3924. BEEF RAVIOLI with BACON BUTTER SAUCE

Serving size: 4


5 oz. thickly sliced bacon, chopped into 1 inch pieces

4 tablespoons unsalted butter

1 tablespoon of fresh sage, finely chopped

17 oz. of beef ravioli
Kosher Salt

Pepper, preferably freshly ground

Olive Oil

2 tablespoons Shaved Parmesan

1 tablespoon Parsley

Add 6 quarts of water, about 2 Tbs. of salt, and 2 Tbs. of olive oil to a pot.


Bring the pot of water to a boil.


While the water is heating up, sauté the bacon in a medium-size pan over medium heat.
 Tip: This recipe works best if the bacon is not crispy!


Add the butter to the pan and let it melt until it begins to foam.


Add the sage leaves to the pan and lower the heat to the lowest setting.
 Tip: use low heat when cooking with butter because it cooks quickly and can burn.


When the pot of water is boiling, lower the heat until the water is just simmering.
 Tip: Unlike other pastas, ravioli should never be cooked in boiling water.


Add the beef ravioli to the simmering water and cook for five minutes.
 Tip: The ravioli is ready when it begins to float and the pasta has turned a light beige color. It is best to try it to see if it is ready.


Drain the ravioli and add them to the pan with the bacon and butter sauce.


Coat the ravioli with the sauce and sprinkle with some salt and pepper, to taste.


Add 1 tablespoon of parmesan.


Serve the ravioli and top each plate with the left over parmesan and parsley. This can be modified to taste.

3718. BACON BOURBON BARBECUE SAUCE

makes three cups


4 ounces (4 to 5 slices) thick-cut bacon, chopped
1 medium onion, sliced into half moons
3 cloves garlic, minced (a generous tablespoon)
1/2 teaspoon ground cumin
3/4 cup (175 ml) bourbon
3 tablespoons brown sugar
2 tablespoons dark molasses
1 tablespoon Dijon mustard
2 tablespoons Worcestershire sauce
1 (28-ounce) can whole tomatoes in juice
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
4 to 5 dashes hot sauce, optional 

Cook Bacon: Arrange bacon, in one layer, at the bottom of a wide, heavy-bottomed pan. Place the pan over medium heat and cook bacon until the fat has rendered and bacon is browned, but not crispy; about 8 minutes. Check the amount of fat that has rendered and remove all but 2 tablespoons from the pan. 

Prepare BBQ Sauce: Add onions and cook until softened, about 5 minutes. Add garlic and cumin then cook, stirring often, until fragrant, about 2 minutes.

Stir in the remaining ingredients, bring to a boil then reduce to a low simmer. Cook at a low simmer until the sauce has thickened slightly (a good visual is when the sauce can hold a line on the back of a spoon when you drag a finger through it), about 25 minutes.

Taste sauce for seasoning then adjust with additional salt, pepper or sugar as needed. Remove from the heat then blend until smooth. (See note below about blending). 

Blend Sauce: Blend until smooth, let cool to room temperature then refrigerate up to one week or freeze up to one month.

3717. PORCINI and BACON SAUCE

makes about 2 1/4 cups


2 ounces dried porcini mushrooms
2 cups boiling water
1/4 pound sliced bacon, chopped
9 garlic cloves, sliced
2 shallots, thinly sliced
1 pound button mushrooms, sliced
3 cups dry red wine
4 cups low-salt chicken broth
1 cup beef broth
1 large fresh rosemary sprig
Reserved roasting pan with juices
1/4 cup (1/2 stick) chilled butter, diced

Place porcini mushrooms in small bowl; add 2 cups boiling water. Let soak until mushrooms soften, at least 30 minutes and up to 2 hours. Strain, reserving mushrooms and liquid separately.

Sauté bacon in large saucepan over medium heat until golden. Add garlic and shallots; sauté 3 minutes. Add fresh mushrooms; sauté 8 minutes. Transfer half of mushrooms to bowl; reserve.

Add drained porcini and wine to pan. Boil 15 minutes. Mix in all broth. Add porcini liquid, leaving sediment behind. Return mixture to boil, reduce heat, and simmer until mixture is reduced to 5 cups, about 1 hour 30 minutes. Skim fat from top; add rosemary. Simmer 3 minutes; discard rosemary. (Can be made 2 days ahead. Cover mushroom-wine mixture and reserved mushrooms separately; chill.)

Place reserved roasting pan over 2 burners. Add mushroom-wine mixture and bring to boil, scraping up browned bits. Strain back into same saucepan, pressing out all liquid. Simmer over medium heat until reduced to 2 cups, about 5 minutes. Mix in reserved mushrooms from bowl. Whisk in butter. Season with salt and pepper.

3716. ITALIAN STYLE BAKED BARRAMUNDI with BACON SAUCE

2 barramundi, defrosted
dried basil, sea salt and coarse ground black pepper, to taste
3 strips bacon, chopped
2 cloves garlic, minced
1 1/2 cups chopped tomatoes
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon coarse ground black pepper
3-5 sprigs fresh oregano or 1 tablespoon dried oregano

Preheat oven to 400°F. Season the barramundi with dried basil, salt & pepper on both sides. Lay on a sheet of parchment paper (for easy cleanup) on a baking sheet and bake for 15 minutes. While the barramundi is baking chop the bacon into bite size pieces and cook for 2-3 minutes in a medium-size sauce pan, stirring constantly. Add the garlic and cook 1-2 minutes. Add the chopped tomatoes to the bacon and stir to combine. Add the onion powder, garlic powder, black pepper and oregano and let the sauce come to a boil. (This should happen right around the time the barramundi finishes in the oven.) Plate the barramundi, spoon the tomato sauce on top and serve.

3489. CRAB ENCHILADAS with BACON and ORANGE SAUCE

serves six

12 corn tortillas (small)
corn oil
bacon and orange sauce (recipe below)
8 oz. cream cheese
1 lb. crab meat
1/2 cup grated parmesan

Bacon Orange Sauce (makes 2 1/2 cups)
4 oz. bacon, diced
6 tablespoons flour
1/4 cup chopped onion
1 teaspoon chili powder
1/2 teaspoon coriander
large pinch black pepper
1 teaspoon garlic
2 cups clam broth or chicken broth
1/2 cup fresh orange juice
1 tablespoon orange zest

In skillet over medium high heat, fry tortillas one at a time, 30-45 seconds (total for both sides). Stack on paper towels.

Bacon orange sauce: Meanwhile, make sauce. In saucepan over medium high, cook bacon until crisp. Remove bacon, add onion and garlic. Cook 5 minutes until translucent. Add flour and seasonings; mix and cook for 1 minute. Whisk in broth and orange juice, zest. Let come to simmer, should slightly thicken, 3-5 minutes. Stir in bacon bits. Proceed with recipe, above.

Enchiladas: Preheat oven to 375. Combine 1/2 cup bacon orange sauce with cream cheese, Parmesan and crab. Put 1/2-1 cup of the sauce in bottom of dish. Roll crab mix into each tortilla, lay in dish. Cover with remaining sauce, sprinkle with Parmesan. Bake 15-25 minutes until sauce is bubbling and cheese is beginning to brown.

3447. BARBECUED OYSTERS with BACON-CHILI-TAMARIND SAUCE

serves 8-10 people


230 grams (½ lb.) bacon rashers
80 grams (3 oz.) tamarind pulp, soaked in ¾ cup hot water for 30 minutes
160 grams (5.5 oz.) light palm sugar, crushed  
1 tablespoons fish sauce  
5 small red chillies, crushed in a mortar and pestle  
24 unopened oysters  
3 golden shallots, thinly sliced, to serve 
½ bunch Thai basil leaves, to serve To serve: lime halves
 
Remove rind from bacon and cook rind in a frying pan over medium-high heat until fat renders (5-10 minutes). Remove crackling from pan (it can be discarded or eaten by the cook). Finely chop remaining bacon, add to pan, stir occasionally until crisp and golden (10-15 minutes), then set aside on absorbent paper to drain.
 
Meanwhile, pass tamarind liquid through a sieve into a bowl (discard solids), add palm sugar and stir to dissolve. Add fish sauce and chilli and set aside.
 
Preheat barbecue to high heat, add oysters and barbecue until they pop open (3-5 minutes). Separate oyster lids from bases with a knife, top oysters with a little bacon, a drizzle of tamarind sauce, a scattering of shallot and a few Thai basil leaves and serve with lime halves.

3355. ROAST LAMB RUMP with PEA PUREE, LEMON THYME and BACON SAUCE

Roast lamb rump
6 lamb rump cap on 
 
Pea & mint puree 
500 grams peas frozen
Handful of fresh mint
100 grams butter
100ml chicken stock
1 small onion, finely diced

Red wine sauce 
500ml red wine
3 springs of thyme
2 cloves of crushed garlic
¼ bay leaf
2 peppercorns
500 ml veal jus

Lemon thyme & bacon sauce 
300ml red wine sauce
1 tablespoon picked lemon thyme leaves
100 grams fresh peas
100 grams diced Kaiser flesh (double-smoked bacon)

Roast lamb rump: Season lamb rumps and sear in a hot pan till caramelised completely. Place in a 200 degree oven and 12 minutes and allow to rest for 15 minutes. Reheat for 1-2 minutes then slice and lay on puree. 
 
Pea & mint puree: Sweat onions in the butter over gentle heat, when transparent, add mint and chicken stock. Turn up the heat and bring to the boil. Add peas and salt and pepper to taste. Cover with a lid and boil for 3-4 minutes. Blend til smooth and pass through a fine sieve. Serve immediately.
 
Red wine sauce: Put all ingredients except for the veal jus into a heavy-based saucepan and bring to the boil over a high heat. Boil rapidly to reduce the alcohol, taking care as it may ignite.

When reduced to a thick syrup-about 60ml add the veal jus. Lower the heat and gently simmer for 8 minutes, skimming frequently. Remove from the heat and pour through a fine sieve. Don’t press the contents to extract more liquid as it will make the sauce cloudy and grainy. Serve immediately.
 
Lemon thyme & bacon sauce: Bring to the boil for 2 minutes then ladle over meat.

2988. BACON and BOURBON TRI TIP SAUCE

makes about 1 3/4 cups


6 strips bacon
1 cup barbecue sauce
1/2 cup bourbon
1/3 cup honey
3 tbsp. red wine vinegar
cooked tri tip
 
Sauté bacon in a medium skillet until crisp. Remove and drain well on paper towels; drain excess fat from skillet. Add barbecue sauce, bourbon, honey and vinegar to skillet and cook for 5 minutes more; crumble bacon and add to skillet. Serve over sliced tri tip.

2828. SAUTEED SHAD ROE with BACON-BUTTER SAUCE and FRISEE

serves four 


4 slices bacon (preferably double-smoked), cut crosswise into 1/8-inch-thick slices
1/2 cup chicken stock
4 tablespoons cold unsalted butter, cut into small pieces
fine sea salt and freshly ground white pepper
1 pair shad roe (preferably jumbo)
wondra flour, for dusting
2 tablespoons grapeseed oil
1 tablespoon balsamic vinegar
1/4 teaspoon chopped garlic
2 tablespoons extra-virgin olive oil
1 head frisee

Make the sauce: Place bacon in a medium skillet, and cook over high heat until bacon is golden and just crisp. Remove 2 tablespoons bacon, and drain on a paper towel-lined plate; set aside. Continue cooking the remaining bacon until very crisp but not blackened. Transfer to a fine sieve; discard bacon fat. Transfer crisp bacon to the jar of a blender.

Meanwhile, in a small saucepan, bring chicken stock to a boil over high heat. Add butter, piece by piece, whisking constantly until incorporated. Add the chicken-stock mixture to the blender, and blend on high speed until bacon is pureed. Season with salt and pepper. Set aside in a warm place until ready to serve.

Cook the shad roe: Preheat the oven to 400 degrees. Using a sharp knife, trim shad roe, and divide into 2 pieces, being careful not to tear the membrane. Pour flour into a shallow bowl, and season with salt and pepper; dust pieces lightly with the flour.

In a medium nonstick ovenproof saute pan, heat grapeseed oil over medium heat. Add shad roe, and cook until golden, 2 to 3 minutes. Turn, and transfer the saute pan to the oven until roe is cooked through, 3 to 4 minutes. Remove from saute pan, and set aside while preparing salad.

Make the salad: In a large bowl, combine vinegar, garlic, 1/4 teaspoon salt, and a pinch of pepper. Whisk to combine. Slowly add olive oil, whisking constantly, until combined. Add frisee and the reserved bacon; toss to combine.

To serve: Slice the shad roe crosswise on the bias into 1/2-inch-thick slices. Divide among four plates. Spoon the bacon sauce over, and serve immediately with the frisee salad on the side.

2546. PAPPARDELLE with BACON CREAM SAUCE


8 oz pappardelle
5 oz bacon chopped
1 1/2 cups heavy cream
4 oz aged gouda

Boil the Pappardelle pasta according to the instructions. Put the chopped bacon on medium high in a skillet and cook until crispy. Remove the bacon and pour off grease. Then add the heavy cream to deglaze the pan and reduce down until thick. Add the cheese and stir until melted and incorporate. Pour over the pasta and top with the bacon.

2447. BUCATINI with BACON SAUCE and MEATBALLS

yields 6-8 servings


Bacon Sauce:
7 or 8 strips regular bacon
1 large onion, diced
1 clove garlic, minced
salt and freshly ground black pepper
two 28-ounce cans chunky ground tomatoes

Meatballs:
oil, for greasing pan
2 pounds 80-percent lean ground beef
3/4 cup breadcrumbs (made from day old Italian bread)
3/4 cup freshly grated Parmigiano-Reggiano, plus more for serving
3/4 cup fresh parsley leaves, chopped
2 or 3 cloves garlic, minced (not too fine)
2 eggs
salt and freshly ground black pepper

1 pound bucatini pasta

For the bacon sauce: Cut the bacon into pieces. Using a big saute pan or skillet that has a cover, cook over medium heat until almost crispy. Don't drain the fat. Add the onions to the pan. When the onions are almost cooked and start to become translucent, add the garlic and salt and pepper to taste. Cook for 1 to 2 minutes, and then add tomatoes and bring to a boil. Reduce the heat, cover and simmer on low for about an hour to an hour and a half.

For the meatballs: Preheat the oven to 425 degrees F. Grease a baking sheet. In a large bowl, combine the beef, breadcrumbs, Parmigiano-Reggiano, parsley, garlic, eggs and some salt and pepper. Form into 1 to 1 1/2-inch meatballs and place on the prepared baking sheet. Bake for 5 minutes. Then turn the oven down to 350 degrees F and bake for an additional 10 minutes. Make sure to turn every few minutes to brown on all sides.

Cook the bucatini according to the package directions.

Serve the meatballs over the pasta with the bacon sauce on the side. Garnish with freshly grated Parmigiano-Reggiano.

2381. STRIPED BASS in SAVOY CABBAGE with BACON-BUTTER SAUCE

serves four


4 ounces smoked bacon, cut in to 1/4 inch wide strips
1/4 cup white wine
1/2 cup chicken stock
1/2 cup clam stock
1 large head savoy cabbage
4 (6 ounce) portions striped bass fillet
8 tablespoons unsalted butter, cut up
fine sea salt and freshly ground white pepper to taste
8 sprigs fresh chervil, optional

Place the bacon in a medium-size skillet over medium heat. Sauté until browned, and crisp about 4 to 6 minutes. Drain the bacon onto a towel lined plate or tray and place all but 1 tablespoon into a medium-size saucepan. Add the wine to the saucepan, bring the wine to a boil and simmer for 2 minutes to burn off the alcohol. Add the chicken stock and clam stock, lower the heat slightly and simmer until reduced by half, about 15 minutes. Strain the reduced stock into another clean saucepan and set aside.

Meanwhile, bring a large pot of salted water to a boil. Core the cabbage and remove the very green, outer leaves and discard. Pull off 4 very nice pale green leaves from the cabbage, trim off the tough center rib and set aside to blanch. Continue peeling the rest of the leaves of cabbage, reserving the core for another use. Cut the white, center rib out of each of the cabbage leaves. Stack 2 leaves together, roll the cabbage leaves and cut the cabbage leaves into 1 inch strips. Repeat with the remaining leaves.

Blanch the whole cabbage leaves in boiling water until crisp-tender, about 2 minutes. Drain and refresh under cold running water and set aside. Blanch the sliced cabbage in the boiling water until tender, about 1 minute; refresh under cold running water, drain and set aside. Preheat oven to 450 degrees F.

Evenly season the striped bass filets on both sides with salt and white pepper. Lay out the whole leaves of blanched cabbage, making sure to overlap where needed. Season the leaves with salt and pepper. Place a piece of fish in the center of each leaf of cabbage. Wrap each filet by folding in the edges of the cabbage. Place the cabbage bundles in a roasting dish and add just enough water to barely cover the bottom. Bake the cabbage bundles until a metal skewer can be easily inserted into the fish and, when left in the fish for 5 seconds, feels hot when touched to your lip, about 8 to 10 minutes.

Meanwhile, bring the sauce to a simmer and whisk in the butter 1 tablespoon at a time until fully emulsified. Season the sauce to taste with salt and pepper and keep warm. Place the sliced cabbage in another saucepan and add half of the bacon sauce and the reserved crispy bacon. Warm the cabbage over medium heat until hot. Season with salt and pepper.

To serve, make oval-shaped beds of cabbage in the center of 4 large plates. Place the baked fish on top of the cabbage. Spoon the sauce over the fish and around the cabbage, to cover the plates. Garnish with chervil, if desired. Serve immediately.

305. BOK CHOY with HOT BACON SAUCE

1-2 tablespoons sugar
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
1/4 cup Chili sauce
6 slices bacon, cooked and crumbled
2 tablespoon cooking oil
3 cups chopped bok choy

Combine first six ingredients in a wok or skillet; simmer 5 minutes. Add bok choy; stir fry until crisp tender. Serve, with more chili sauce on the side.
