makes four servings
1 lb broad beans, fresh and peeled
2 oz smoked bacon
6 spring onions
2 cloves of garlic
1 egg
1 lemon
parsley
extra-virgin olive oil
salt and pepper
Sauté
the unpeeled garlic cloves in a pan with a little extra virgin olive
oil. Add the bacon and let brown. Then add the fava beans, spring
onions, peeled and sliced, a little grated lemon peel, salt and pepper.
Cover and stew for about 25 minutes. Then remove the garlic, break an
egg into the pan and remove from the heat. Mix well and finish with a
bunch of minced parsley.
