2 cups Mayocoba beans, dried
1/4 pound bacon, chopped into 1/2 inch pieces
2 cloves garlic, minced
1 yellow onion, chopped
1/4 teaspoon cayenne pepper
1-2 cups chicken broth
4 ounces fresh cilantro, use leaves only
Soak beans in 6 cups of water, for 8 hours. Drain and rinse. Boil beans in 6-8 cups of fresh water in a pan with a lid. Bring to a
boil and lower to a simmer for an hour. Drain and set aside. Fry chopped up bacon in the pan with the lid until it is crisp. Add
garlic and onion. Fry until soft. Add beans and chicken stock and
cook on low for another 40 minutes. Toss in cilantro leaves before serving.
