LIVER with DRY-CURED BACON and BALSAMIC CARAMELISED ONIONS, served with ROOT VEGETABLE and ROCKET PUREE

Serves 2


½oz butter
1 large onion, halved and thinly sliced
pinch of sugar
1½ teaspoons balsamic vinegar
6 rashers of thinly sliced dry-cured streaky bacon, rind removed
10-12oz calf's liver very thinly sliced
½oz seasoned flour for dusting
1 tablespoon sunflower oil
salt
freshly ground black pepper
For the root vegetable and rocket puree
8oz swede, peeled and cut into chunks
8oz carrots, peeled and cut into chunks
8oz potatoes, peeled and cut into chunks
¾oz butter
handful of rocket
salt
freshly ground black pepper

Preheat the grill to high. Melt the butter in a large frying pan and fry the onions and sugar over a medium heat, stirring frequently, for 7-8 minutes until nicely browned.

Season with salt and pepper, add the balsamic vinegar and leave it to bubble up for a few seconds. Keep warm.

Grill the bacon until beginning to crisp at the edges. Keep warm.

Season the liver on both sides with salt and pepper and then coat lightly in the seasoned flour. Pat off the excess.

Heat another large frying pan over a high heat. Add the oil and then the slices of liver and cook them over a high heat for 30 seconds on each side, the object being to have the liver nicely browned on the outside, yet still pink and juicy on the inside.

To make the root vegetable and rocket purée, cook the swede, carrots and potatoes in boiling salted water for 20 minutes, until tender. Then drain, place in a blender with the butter and blitz into a smooth purée.

Finally, return the purée to the pan and leave on a gentle heat, until the mixture has dried out. Add the rocket, salt and pepper and serve with the pan-fried-liver, bacon and caramelised balsamic onions.

367. BACON-LIVER BAKE

3 slices bacon
2 tablespoons flour
Salt
Pepper
1/2 pound calf liver
1 cup milk
1 1/2 teaspoons minced onion
1/2 cup bread crumbs
1 teaspoon oleo, melted

Fry bacon 'til crisp. Reserve drippings. Mix flour, salt, pepper; coat liver on both sides. Brown in drippings. Place in casserole. Mix rest of flour in drippings, add milk and onion; cook and stir 'til thick and bubbly. Pour over liver, crumble bacon over all. Combine crumbs and oleo and sprinkle on top of casserole. Bake at 350°F for 45 minutes.

44. CALVES' LIVER with BACON and CAPERS

serves 6


24 ounces sliced on an angle and halved calf’s liver
3 cups milk
4 ounces cut into 1-by-1/4-inch pieces slab bacon
1 quartered and thinly sliced medium onion
2 tablespoons capers
2 teaspoons sage
Coarse salt
freshly ground pepper
2 tablespoons white wine
1/2 cup veal or chicken stock
1/4 cup heavy cream
2 cups all- purpose flour, for dredging
1 tablespoon olive oil
1 tablespoon chopped parsley

In a large baking dish, add liver and milk. Let liver soak, covered in the refrigerator, for at least 2 hours and no more than 24 hours.

In a large cast-iron skillet, sauté bacon over medium-high heat until fat is rendered, about 5 minutes. Remove bacon from skillet. Drain off almost all the fat, and place skillet over medium heat. Add onion, and cook until caramelized, about 6 minutes. Add bacon back to skillet with capers, sage, salt, and pepper. Deglaze with wine, and cook for 2 minutes, loosening any brown bits from the bottom of the pan with a spoon. Add stock, and cook until heated through. Pour in cream, and stir to combine.

Remove liver from milk, dredge liver in flour, and season with salt and pepper. In a cast-iron skillet, heat olive oil over medium heat. Cook liver for 3 minutes on each side for medium rare. Serve liver topped with cream sauce and sprinkled with parsley.
