3879. CHICKEN BACON WILD RICE SOUP

Serves: 6

3 (10¾ oz) cans chicken broth
2 cups water
½ cup uncooked wild rice, rinsed
½ cup finely chopped green onions
½ cup margarine or butter
¾ cup all-purpose flour
½ teaspoon salt
¼ teaspoon poultry seasoning
⅛ teaspoon pepper
2 cups half and half
1½ cup cubed or shredded cooked chicken or turkey
8 slices bacon, crisply cooked and crumbled
1 tablespoon chopped pimiento
2-3 tablespoons dry sherry, if desired

In a large saucepan, combine chicken broth and water. Add wild rice and onions. Bring to a boil. Reduce heat, cover and simmer 30-45 minutes (or until rice is tender). Once the rice is cooked, there will be some additional broth - do not drain.

In a medium saucepan, melt margarine, stir in flour, salt, seasoning, and pepper. Cook 1 minute, stirring constantly, until smooth and bubbly.

Gradually stir in half and half with the butter/flour mixture and cook until slightly thickened, stirring constantly. Add this creamy mixture back into the saucepan with the rice/broth. Add remaining ingredients (chicken, bacon, pimiento, and sherry). Heat on low, stirring every once in a while, for at least a half an hour. Do not boil. The mixture will look thin, but the longer you heat the soup, the more the flavors marry and the more it will thicken. This soup is best served after gently heating for an extended period of time (even a few hours) or the next day! For extra flavor, add more poultry seasoning and/or bacon.

2128. COBB SALAD TURKEY BURGERS with BACON and OVEN FRIES

yields four servings

4 large Idaho potatoes, cut into wedges
1 tablespoon grill seasoning
2 tablespoons extra-virgin olive oil (EVOO), plus additional for drizzling
1/2 cup crumbled blue cheese
1/4 cup sour cream
few dashes hot sauce
1 tablespoon chives, chopped
salt and freshly ground black pepper
2 avocados, pitted and fruit removed from the skin
juice of 1 lime
2 pounds ground turkey breast
2 cloves garlic, finely chopped or grated
4 to 6 sundried tomatoes, reconstituted for a few minutes in a bowl of hot water and chopped
1/4 cup chopped parsley
8 slices center-cut bacon
4 sandwich-size English muffins, toasted
2 hard-boiled eggs, peeled and sliced
1 large pickle, sliced lengthwise
1 small red onion, thinly sliced

Preheat oven to 400ºF.

Place potato wedges on a baking sheet and drizzle with some EVOO. Sprinkle grill seasoning over them and toss to evenly coat. Transfer to the oven and roast, turning occasionally, until golden brown and crispy, about 50 minutes.

While the potatoes are roasting, combine the blue cheese, sour cream and chives in a small mixing bowl. Season with salt and freshly ground black pepper and set it aside to top the burger.
Step

In another small mixing bowl, mash the avocado with a fork. Add the lime juice, hot sauce and some salt and freshly ground black pepper, and mix to combine. Set aside while you prepare the burgers.
Step

Heat 2 tablespoons EVOO, about 2 turns of the pan, in a large skillet over medium-high heat. While it heats, combine the turkey, garlic, chopped sundried tomatoes and parsley in a small bowl. Season the mixture with salt and pepper and mix well with your hands. Pat the meat down gently in the bowl and use the side of your hand to divide it into four portions. Scoop out one portion and shape it into a patty, then place it into the hot skillet. Place the other three burgers into the pan and cook them through, 4-5 minutes per side.

Once you get all the burgers into the pan, place the bacon slices onto a baking sheet and toss them into the oven with the potatoes until crispy and golden brown, 6-8 minutes.
Step

When the burgers and bacon are finished, spread the avocado mixture over four English muffin bottom halves. Top each half with a burger and divide the blue cheese mixture between the four burgers. Top each one off with a few slices of hard-boiled egg, pickle and onion, and cap them off with the other English muffin half. Serve these babies up with some oven fries and enjoy!

2023. ROASTED TURKEY BALLOTTINE wrapped in BACON

12-pound fresh turkey, divided; legs reserved for braised recipe (Ask your butcher to remove and bone the breasts, and bone the legs)
2½ ounces diced white bread (about 2 cups)
2 cups milk
2 tablespoons olive oil
1 cup finely chopped onion
2 garlic cloves, minced
¼ cup finely chopped celery
1 tablespoon chopped parsley
¼ teaspoon chopped rosemary
1 teaspoon quatre épices (or substitute pumpkin spice and a bit of black pepper)
1 pound raw pork sausage meat, without casing
Liver and giblets, coarsely chopped
Salt and white pepper
1 egg, lightly beaten
2 pounds thinly sliced bacon
6 tablespoons butter, softened

Preheat oven to 350 degrees. Soak the bread in the milk for 15 minutes; strain. Heat the oil in a sauté pan over medium heat, then add the onion, garlic, and celery and sauté, stirring until tender, about 5 minutes. Transfer to a bowl with the soaked bread, parsley, rosemary, quatre épices, sausage, liver, giblets, egg, 1 teaspoon salt, and ¼ teaspoon pepper. Knead to combine. On a flat surface, arrange a 2-foot-long double layer of plastic wrap. Place half of pork mixture in a horizontal line, about 12 inches long, in the center of the plastic wrap. Lift the plastic wrap up and over the sausage, then roll while tucking under and twisting at the ends, making a tight log about 1¾ inches in diameter. Repeat with the other half of the sausage stuffing. Place the sausage rolls in the freezer to chill quickly. Meanwhile, if you have a whole turkey, remove the breasts and discard the skin. Butterfly the thicker end of the breasts, folding over toward the thinner end to form a shape as close to a rectangle as possible. Cover one breast with plastic wrap, and, using a meat mallet, pound the meat to about ½ inch thick, 1 foot long, and 8 inches wide; repeat with other breast. Season the surface of the breasts with a sprinkling of salt and white pepper. Remove the plastic wrap from a sausage log, and place the log in the center of the flattened breast. Shape the breast around the sausage. Arrange the bacon in overlapping slices in vertical rows, on a 12-inch board, making a 12-inch-long-by-9-inch-wide rectangle. Place the turkey roulade in the center of the bacon, and wrap up and around to fully encase the breast. Repeat with second breast. Lay a 2-foot-long piece of heavy aluminum foil on a flat surface, and spread half of the butter evenly on top. Place turkey roulade in the center, then roll the foil around the roulade as tightly as possible, twisting at the ends. Tie with butcher’s twine to secure. Repeat with other turkey roulade. Place both logs on a baking sheet, and bake for 45 minutes, turning the logs ¼-turn every 10 minutes. Remove foil, and baste roulades with the pan juices; return to oven and continue to cook for another 10 minutes or until the bacon has cooked and the internal temperature reaches 155 degrees. Remove from the oven and rest for 10 minutes. Cut the roulade into ½-inch slices. Serve hot.

2006. BACON-WRAPPED STUFFED TURKEY BALLOTINE with GARLIC and SAFFRON MASHED POTATOES, CRAB APPLE JELLY GRAVY and ROASTED GREEN BEANS

serves 4-6

For the turkey ballotine
3lb 4 oz. large turkey breast crown (bones removed, skin left on)
12 rashers streaky bacon, skin removed and stretched thin with the edge of a knife
14 oz. minced veal shoulder
1 chicken liver, chopped
1½ oz. unsalted butter
1 tablespoon cornflour
5fl oz. milk
2 free-range egg whites, beaten
1½ oz. pistachio nuts, shells removed, halved
½ teaspoon sea salt flakes
½ teaspoon ground white pepper
1 small green pepper, seeds removed, finely chopped
pinch freshly ground nutmeg
3 fresh sage leaves, chopped
1 tablespoon olive oil

For the creamed garlic and saffron mashed potatoes
2lb 4 oz. floury potatoes, such as Maris Piper or King Edward, peeled and quartered
3fl oz. single cream
1 pinch saffron strands, crushed
2 oz. unsalted butter
3 garlic cloves, peeled, crushed
salt and freshly ground black pepper

For the crab apple jelly gravy
reserved juices from the turkey ballotine (see above)
1 tablespoon ready-made crab apple jelly
1 oz. butter

For the roasted green beans
2 tablespoons extra virgin olive oil
1 large lemon, zest only
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
1 lb 2oz fine green beans, topped and tailed

For the turkey ballotine: Preheat the oven to 150C/300F/Gas 2. Lay the bacon out in strips on a sheet of cling film, with the edges overlapping slightly so there are no gaps between each rasher. Slice the turkey breast crown in half horizontally (but do not slice it all the way through) and open it out like a book. Lay the turkey meat over the bacon layer, cover the top with cling film and beat with a rolling pin or meat mallet until thin. Set aside. Place the minced veal shoulder in a food processor, add the chopped chicken liver and blend until very smooth. Scrape into a bowl and set aside. Melt the butter in a pan and stir in the cornflour until well combined and there are no lumps. Gradually whisk in the milk and cook over a medium-low heat for a few minutes, or until thickened to form a roux. Set aside to cool for five minutes. Pour the milk mixture into the bowl with the minced veal and chicken livers and mix well to combine. Fold in the beaten egg whites, halved pistachio nuts, sea salt, ground white pepper, chopped green pepper, nutmeg and sage leaves. Mix well to combine. Peel away the cling film from the top of the turkey and spread the mixture in a thick line along the length of the turkey at one end. Using the cling film as a guide, fold the bacon and turkey over the stuffing and roll up tightly. Remove the cling film and then wrap the turkey roll tightly in two layers of aluminium foil. Drizzle the olive oil over the base of a roasting tin, add the wrapped turkey ballotine, cover the tin with foil and roast in the oven for 1½-2 hours.

For the creamed garlic and saffron mashed potatoes: Place the potatoes into a pan of lightly salted water and bring to the boil. Reduce the heat and simmer for 20 minutes, or until the potatoes are tender. Heat the cream and saffron into a small pan and bring to the boil. Remove from the heat immediately and set aside to infuse. Melt the butter in a pan and add the crushed garlic. Gently fry over a low heat for 3-4 minutes (do not allow the garlic to brown). Drain the potatoes and return them to the pan over a high heat to drive off any excess moisture. Mash with a potato masher, then mix in the saffron-infused cream and garlic butter. Season, to taste, with salt and freshly ground black pepper.

When the turkey is cooked, remove the foil and pour off the juices from the roasting tin into a small pan. Preheat the grill to high. Place the ballotine under the grill for 8-10 minutes, turning regularly, until the ballotine is golden-brown all over. Set aside to rest in a warm place.

For the crab apple jelly gravy: Reduce the juices from the turkey ballotine over a high heat for 8-10 minutes, or until reduced and thickened. Stir in the crab apple jelly and butter until the sauce is smooth and glossy. Keep warm.

For the roasted beans: Preheat the oven to 200C/400F/Gas 6. Heat the olive oil in a pan and add the lemon zest. Allow to sizzle for about 30 seconds, then remove from the heat and allow to cool. Stir in the herbs and allow to infuse for 30 minutes. Place the green beans into a roasting tray and drizzle over the lemon-infused oil. Season with salt and freshly ground black pepper and toss well to coat the green beans evenly in the oil. Roast in the oven for 10-15 minutes, or until the beans are tender and starting to turn golden-brown.

To serve: Reheat the turkey ballotine in the oven briefly if needed, then carve into thick slices. Spoon the mashed potato onto the centre of the serving plates, then top with a slice or two of the turkey ballotine. Scatter the roasted green beans around the edges of the plate, then spoon the gravy over and around.

1838. ROASTED TURKEY, AVOCAO, BACON, ONION RELISH and AIOLI on CIABATTA

makes four sandwiches

For onion relish
2 yellow onions, thinly sliced
1/4 cup dark brown sugar
1/2 cup red-wine vinegar
1/2 cup balsamic vinegar

For aïoli
1 egg yolk
1/2 clove garlic, minced (about 1/2 teaspoon)
1 teaspoon Dijon mustard
1/2 ounce white-wine vinegar
4 ounces grape seed oil
1 ounce olive oil
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon pepperoncini or cayenne pepper

For sandwiches
1 pound roasted turkey breast, sliced (use your thanksgiving leftovers!)
4 ciabatta rolls
12 slices bacon
1 avocado, halved, pitted, peeled, and thinly sliced

Make onion relish: In heavy medium pot, combine onions and enough water to cover and bring to boil, then strain. Return onions to pot and add sugar, red wine vinegar, and balsamic vinegar. Place over moderate heat and bring to simmer. Reduce heat to low, and cook, uncovered, stirring occasionally, until onions are completely tender and have no bite left, about one and a half hours. (The liquid should be syrupy and coat the onions.) Remove from heat and cool to room temperature.

Make aïoli: In food processor or blender, purée yolk, garlic, mustard, and vinegar until smooth and creamy, 1 to 2 minutes. Combine oils, then, with motor running, slowly drizzle into processor until completely emulsified, about 2 minutes. (If aïoli gets too thick, add a small amount of warm water, 1 teaspoon at a time.) Sprinkle in salt, pepper, and pepperoncini, cover with plastic wrap, and refrigerate until ready to use.

Preheat oven to 350°F.

Cook bacon: In large, heavy skillet over moderate heat, cook 6 slices bacon, turning occasionally, until crisp, then transfer with tongs to paper towel–lined plate to drain. Repeat with remaining 6 slices. Set aside.

Assemble sandwiches: Slice each ciabatta in half and place on large baking sheet. Place 4 ounces turkey on each of four ciabatta bottoms, then spread onion relish over meat. Lay 3 slices bacon on each of 4 ciabatta tops. Transfer baking sheet to oven and toast until bacon is crispy and edges of ciabatta turn light golden brown, about 5 minutes (the turkey does not have to get hot). Remove from oven and transfer bacon to other side of ciabatta, laying on top of onion relish. Divide avocado slices between sandwiches, placing on top of bacon. Spread aïoli evenly across each ciabatta top, close sandwiches, slice each in half, and serve.

1540. TURKEY CLUB SALAD with BACON, AVOCADO and MAYO

makes 4 servings

6 bacon slices
1 ripe 6-to 8-ounces avocado, pitted and peeled
1/4 cup mayonnaise
1/3 to 1/2 cup water
3 tablespoons fresh lemon juice
1 (6-inch) piece baguette or Italian loaf, halved lengthwise
2 tablespoons olive oil, divided
1 pound turkey cutlets
1 (10-ounces) bag chopped romaine
2 cups shredded cabbage or coleslaw mix
2 medium tomatoes, chopped
Equipment: a 2-burner grill pan

Cook bacon in a 12-inch heavy skillet over medium heat until crisp, then transfer to paper towels to drain. Meanwhile, purée avocado, mayonnaise, 1/3 cup water, lemon juice, and 1/4 teaspoon each of salt and pepper in a blender until smooth, thinning with water if necessary. Heat grill pan over medium-high heat until hot. Brush cut sides of bread with some of oil. Grill bread, cut sides down, until grill marks appear, about 3 minutes, then cut into 1-inch pieces. Toss turkey with remaining oil and 1/4 teaspoon each of salt and pepper. Grill turkey, turning once, until just cooked through, about 3 minutes total, then cut into 1-inch strips. Toss romaine, cabbage, tomatoes, and croutons in a large bowl, then top with turkey, crumbled bacon, and a dollop of dressing. Toss just before serving and serve remaining dressing on the side.

1533. PESTO BACON LETTUCE and TOMATO WRAPS with SMOKED TURKEY

1 brown rice tortilla wrap
3 slices of smoked turkey
dab of your favorite pesto
3 slices of cooked and crispy bacon
A handful of crisp baby lettuce greens
5 grape tomatoes, halved
sea salt and fresh ground pepper
olive oil, as needed

Heat up the grill on medium high. Lay your tortilla flat. Add the smoked turkey slices. Spread some pesto on the turkey. Add the cooked bacon strips, baby greens, tomatoes. Season with sea salt and pepper. Roll up and lightly brush with olive oil. Place gently on the grill and lower the top. After two to three minutes, open the grill and turn the roll-up on its side (to keep it rounder and less flat); lower the grill top again- gently- and heat through- maybe three minutes. Slice in half and consume with gusto- or wrap in foil for picnics. These wraps travel well in a cooler.

1443. STUFFED TURKEY DRUMSTICKS with BACON, BRANDY and THYME

yields 6 servings

6 turkey drumsticks (about 12 oz. each)
2 cups coarsely-ground pork
6 strips bacon, finely chopped
1 1/2 teaspoon dried thyme
3/4 teaspoon garlic, finely minced
1 1/2 cup fresh bread crumbs
3 eggs, beaten well
1 tablespoon brandy
3/4 teaspoon salt
3/4 teaspoon freshly-ground black pepper
1 pinch ground allspice, or to taste
2 cups brown veal or beef stock
4 tablespoon unsalted butter chilled, plus extra butter for basting
finely-chopped parsley for garnish

Preheat oven to 375 degrees.

Bone drumsticks completely, or ask your butcher to bone them for you. Remove all bones, cartilage and tendons, but be sure to keep skin intact. Season inside and out with salt and pepper. In a mixing bowl combine next 10 ingredients. Mix thoroughly. Divide stuffing among drumsticks, stuffing each drumstick evenly under skin. Place in a roasting pan, skin side up. Roast for 30 minutes, basting once after 15 minutes with softened butter, or until skin is golden brown and puffy. Remove drumsticks to a warm platter, cover and keep warm while preparing sauce.

Place roasting pan over high heat. Add stock and deglaze, scraping up browned bits and incorporating them into sauce. Boil until half of liquid evaporates. Whisk in butter, 1 tablespoon at a time, until incorporated and sauce is lightly thickened.

Serve turkey on warm dinner plates, surrounded with sauce and sprinkled with parsley.
