3963. BACON SHORTCAKES with PEANUT BUTTER WHIPPING CREAM

Yield: 6 servings


For the shortcakes:
6 slices bacon
21/4 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/2 cup granulated sugar, plus more for sprinkling
1/4 teaspoon salt
4 tablespoons cold unsalted butter, diced
3/4 cup whole milk, plus more for brushing
1/2 teaspoon vanilla extract
2 tablespoons finely chopped roasted salted peanuts

For the whipped cream:
1 cup cold heavy cream
1/4 cup confectioners' sugar
2 tablespoons creamy peanut butter
1/2 teaspoon vanilla extract

For the caramel:
3/4 cup granulated sugar
Pinch of cream of tartar or 1/2 teaspoon fresh lemon juice
1/2 cup heavy cream
2 tablespoons dark rum
4 bananas, thinly sliced

Make the shortcakes: Cook the bacon in a large skillet over medium heat, turning occasionally, until crisp, 9 to 11 minutes; drain on paper towels. Finely chop 2 slices of the bacon and roughly chop 4 slices; set aside.

Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Pulse the flour, baking powder, granulated sugar and salt in a food processor to combine. Add the butter and pulse until the mixture looks like coarse meal. Add the milk, vanilla and finely chopped bacon and pulse until the dough just comes together. Turn out onto a lightly floured surface and pat into a 5-by-7 1/2-inch rectangle.

Cut out 6 rounds with a 2 1/2-inch biscuit cutter; arrange about 2 inches apart on the prepared baking sheet. Brush the tops lightly with milk and sprinkle with granulated sugar and the chopped peanuts. Bake until the shortcakes are puffed and golden brown, 15 to 18 minutes. Transfer to a rack to cool completely.

Meanwhile, make the whipped cream: Beat the heavy cream, confectioners' sugar, peanut butter and vanilla in a large bowl with a mixer on medium-high speed until soft peaks form; refrigerate until ready to use.

Make the caramel: Combine the granulated sugar, 3 tablespoons water and the cream of tartar in a medium saucepan. Cook over medium-high heat, swirling the pan occasionally but not stirring, until the mixture is light amber, about 7 minutes. Remove from the heat and carefully stir in the heavy cream and rum (the mixture will bubble). Return to medium heat and simmer until slightly thickened, about 1 minute; add the bananas and roughly chopped bacon.

Split the shortcakes. Top with the banana mixture and peanut butter whipped cream.

3587. BACON HABANERO MOJITO

2 slices bacon cooked
1 habanero, thinly sliced
10 mint leaves
1 lime, cut in 6 wedges
4 tablespoons sugar
3 oz light rum
1 cup club soda
2 cups ice cubes

Squeeze 4 of the lime wedges and then add wedges to a large cup. Add sugar and mint leaves and use the back end of wooden spoon to mash the limes and mint with the sugar, releasing all the oils and flavor. Add rum and club soda and gently mix to combine.

Prepare 2 smaller glasses with ice and a lime wedge. Add half of the habanero to each glass and then equally pour mojito over each cup of ice.

3496. RUM and COLA FLOAT with BACON STRAW

1 scoop vanilla ice cream 
1 shot spiced rum
1 strip bacon
cola
brown sugar 
 
Make the bacon straw: Roll up some tin foil into a dowel and wrap a piece of bacon around it. To properly do this, place the bacon onto a cutting board and place the foil stick at a 45 degree angle touching one end of the bacon. Roll the foil wrapping the bacon around it as you go, being careful that the bacon slightly overlaps itself with each revolution. In the end, the bacon should be tightly wrapped like a ribbon. 
Lightly coat the bacon with brown sugar. Bake in the oven for about 15-20 minutes at 325 degrees until crisp. 

To take the bacon off the foil, twist the ends of the foil to thin it, and slowly spin it out of the bacon. Cut the ends off the bacon to make it form a more perfect straw. There will be areas where the bacon isn't fully sealed, but it should still work. 

Make the drink by mixing the rum and cola. Add a scoop of ice cream and stick in the straw. Serve.

2609. BACON ICE CREAM

makes about ¾ qt (¾l)


For the candied bacon;
5 strips bacon
about 2 teaspoons light brown sugar

For the ice cream custard:
3 tablespoons (45g) salted butter
¾ cup (packed) brown sugar (140g), light or dark (you can use either)
2¾ (675ml) cup half-and-half
5 large egg yolks
2 teaspoons dark rum or whiskey
¼ teaspoon vanilla extract
optional: ¼ teaspoon ground cinnamon

To candy the bacon, preheat the oven to 400F (200C). Lay the strips of bacon on a baking sheet lined with a silicone mat or aluminum foil, shiny side down. Sprinkle 1½-2 teaspoons of brown sugar evenly over each strip of bacon, depending on length. Bake for 12-16 minutes. Midway during baking, flip the bacon strips over and drag them through the dark, syrupy liquid that’s collected on the baking sheet. Continue to bake until as dark as mahogany. Remove from oven and cool the strips on a wire rack. Once crisp and cool, chop into little pieces, about the size of grains of rice. To make the ice cream custard, melt the butter in a heavy, medium-size saucepan. Stir in the brown sugar and half of the half-and-half. Pour the remaining half-and-half into a bowl set in an ice bath and set a mesh strainer over the top. In a separate bowl, stir together the egg yolks, then gradually add some of the warm brown sugar mixture to them, whisking the yolks constantly as you pour. Pour the mixture back into the saucepan. Cook over low to moderate heat, constantly stirring and scraping the bottom with a heatproof spatula, until the custard thickens enough to coat the spatula. Strain the custard into the half-and-half, stirring over the ice bath, until cool. Add liquor, vanilla and cinnamon, if using. Refrigerate the mixture. Once thoroughly chilled, freeze in your ice cream maker according to the manufacturer’s instructions. Add the bacon bits during the last moment of churning, or stir them in when you remove the ice cream from the machine.

2402. ALL-DAY BAKED BEANS with BACON, RUM and HONEY

serves six


3/4 pound thick-cut bacon (8 slices), diced
1 pound Rockwell or red kidney beans, cooked until just tender
1/2 cup mild molasses
1/2 cup dark rum
2 tablespoons Dijon mustard
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
Freshly ground pepper
1/4 cup spicy (such as fireweed or mesquite) honey, or to taste

Preheat the oven to 325 degrees. Place the bacon at the bottom of a large, heavy, ovenproof pot, such as a Dutch oven. Mix the beans, molasses, rum, mustard, red pepper flakes, salt, and pepper to taste in a bowl, and pour on top of the bacon. Carefully add water to cover the beans to about twice their depth, and cook for 2 hours, uncovered. (The liquid should be at a bare simmer.) Stir, then continue baking, checking the beans every half hour or so and stirring any caramelized pieces back under, until the water is totally absorbed, the beans are plump and creamy and the top of the dish is caramelized, for at least 3 hours and up to 8 hours. (If the beans aren’t completely gooey and soft, add more water and keep cooking.) Season with honey and additional salt and pepper, if necessary, and serve hot. Beans can be made a day ahead and reheated before serving.

1801. GRILLED MAHI MAHI SKEWERS with PEPPERED BACON

makes 12 servings


1 pineapple for garnish
½ cup brown sugar
1 oz rum
1 lb. boneless mahi mahi fillet
6 slices peppered bacon, cut in half
24 bamboo skewers soaked in water for 1 hour

Prepare the grill for cooking over direct medium heat.

Cut the pineapple in half. Reserve one half for plating and cut the other half into 12 even pieces. Place the pieces in a bowl with the brown sugar and toss to coat. Cut the filet into 12 even pieces. Wrap each piece in ½ slice of bacon, securing the bacon with the tip of a skewer as you spear the Mahi. Keep the wrapped Mahi at the top of the skewer like a lollipop. Grill the wrapped skewers for about 6 minutes per side, or until the bacon is brown and crispy.

1706. BACON RUM NUTS

yields sixteen rum nuts

1/2 lb. bacon
8 oz. water chestnuts
1/4 cups dark rum
2 tablespoons soy sauce

Marinate water chestnuts in rum and soy sauce for one hour, turning frequently. Roll each chestnut in sugar. Coat well. Cut 4 bacon slices in half. Then cut lengthwise in halves to make 16 strips. Wrap bacon around chestnuts and secure with toothpicks. Bake at 400 degrees for 15 to 18 minutes. Drain well and serve hot.

1705. ALLIGATOR TAIL wrapped in BACON with NARANJILLA SAUCE

yields four servings


1 1/2 pounds alligator tail meat
1/4 pound bacon
1/2 teaspoon pepper
2 tablespoons sunflower oil
1/2 naranjilla sauce (recipe below)

Cut alligator meat into small medallions and wrap each with a strip of bacon. Season with salt and pepper. Heat sunflower oil in a sauté pan over medium-high heat; add medallions and brown on both sides until cooked through.


Naranjilla Sauce

4 fresh naranjilla or Florida key limes
2 ounces white rum
3/4 cup sugar
4 ounces balsamic vinegar

Cut the naranjillas in half; scoop seeds and pulp into a sauté pan. Discard the rind. Add the rum, sugar and balsamic vinegar to pan. Heat mixture over medium-high heat until reduced to a syrup. Remove from heat and keep warm.

To Serve: Arrange alligator medallions and drizzle with Naranjilla Sauce.

1580. FRENCH TOAST with SMOKY BACON, BERRIES and MAPLE SYRUP

One loaf of sourdough bread, cut into thick slices
4 free range eggs
400 ml cream
2 tablespoons castor sugar
1/4 teaspoon cinnamon
12 thick cut rashers thick cut bacon

Berries
1 punnet strawberries
1 punnet raspberries
1 punnet blueberries
2 tablespoons sugar
A splash of rum (optional)

Beat eggs, cream, sugar, and cinnamon together in a bowl. Soak each slice of bread, one by one. Place onto a lightly oiled grill plate with a medium heat. When golden on one side turn over till other side is golden. Grill bacon until crisp. Place berries in a bowl. Add sugar and rum. Stir very gently.

To serve: Arrange French toast on a platter. Cover with bacon. Spoon on berries. Pour on a generous amount of maple syrup. Dust with icing sugar.

1332. JERK CHICKEN BREAST stuffed with BACON and BANANA

makes one serving

one free-range chicken breast
one soft cooked strip of bacon
approximately 1/3 peeled banana
2 scallion sprigs

Jerk Marinade:
1 1/2 teaspoon dry ground pimento
1 teaspoon minced fresh thyme
1 teaspoon dry ground ginger
1 teaspoon garlic, finely minced
1 teaspoon scotch bonnet pepper, finely minced
2 tablespoons yellow onion, minced
1 tablespoon scallion, minced
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup Jamaican dark rum
1/2 cup cola
cooking oil
salt and pepper to taste

Heat a saucepan, add a small amount of oil to cover the bottom of the pan. Heat the oil and then sweat the onion. Add the scallions, garlic, peppers, ginger and dried spices. Sweat these briefly and then flame with the rum. When the flame dies, add the cola and simmer until it is near dry, like a paste. Stir frequently. Allow to cool. Make a slit in one end of the chicken breast and cut the inside of the breast so as to make a hollow. Be careful not to cut through the breast. Wrap the partially cooked bacon around the piece of banana and insert it into the hollow of the chicken breast along with the two scallion sprigs. Rub the cooled jerk paste over the chicken breast until it is well coated. Allow to marinate overnight for best result. Grill over medium heat until chicken breast is cooked through. For best presentation, cut in two and cock on plate. Serve with a warm Rum and cola tomato chutney and grilled yams wedges.

884. PINEAPPLE RUM BAKED BEANS with BACON and COFFEE

makes 10-12 servings


4 lbs. canned baked beans
1/2 cup brown sugar
1/4 cup strong coffee
8 slices thick-sliced bacon; cooked, crumbled
2 teaspoons dry mustard
1/2 cup rum
8 1/4 oz. can pineapple tidbits; drained

Preheat oven to 350F. Spray 8x12-inch baking dish with non-stick cooking spray. Combine beans, brown sugar, coffee, bacon, and mustard. Pour into baking dish. Cover and bake 45 minutes. Stir in rum and place pineapple on top. Bake, uncovered, 25 until thickened and top is browned.
