3915. CREAMY JICAMA SLAW with BACON

4 servings, 1 cup each


1/4 cup mayonnaise
1 Tbsp. lime juice
1/8 tsp. ground red pepper (cayenne)
1 jicama, peeled, cut into thin matchlike sticks
1 carrot, cut into thin matchlike sticks
1/4 cup chopped fresh cilantro
4 slices cooked bacon, crumbled

Mix mayo, lime juice and pepper until blended. Combine remaining ingredients except bacon in large bowl. Add mayo mixture; mix lightly. Refrigerate 1 hour. Stir in bacon just before serving.
