73. BACON and CHEESE WAFFLES

yields 12 (4-inch square) waffles


1 egg
1 cup milk
1 cup (8 oz.) sour cream
1 tablespoon butter
2 cups pancake or biscuit mix
6-8 strips bacon, cooked and crumbled
1 cup (4 oz.) shredded Cheddar cheese

Beat egg, add milk, sour cream and butter. Stir in pancake mix; mix well. Fold in bacon and cheese. Bake in preheated waffle iron.
