Large tortilla chips, about ½ large bag
4 slices bacon, chopped and cooked until crisp
½ lb ground beef
½ small onion, chopped
Salt and pepper, to taste
⅛ cup and ⅓ cup barbecue sauce
3 cups shredded cheddar cheese
Green onion, lettuce and tomato as garnish if desired
Preheat the oven to 375 degrees F.
In a medium pan, combine ground beef, onion, salt, and pepper and cook, stirring, over medium-high heat until browned (drain off any excess grease). Stir in ⅛ cup barbecue sauce. Set aside.
Pour ⅓ cup barbecue sauce into a small sandwich bag and set aside.
Line baking sheet with a single layer tortilla chips, careful not to leave too much space between chips. Sprinkle with half of cheese, half of the beef mixture, and half of the bacon. Snip a small corner off of the bag with the barbecue sauce and drizzle half over the first layer of nachos.
Top with another single layer of chips, and sprinkle with remaining cheese, beef, and bacon. Drizzle with remaining sauce.
Bake for 8-10 minutes until toppings are warm and cheese is melted.
Garnish with green onion, lettuce and tomato as desired.

3565. BACON JALAPENO NACHOS
Bacon Jalapeno Nachos
4 cup tortilla chips
2 cup shredded cheddar cheese mix
1 cup creamy jalapeno sauce (recipe below)
4 cup tortilla chips
2 cup shredded cheddar cheese mix
1 cup creamy jalapeno sauce (recipe below)
Creamy Jalapeno Sauce
2 tablespoons butter
2 tablespoons flour
¼ teaspoon salt
pepper, to taste
1½ cup milk
8 oz. jalapeno cheddar cream cheese
1 cup chopped, cooked bacon
optional: additional jalapeno slices, chopped
Bacon Jalapeno Nachos: Spread tortilla chips into a small baking pan. Top with cheddar cheese. Bake at 375 degrees 8-10 minutes. Remove from oven. Top with hot creamy jalapeno sauce
Creamy Jalapeno Sauce: Melt butter in a small saucepan over medium heat. Whisk in flour, salt & pepper. Add milk and cook, stirring, until mixture is thickened and bubbly. Continue stirring and cook 1 minute more. Remove sauce from heat and stir in cream cheese until it is completely melted. Add bacon and stir to combine. Optional: top with additional jalapeno pieces

3342. PULLED PORK NACHOS with PEPPER JACK and BACON
tortilla chips
1 1/2 cup (heaping) shredded pepper jack cheese
heaping 3/4 cup Kalua pork, chopped into bite size pieces
3-4 tablespoons drained and diced pepperoncini
2-3 strips bacon, cooked and crumbled
2-3 tablespoons chopped red onion
2-3 tablespoons chopped fresh cilantro
sour cream
Preheat oven to 350. Place a single layer of tortilla chips on an oven safe plate. Top with a heaping 3/4 cup cheese. Place pork over top and sprinkle with pepperoncini. Break up a handful of tortilla chips into large pieces and sprinkle on top. Add remaining cheese, top with crumbled bacon and onion. Bake in the oven until cheese is melted. Remove, and sprinkle on cilantro and dollops of sour cream. Serve immediately.

1 cup colby & jack cheese, shredded
4 oz seasoned ground beef, crumbled
4 oz bacon, cooked and diced
3 oz pickled jalapeƱos, sliced
4 oz sour cream
Use a 13" x 9" oven safe platter. First put chips on platter, then drizzle picante sauce over chips. Top with cheese mixture, beef, and bacon. Put in 400° oven for approximately 5 minutes. Top with jalapeƱos, serve sour cream on the side.

2098. BACON NACHOS
yields four servings

1 cup green enchilada sauce (or red enchilada sauce)
1 tablespoon cilantro, minced
1 large tomato, diced
1 avocado
1 jalapeno, fresh, sliced
4 tablespoons light sour cream
Chop bacon strips into 1/2 inch pieces. cook bacon pieces over medium to medium high heat, depending on your stove, until evenly browned. Drain bacon pieces and set aside. Prepare all remaining ingredients and set aside. Place tortilla chips on an oven safe dish. Top with cheddar cheese and drizzle with green chili enchilada sauce. Place nachos under a broiler for about 1 minute or until cheese has melted. Immediately top nachos with remaining ingredients and serve.

1524. NACHO CHIPS with BACON, JALAPENOS and CHEDDAR
serves six
6 slices bacon roughly chopped
2 onions finely diced
jalapeno peppers, seeds removed and minced
2 cups grated cheddar cheese
1 bag restaurant style tortilla chips
Preheat oven to 400°F. Heat a skillet over medium-high heat and add bacon. Let brown and then add onions and jalapeno and cook until they have softened and are beginning to caramelize. Cool slightly and then pour into a bowl and add grated cheese. Toss to combine. Spread the tortilla chips in a single layer on a large baking sheet and top each one generously with a spoonful of the cheese mixture. Bake for 10 minutes or so until chips are golden and cheese is melted and bubbling.
