1578. MANDARIN SPINACH and BACON SALAD with POPPY SEED DRESSING

about 6 servings


1 lb. fresh spinach, stemmed and torn into bite size pieces
1 (11 oz.) can mandarin oranges, drained
1/4 lb. bacon, crisply cooked and crumbled
1 large avocado, sliced
1/4 medium size red onion, sliced into thin rings

DRESSING:
1/4 cup white wine vinegar
4 teaspoons sugar
2/3 teaspoon dry mustard
2/3 teaspoon salt
2 teaspoons fresh lemon juice
2/3 cup vegetable oil
1 tablespoon poppy seeds

Combine vinegar, sugar, mustard, and salt in blender or processor; mix well. Add lemon juice. With machine running, gradually add oil. Stir in poppy seeds. Pour dressing over salad; toss gently to coat. Serve immediately.
